CHIPOTLE MEATBALL BURRITOS

- Combine the meatballs, chipotle salsa and 1/4 cup water in a medium saucepan and bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the sauce thickens, about 5 minutes.
- Meanwhile, warm the refried beans and rice separately as the labels direct. Spread the beans in a rectangle in the center of each tortilla and sprinkle with about half of the cheese. Divide the rice, meatball mixture, pico de gallo, avocado and lettuce among the tortillas and season with salt and pepper. Top with the remaining cheese. Fold in the sides of the tortillas, then roll up.
- Brush the burritos all over with the vegetable oil and tightly wrap each in foil. Working in two batches, warm the burritos in a large skillet over medium heat until browned and crisp, 2 to 4 minutes per side. Serve with more chipotle salsa.

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix beef, bread crumbs, dried onion, cilantro, onion powder, garlic powder, salt, and black pepper together in a bowl.
- Finely chop chipotle peppers and add peppers, adobo sauce, and egg to meat mixture. Mix well. Roll into 1 1/2-inch meatballs.
- Heat a skillet over high heat. Brown meatballs in the hot skillet, turning as needed, 3 to 5 minutes. Transfer to a rimmed baking sheet.
- Bake in the preheated oven until no longer pink in the centers, 8 to 10 minutes.

- Combine the first three ingredients and simmer for 5 minutes, until blended.
- Add meatballs and simmer, covered for about 45 minutes.
- CROCK POT: For the crock pot, prepare sauce as above. Put meatballs (they can be frozen meatballs) into crock pot, pour sauce over and cook on low for 8 to 12 hours.

DRUNKEN CHIPOTLE MEATBALLS
This a great main dish which I did. It is a little spicy and the whiskey gives it a great taste and makes the meat balls very juicy. (Use your favorite whiskey; my fave, McALBERT, is a Dominican whiskey!)

- Iin a large bowl add the ground beef, 3 or more chopped chipotle (add.
- also some of its adobo sauce), oregano, garlic, adobo powder,egg, wheat flour and the whiskey; mix well.
- Make medium size balls by using a ice scream scoop and then rolling with both your palms. While doing this put the oil in a deep frying pan and heat the oil before adding the meat ball. Add as many meat balls as fit in pan. Leave each side for about 5 to 7 minutes or medium brown.
- While the meat ball is cooking start preparing the sauce in a deep pot add the tomato paste, some adobo powder, some adobo sauce from the chipotles, garlic paste, some oregano, a lil bit of whiskey, chopped onions, and thyme.
- Once all the meatballs are done, put them on the side.
- Turn on the heat. Once the sauce starts sizzling stir and then add a cup of water. Add the meatballs and let it boil until the sauce is thick to your preference.
- Serve with white rice or white pasta.
CHIPOTLE PORK MEATBALLS

- Mix the pork, sausage, egg, scallions, 1 teaspoon salt, 1/2 teaspoon pepper and about three-quarters of the crushed gingersnaps in a large bowl with a spoon or your hands until combined; refrigerate 1 hour. Dampen your hands and form the mixture into about 20 meatballs, 3/4 inch each.
- Preheat the oven to 375 degrees F. Add the olive oil to a large cast-iron skillet or Dutch oven and swirl to coat. Add the meatballs in a single layer and top with the onion, garlic and poblano. Sprinkle with the chili powder. Bake until the meatballs are firm and the vegetables start softening, about 8 minutes.
- Add the tomatoes to the skillet along with the Worcestershire sauce, brown sugar, the remaining gingersnaps, the chicken broth, hot sauce and 1 cup water. Stir gently, carefully loosening the meatballs from the pan and mixing them into the sauce. Return to the oven and bake until the meatballs are tender and the sauce thickens, about 40 more minutes.
MEATBALLS WITH SPICY CHIPOTLE TOMATO SAUCE

- In a small bowl, mix together the pork, breadcrumbs, egg, finely chopped onions and the chopped coriander leaves. Season, mix well and shape into small meatballs. Over a medium heat, add 1 tbsp of the oil to a large frying pan and brown the meatballs on all sides, then remove from the pan and set aside.
- Add the remaining oil, sliced onion, garlic, coriander stems and some salt. Cook for 5 mins, then add the passata and chipotle paste. Pour in 100ml water and stir well, then simmer for 10 mins before adding the meatballs and cooking for a further 5 mins. Serve with potatoes or rice and scatter with the extra coriander leaves.

- Stir together milk and bread crumbs in a large bowl.
- Cook bacon in a 10-inch heavy skillet over medium heat, stirring occasionally, until crisp. Transfer with a slotted spoon to paper towels to drain.
- Pour off all but 1 tablespoon fat from skillet, then cook onion, garlic, chipotles, cumin, and oregano in skillet, stirring, until onion is softened, about 3 minutes. Add water and cook, stirring and scraping up brown bits, until water has evaporated, about 1 minute. Stir into bread crumb mixture, then add ground meats, egg, parsley, bacon, and 1 teaspoon salt and mix well with your hands.
- Preheat broiler.
- Form scant tablespoons of meat mixture into balls and thread 3 balls 1/2 inch apart onto each skewer, arranging skewers on a lightly oiled broiler pan. Broil 3 to 4 inches from heat (do not turn) until browned and cooked through, 8 to 10 minutes.

- Chop onions and mince parsley and garlic. Mash together ground beef with onions, garlic, and parsley. Stir in spices, egg, and breadcrumbs.
- Shape meatballs into about tablespoon-sized balls. Roll them gently so they are the same shape and save them on a baking sheet until you're ready to cook them.
- When you're ready, add 1/3 cup oil to a large skillet over medium-high heat. Add as many meatballs as can comfortably fit in the pan, but try not to crowd it. Cook the meatballs for about 8 minutes, turning regularly until they are cooked through.
