DRAGONFLY STIR-FRY RICE



Dragonfly Stir-Fry Rice image

Number Of Ingredients 8

6 cups precooked rice, cooked with a seasoning packet (recommended: Sazon Goya)
1 tablespoon vegetable oil
4 eggs
1 cup linguica pork sausage or andouille sausage, boiled, cooled, and diced
1 cup lump crabmeat, shredded
1/2 cup peas
1/2 cup scallions, chopped
Oyster sauce or sweetened soy sauce

Steps:

  • Cook the rice according to package directions, adding seasoning packet to the water to give the rice an orange color. Refrigerate rice until cold.
  • Heat a large saute pan or wok over high heat. Add oil and heat until it shimmers. Crack the 4 eggs into the pan and fry, sunny side up. Then begin to break the yolks, and cook until dry. Add rice to the fried eggs and saute, adding the sausage and crab. Then add the peas and scallions, and continue sauteing until steaming hot. Just before serving, add a touch of oyster or sweetened soy sauce, to taste.

8 ounces of white candy coating, finely chopped
6 Piroutte cookies or long thin cookies
Colored sugar
12 pretzels
12 large marshmallows

Steps:

  • *Line baking sheet w/ waxed paper. *In a microwave melt candy coating, stir until it is smooth *Coat the cookies with the melted candy coating then placed on pan. Sprinkle w/ colored sugar *Freeze for 15 minutes or until firm *Dip pretzels in candy coating *Take the cookie and press the pretzels on the side of the cookie, propping up with marshmallows *Sprinkle w/ colored sugar immediately *Let stand until set. Carefully remove marshmallows

  • Pour candies in separate glass or ceramic bowls and microwave for each separately for 1 minute to melt.
  • Add 30 seconds and then let sit until mostly melted. (A glass or ceramic bowl will held the heat in better and help the candies to melt better.)
  • Stir to melt the rest of the way. (You really don't want to overheat these, or any chocolate for that matter! It seizes and the result is a thick, clumpy mess!)
  • Dip the pretzels in the colors you'd like, then arrange them together on parchment paper sheets (or wax paper) to make either a butterfly or dragonfly. You can use forks to dip them but I love my Wilton Dipping Tools! The stick pretzels go in the middle with either 2 or 4 mini pretzels angled against it on the sides.
