In Almonte, Ontario, Janet Chappell serves these crisp meatless burgers with ketchup or plain yogurt to create an unusual taste sensation. The sharp cheddar brings a little zip to each bite.

1-1/2 cups shredded sharp cheddar cheese
1 cup finely chopped walnuts
1 cup soft bread crumbs
1/2 cup finely chopped onion
1 large egg, lightly beaten
1 tablespoon ketchup
2 teaspoons minced fresh basil or thyme
1/4 teaspoon salt
1/8 teaspoon lemon-pepper seasoning
2 tablespoons vegetable oil
6 hamburger buns, split
Ketchup or plain yogurt, optional

Steps:

  • In a large bowl, combine the first nine ingredients; shape into six 3/4-in. thick patties. , In a large skillet, cook patties in oil over medium heat until golden brown on both sides., To bake, place patties on a greased baking sheet. Bake at 350° for 12-13 minutes on each side, turning once, or until browned. Serve on buns with ketchup or yogurt if desired.

1 cup chopped walnuts
3/4 cup canned garbanzo beans, drained
1/3 cup plain dried breadcrumbs
1 tablespoon grill seasoning (recommended -- McCormick)
1 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
1 tablespoon cider vinegar
1 tablespoon olive oil
1 large egg
4 hamburger buns
lettuce, tomato, avocado
honey mustard

Steps:

  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • In a food processor, combine walnuts, garbanzo beans, bread crumbs, grill seasoning, paprika, pepper flakes, oil and vinegar and pulse until coarsely ground.
  • In a small bowl whisk egg, add to food processor and pulse for 10 seconds, just enough to incorporate egg. Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties.
  • Place burgers on oiled grill. Cook 4 minutes per side.
  • Serve hot on toasted buns with lettuce, tomato, avocado and honey mustard.

  • Load up your food processor with the walnuts, chopped onion, garlic, and mushrooms. Pulse until you have a coarsely but evenly chopped mixture.
  • Heat a saute pan over medium-high heat and add a teaspoon of oil. Transfer the mushroom walnut mixture to the pan, and fry, while stirring, for 7-9 minutes. While that’s cooking, grind the black beans in the food processor until they are coarsely chopped.
  • Remove the pan from the heat and allow the mixture to cool for several minutes before stirring in the bread crumbs, the chopped black beans, the Worcestershire sauce and the egg. Mix well to combine, and chill the burger mixture for 20 minutes to an hour.
  • Divide the mixture into six portions, and form into patties. You might need to wet your hands for this part so the mixture doesn’t stick to your hands.

  • Heat 1 teaspoon olive oil in a large pan over medium heat. Add garlic and cook, stirring for 30 seconds or until garlic is fragrant. Add the mushrooms and onions and continue to cook, stirring occasionally, until softened, 5-8 minutes.
  • Place walnuts in a food processor and pulse until powdery but not sticky. Add the mushroom mixture and process until well combined and there are no recognizable ingredients. If the mushrooms are still hot I usually open the feeding tube on the processor a bit to let steam out while I process.
  • Transfer the mixture to a large bowl. Add the breadcrumbs, egg, and season with salt and pepper. Stir until the mixture is well combined. Cover with plastic wrap and let rest in the refrigerator for at least 30 minutes. You can also prepare this mixture in the morning and let rest in the refrigerator until supper time.
  • Form the mixture into four thin patties. If you make them thick it will be hard to get them to cook through before the outside is done.
