I found this in a New Zealand Cook book... it makes a mountain load and is really eazy to make. They freeze well and are always a hit.

BASE
375 g butter or marg
1 1/2 c brown sugar
4 1/2 c plain flour
3 tsp baking powder
TOPPING
4 eggs
2 c brown sugar
3 Tbsp corn flour
1 tsp baking powder
3 c shredded coconut
2 c choc chips (the teeny tiny flecks of chocolate not your normal choc chips... if you can not find then simply chop up the normal choc chip to make them smaller)

Steps:

  • 1. BASE... Preheat oven to 190 degrees C. Melt the butter/marg and add the sugar to it. Sift in the flour and baking powder. Press into 2 lined, 20 X 30cm pan with high sides. Cook in preheated oven for 10 mins
  • 2. TOPPING... Beat eggs with the sugar. Pour over dry ingredients in a large bowl, Mix well. Pour over the 2 partially cooked bases and smooth over. Cook a further 40 mins at 160 degrees C. Top of slice should be slightly golden brown
  • 3. When slightly cooled, take out of the pan and cut into fingers. This makes ALOT but can be frozen...

Sandwiched between a vanilla wafer crumb crust and a zingy lemon glaze, this creamy cheesecake is a shoo-in to win Best Lemon Cheesecake in your house.

1 cup finely crushed vanilla wafers
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted
4 eggs, divided
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
3 Tbsp. flour
1 Tbsp. grated lemon zest
2 Tbsp. lemon juice
1/2 tsp. vanilla
3/4 cup sugar
2 Tbsp. cornstarch
1/4 cup lemon juice

Steps:

  • Preheat oven to 325°F if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Mix crumbs, 3 Tbsp. sugar and the butter; press firmly onto bottom of pan. Bake 10 min.
  • Separate one of the eggs. Cover and refrigerate egg yolk for later use. Set egg white aside. Beat cream cheese, 1 cup sugar, the flour, lemon zest, 2 Tbsp. lemon juice and the vanilla in large bowl with electric mixer on medium speed until well blended. Add egg white and remaining 3 whole eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.
  • Bake 50 to 55 min. or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight.
  • Mix 3/4 cup sugar and cornstarch in medium saucepan; gradually stir in 1/2 cup water and 1/4 cup juice until well blended. Bring just to boil on medium heat, stirring constantly; cook and stir until clear and thickened. Beat reserved egg yolk lightly with fork. Stir in 2 Tbsp. of the hot cornstarch mixture. Return to remaining cornstarch mixture in saucepan; mix until well blended. Cook 1 min. or until thickened, stirring constantly. Cool slightly. Spoon glaze over cheesecake. Refrigerate until set.

BOTTOM LAYER:
1 whole egg beaten
3 Tbsp milk
1/2 tsp vanilla
1/3 c butter
1/3 c powdered sugar
1 c sifted flour
TOPPING:
1/2 c brown sugar, lightly packed
1/4 tsp salt
1 Tbsp flour
1/2 tsp double acting baking powder
1/2 c flake coconut
1 c chopped walnuts
2 whole eggs beaten
1/2 c molasses
1/2 tsp vanilla

Steps:

  • 1. BOTTOM LAYER: Beat the egg, then add milk and vanilla
  • 2. Cream the butter and sugar and combine with the egg mixture
  • 3. Add the flour, mix well, and spread in a 9x9x2 pan
  • 4. Bake bottom layer 425 F for 5 minutes, then remove from oven and set aside to make top layer
  • 5. TOPPING: Mix dry ingredients, add the wet, combine and pour over the top of the baked crust.
  • 6. Bake 350 F, 20-25 minutes Cool in pan, and cut in squares (do not cut until cool to the touch, or it will be messy)

2 teaspoons active dry yeast
1 1/4 cup warm water
3 cups all-purpose flour, plus more for dusting
2 teaspoons kosher salt
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon ground turmeric
Cooking spray, for the bowl
5 cups vegetable oil, for frying
2 tablespoons vegetable oil
6 cloves garlic, minced
1 Scotch bonnet or habanero chile, minced (see Cook's Note)
1 yellow onion, chopped
Kosher salt
1 tablespoons Caribbean curry powder
1 teaspoon ground allspice
1 teaspoon ground cumin
1 teaspoon ground nutmeg
1 teaspoon paprika
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 chicken bouillon cube
Two 15-ounce cans chickpeas, drained
2 cups chicken broth or stock

Steps:

  • For the bara (or flatbread): Put the sugar and yeast in a medium bowl. Stir in the warm water and let it sit until bubbles begin to form, about 5 minutes.
  • Stir to combine the flour, salt, cumin, black pepper and turmeric in a medium bowl. Add the water and yeast mixture to the flour and knead, using your hands or a mixer with a dough hook attachment, until the dough is smooth and glossy, about 2 1/2 minutes.
  • Lightly oil a large bowl with cooking spray and place the dough in the bowl. Spray the dough and place plastic wrap directly on top of the dough, then add plastic wrap to the top of the bowl as well. Let the dough sit in a warm draft-free place until doubled in size, about 2 hours.
  • Heat the oil to 350 degrees F in a large Dutch oven or cast-iron skillet. Turn the dough out onto a flour-dusted work surface. Working one at a time and keeping the unused portions covered, flatten a small ball of dough with a rolling pin to the thickness of 2 tortillas, about 4 inches.
  • Working in batches, fry the flattened dough until puffed and golden, about 45 seconds per side. Drain on a paper-towel-lined plate. Transfer the baras to a plate and cover with plastic wrap to steam and keep warm.
  • For the chickpeas: Meanwhile, heat the oil in a large skillet over low heat. Saute the onion, garlic, minced chile and a large pinch of kosher salt, about 10 minutes. Add the curry powder, allspice, cumin, nutmeg, paprika, black pepper, cayenne, bouillon cube, chickpeas and chicken broth. Bring to a simmer and cook until all the liquid has reduced, about 1 hour. Right before serving, season with salt and lime juice to taste.
  • For the tamarind sauce: Add the sugar, tamarind paste and 1 cup water to a small pot over low heat. Warm until the tamarind paste has dissolved into the water, about 5 minutes. Remove and cool.
  • For the pepper sauce: Put the habaneros, garlic, white balsamic vinegar and a pinch of salt in a blender and puree until smooth.
  • For the cilantro sauce: Add the cilantro, white balsamic vinegar, and salt to a blender and puree until smooth.
  • For the garnish: Toss the cucumber and cilantro in a bowl with a pinch of salt.
  • To assemble: Place two baras slightly overlapping on a plate, then top with 2 to 3 spoons of chickpeas. Top with a little tamarind sauce, pepper sauce, cilantro sauce and grated cucumber and cilantro.

1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Pat into a 13x9-in. baking pan. Bake at 350° for 10 minutes. , Meanwhile, in a bowl, beat eggs and brown sugar; stir in vanilla. Combine flour and salt; add to egg mixture. Fold in coconut and walnuts. Spread over baked crust. Return to oven and bake 20-25 minutes longer or until golden brown. Cool on a wire rack.

I made this up tonight and my family ate it up! It is low fat and low calorie but you won't believe it. This is a BIG BOWL of dessert sure to satisfy any dieters chocolate desires. **Note, I make this in two loaf pans then save half for another night. I only make one box of pudding at a time.

1 (16 ounce) box angel food cake mix
1 1/4 cups water
1/2 cup unsweetened cocoa
2 (4 ounce) boxes sugar-free instant chocolate pudding mix
4 cups skim milk
4 cups Cool Whip Free

Steps:

  • Mix water and cake mix. Add half cup unsweetened cocoa to the mix. Bake as directed either in two 9x4 loaf pans or a tube pan.
  • When cake is cool, slice into 12 servings. Dice the cake into bite size cubes.
  • Divide into dessert bowls.
  • Mix up the pudding and after it sets add it to the top of the cakes.
  • Dollop the whip cream on top and eat!
