I live on a farm with my husband, Danny, and our children, Jeffrey, Scott and Angie. Between farm chores, gardening and taking the kids to their many activities, I manage to keep quite busy. I do, however, like to cook and bake.

BOTTOM LAYER:
1/2 cup butter, softened
1-1/4 cups packed brown sugar
2 eggs
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup chopped walnuts
MIDDLE LAYER:
1/2 cup butter, softened
1 cup sugar
2 eggs
3/4 cup all-purpose flour
1/4 cup baking cocoa
1/8 teaspoon salt
1/2 cup chopped walnuts
CARAMEL ICING:
6 tablespoons butter
3/4 cup packed brown sugar
4 to 6 tablespoons milk
2-1/2 cups confectioners' sugar

Steps:

  • In a large bowl, cream the butter and brown sugar. Beat in eggs and vanilla. Combine flour and salt Stir into creamed mixture. Stir in nuts. Spread into a greased 13x9-in. baking pan; set aside. , For middle layer, cream butter and sugar. Beat in eggs. Combine the flour, cocoa and salt. Stir into creamed mixture. Add nuts. Spread over the bottom layer. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. , For icing, melt butter in a saucepan over medium heat. Stir in brown sugar and milk; bring to a boil. Remove from the heat. Cool just until warm; beat in confectioners' sugar until the icing achieves spreading consistency. Spread over brownies. Let stand until set. Cut into bars.

1 stick (8 tablespoons) unsalted butter, at room temperature, plus 1 1/2 teaspoons for buttering the baking dish
6 ounces unsweetened chocolate, chopped
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
1/8 teaspoon kosher salt
2 large eggs, plus 1 large egg yolk, at room temperature
1/2 cup all-purpose flour
3/4 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F. Butter an 8-inch square baking dish with 1 teaspoon butter. Cut a piece of parchment paper in a strip to line the bottom and 2 sides of the dish. Butter the paper with the remaining 1/2 teaspoon butter and set aside.
  • Place the unsweetened chocolate and 8 tablespoons butter in a medium heat-proof bowl that fits comfortably over a saucepan filled with 1 inch water. Place the double-boiler over medium heat and cook, stirring constantly with a silicone spatula, until the chocolate and butter are just barely melted. Remove the bowl from the heat and continue to stir for 1 minute to cool slightly. The mixture should be warm to the touch, not hot.
  • Using a hand-held mixer, beat the sugar, vanilla and salt into the chocolate mixture until smooth. Add the eggs and yolk all at once and beat until fully incorporated and smooth. Fold in the flour and semisweet chocolate chips with a silicone spatula until just barely combined; a few streaks are fine. Pour the mixture into the prepared pan and bake on the middle rack until just set and a toothpick inserted in the center comes out clean, about 30 minutes. Do not overbake. Allow to cool to room temperature before cutting into 16 small pieces.

1 average box of store bought brownie mix
1 cup milk
2 eggs
1/3 cup vegetable oil
1 cup chocolate chips
2/3 cup chopped walnuts
1/2 cup water

Steps:

  • Make your brownie mix according to the boxed directions, substitute most water with milk.
  • Pour a small bowl of flour and mic your chocolate chips into the flour. Sift them put and drop into brownie mix.
  • Repeat step two but with the walnuts.
  • Mix all ingrediants together thoroughly, let chill in refrigerator for about ten to twenty minutes while your oven preheats to 450°.
  • Once oven has preheated pour your mix into a baking pan, put it in the oven, then set your timer for 40 minutes, checking the brownies periodically.
  • In a small pot melt down 1 cup of chocolate chips, thin the mixture as needed to get a smooth creamy consistency.
  • When your brownies are done allow them to cool before pouring your mixture over the top of them and spreading it to cover their entirety.
  • Cut and enjoy!

2/3 cup butter, melted, divided
1/2 cup boiling water

Steps:

1 ½ cups margarine, at room temperature
3 cups white sugar
6 eggs
1 cup unsweetened cocoa powder
2 ¼ cups all-purpose flour
1 tablespoon vanilla extract

½ cup margarine, at room temperature
2 tablespoons instant vanilla pudding mix
3 tablespoons milk
2 cups confectioners' sugar
3 tablespoons margarine, melted
½ cup unsweetened cocoa powder
⅓ cup milk, or more as needed
1 ½ teaspoons vanilla extract
3 ½ cups confectioners' sugar
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 11x17 inch baking pan.
  • In a large bowl, beat together 1 1/2 cups of margarine with sugar until light and fluffy; beat in the eggs, one at a time,fully incorporating each egg before adding the next. Mix in 1 cup of cocoa powder, the flour, and 1 1/2 teaspoons of salt. Stir in 1 tablespoon of vanilla extract and the chopped walnuts, and scoop the brownie batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes; set on a rack to cool.
  • To make the first frosting layer, beat 1/2 cup of margarine until fluffy, add the instant pudding powder and 3 tablespoons milk and mix until smooth. Gradually beat in 2 cups of confectioners' sugar. Spread the frosting on the cooled brownies and set them aside to let the frosting firm up.
  • For the second frosting layer, mix together 3 tablespoons of melted margarine with 1/2 cup of cocoa powder; stir in 1/3 cups milk and gradually beat in 3 1/2 cups of confectioners' sugar. Add more milk as necessary to make a smooth, spreadable frosting. Spread the second frosting on top of the first.
