This is another recipe for Peanut Butter balls. This one I got from my 96 year old neighbor, Mrs. Lucille Savage. She still makes them at Christmas and now I do too.

2 cups creamy peanut butter
½ cup butter
4 cups confectioners' sugar
3 cups crisp rice cereal
2 cups semisweet chocolate chips

Steps:

  • Melt peanut butter and butter in saucepan, over low heat. In large bowl, mix crispy rice cereal and confectioners' sugar well. Pour melted peanut butter and butter over cereal and sugar and blend together thoroughly.
  • Form into 1 inch or smaller balls, spread on cookie sheets, chill till firm in refrigerator (over night is okay).
  • Melt chocolate in double boiler and keep melted while working with balls. A teaspoon is best to use in dipping the balls in chocolate. Dip good and place on cookie sheet. As you dip them place them back on cookie sheet and keep chilled till firm.

¼ cup butter
1 ½ cups peanut butter
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon maple flavored extract
2 cups semisweet chocolate chips

Steps:

  • Combine the butter, peanut butter, confectioners' sugar, vanilla and maple flavoring. Cream well and knead well.
  • Melt the chocolate chips over low heat. Roll the dough into 1 inch balls. Dip into melted chocolate chips.
  • Refrigerate overnight (or at least for about 15 minutes) on a cookie sheet lined with wax paper.

1 ⅓ cups graham cracker crumbs

1 tablespoon shortening

Steps:

  • Mix together peanut butter, butter or margarine, confectioners' sugar, and graham cracker crumbs. Shape into 1 inch balls.
  • Melt chocolate chips and shortening in top of double boiler. Dip balls into chocolate mixture and let dry on waxed paper. (Poke each ball with a toothpick for easier dipping.)

My kids and I love having these peanut butter energy balls on hand. They make for an easy and quick protein or bite of energy during the day. My husband also loves having these treats in his lunch box at work.

2 cups rolled oats
1 cup peanut butter
1 cup crushed walnuts
½ cup semisweet chocolate chips
¼ cup honey, or more as needed

Steps:

  • Combine oats, peanut butter, crushed walnuts, chocolate chips, and honey in the bowl of a stand mixer fitted with the paddle attachment; beat until well combined, adding more honey if the mixture is not holding together.
  • Form 24 balls with a cookie scoop and place on a cookie sheet. Refrigerate until firm, 30 to 60 minutes.

My mom helped me post this recipe. These candies are like Reese's Peanut Butter Cups and are fun for kids to make because you don't have to cook them. My mom and I made these together.

1 1/2 cups sifted powdered sugar
1/2 cup creamy peanut butter
3 tablespoons butter or 3 tablespoons margarine, softened
1 lb dipping chocolate or 1 lb confectioner's coating

Steps:

  • Stir together powdered sugar, peanut butter and butter until well mixed.
  • Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
  • Let balls stand for 20 minutes until dry.
  • Melt the dipping chocolate or confectioners' coating.
  • Drop balls one at a time in melted chocolate.
  • Using a fork, remove from the chocolate, letting excess chocolate drip off.
  • Place back on the waxed paper.
  • Let stand until dry.
  • Store tightly covered in a cool dry place.

Peanut butter and chocolate are a perfect pairing--and these sweet and salty peanut butter balls covered in bittersweet chocolate are sure to satisfy your craving. Make sure the balls are chilled and firm before rolling them in the chocolate. It will ensure that they do not fall apart and helps the chocolate set faster. If the chocolate thickens while you are dipping the balls, just pop it back in the microwave for 20 seconds and stir until smooth.

1 cup confectioners' sugar
1/2 cup creamy peanut butter (see Cook's Note)
4 tablespoons unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Beat the confectioners' sugar, peanut butter, 2 tablespoons of the butter, vanilla extract and salt in a large bowl with an electric mixer until combined and smooth. Roll the mixture into 24 equal-sized balls (about 1 teaspoon each) and place them on a small baking sheet or tray. Chill in the freezer until firm, about 15 minutes.
  • Meanwhile, heat the chocolate and the remaining 2 tablespoons butter in a small microwave-safe bowl in 20 second intervals, stirring between each with a rubber spatula, until melted and smooth.
  • Holding with two forks, dip each peanut butter ball into the melted chocolate to evenly coat. Tap off excess chocolate. Place the balls back on the baking sheet. Chill in the refrigerator until the chocolate is firm and set, about 1 hour. Serve chilled. Refrigerate extra balls in an airtight container.

DREMA'S "PEANUT BUTTER" BALLS

A personal favorite of mine. This recipe was shared with me by a co-wowrker, Jean Shapiro at HPU many years ago. Sharing with you folks now! They make great gifts around the holidays as well! Enjoy!

1 box(es) graham cracker crumbs (or do it yourself)
1 box(es) confectioners sugar xxx
3 stick(s) butter, unsalted
1 jar(s) peanut butter, crunchy (8oz)
1 teaspoon(s) vanilla extract, pure
- parafin wax (1/2 cake)
1 package(s) chocolate morsels, semi sweet

Steps:

  • In top of double boiler melt chocolate with 1/2 cake of parafin wax. Stir ocassionaly.
  • Meanwhile in large mixing bowl combine all ingredients. Mix well. Keeping your hands buttered or sprayed start making small round balls. Place in fridge until chocolate is ready!
  • Once you are ready have waxed paper prepared and spread out. Dip balls in chocolate and place on wax paper. Allow to thoroughly cool and set up. Tip: You will find the easiest method for you. I have small plastic tongs I use for dipping and use a butter knife to shear off the excess on bottom before placing on paper. Tip: I have made by balls and left in fridge until next day till ready to do the chocolate. Enjoy! Store on wax paper layers in air-tight containers until ready for use.

The Absolute Best and Easiest Peanut Butter Balls! image

My family has been making these things every Christmas my entire life and at least half of them don't make it to the Christmas party!

1/2 cup butter, room temp
1 cup peanut butter
2 3/4 cups powdered sugar
1 (12 ounce) bag semisweet chocolate morsels or 1 (12 ounce) bag milk chocolate chips
1/8 paraffin wax block (shredded or shaved)
water
wax paper

Steps:

  • In a large bowl, cream the butter and peanut butter with a mixer.
  • Once it's blended well, slowly add the powdered sugar. Usually, after the second cup, I'll check it every few times to make sure the mixture isn't too dry.
  • Once you've added all the sugar, it should be a nice soft consistency, not sticky and easy to roll but not dry to where it crumbles. If you put all the sugar in and it's still to sticky to roll, try putting in more a little at a time until it gets to a good rolling consistency.
  • Roll dough into balls. The size depends on how big or little you would like them.
  • Lay the balls on the wax paper in a row and then put in the freezer while you melt the chocolate.
  • To a medium size pot, add about 2-3 inches of water and bring to a boil. Once boiling, lower to a simmer and place a metal or glass bowl on top, making sure the bottom doesn't touch the water.
  • Add chocolate to the metal/glass bowl. Add wax and mix until it and the chocolate are both melted and a smooth consistancy.
  • Once the chocolate is melted, take out the peanut butter balls and set them beside your pot of chocolate. Drop in one or two of the balls into the chocolate and then scoop them out with a fork or spoon. Set them on another cookie sheet or pan lined with wax paper.
  • Once your finished, set them back in the freezer for about 5-10 minutes or until hard. They're ready to be served or stored in a decorative tin.

  • In a medium bowl knead peanut butter, margarine, vanilla and sugar, with your hands, until smooth dough is formed.

These are different than the usual peanut butter balls in that they use cream cheese, white chocolate and peanut praline (recipe included). This recipe comes from my local newspaper and I haven't tried it, but I didn't want to lose it! Use a good quality white chocolate.

2/3 cup peanut butter (not natural)
4 ounces cream cheese, softened
10 ounces white chocolate, divided
1/4 cup butter, softened
1/2 cup icing sugar
1 cup granulated sugar
1 cup unsalted peanuts, chopped medium-fine

Steps:

  • Melt 4 ounces of the white chocolate in a double boiler over barely simmering water.
  • In mixer or food processor combine melted chocolate, peanut butter, cream cheese, butter and icing sugar until smooth.
  • Refrigerate until firm enough to roll with your hands into balls.
  • Melt remaining chocolate as in step 1 and dip the peanut butter balls in the melted chocolate, then roll in praline to coat.
  • Place on racks to firm.
  • For praline:.
  • Place sugar in a heavy-bottomed saucepan and cook over medium-high heat until it melts and turn a caramel colour.
  • Mix in peanuts and pour onto a greased rimmed cookie sheet.
  • Let harden and cool, then chop in food processor until quite fine but not powdered.
