OVEN-FRIED ONION RINGS

Steps:
- Heat oven to 450° F. Place 1-1/2 cups Dixie Fry Mix in shallow baking dish. Beat egg and buttermilk together in bowl. Whisk remaining 1/2 cup Dixie Fry Mix into buttermilk mixture.
- Working one at a time, dredge each onion ring in Dixie Fry Mix, shaking off excess. Dip rings in buttermilk mixture, allowing excess to drip back into bowl, then drop into Dixie Fry Mix, turning rings to coat evenly. Transfer coated rings to large plate or tray.
- Pour 3 tbsp oil onto rimmed baking sheet. Place baking sheets in oven and heat until just smoking, about 8 minutes. Carefully tilt heated sheets to coat evenly with oil, then arrange onion rings on sheets. Baking, flipping onion rings and switching and rotating position of baking sheets halfway through baking, until golden brown on both sides, about 15 minutes.

- Heat oil in a 12" skillet over medium heat until hot but not smoking.
- Combine cormeal, salt, and peppers. Dredge catfish in flour then dip in egg mixture. Coat the fish with the cornmeal mixture.
- Fry 2 fish at a time until golden, about 6 minutes per side. Keep cooked catfish warm in a 275 degree oven.

- Pat outside if fish with paper towel to remove extra moisture.
- In shallow dish, combine all dry ingredients except flour.
- Dip fish in buttermilk, shake off excess buttermilk and coat with flour.
- Dip again in buttermilk, then coat with cornmeal mixture.
- In large heavy skillet (cast iron is best), heat oil over medium-high heat until hot.
- Fry fish about 5 minutes per side, depending on thickness, or until fish will flake away with a fork.
SOUTHERN FRIED CATFISH
Steps:
- In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
- In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
- Heat oil in deep fryer to 365 degrees F (185 degrees C).
- Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

Steps:
- Wash the catfish fillets in cold water and pat dry.
- Melt enough lard or shortening in a large cast iron skillet over medium heat to reach 3/4-inch deep.
- While the lard/shortening is melting, pour the cornmeal into a large, shallow plate or dish.
- Season both sides of the catfish fillets (remember to pat them dry, first) with salt and pepper, then dredge them in the cornmeal and shake off any excess.
- When the melted fat is hot but not smoking, carefully slide the fillets into the pan (careful not to splatter, and don't crowd the pan because you want the fish to fry and not steam). Fry the fish in batches if necessary.
- Fry the fillets about 4 minutes per side, until crisp and golden brown.
- Put paper towels on a platter and transfer the fried fillets to the platter with a slotted spatula or spoon.
- Serve with lemon wedges and your favorite catfish sauce (tartar, cocktail, etc). Make sure to have plenty of napkins, hush puppies, corn on the cob, and coleslaw, too!
- Makes 6 servings.

- Preheat Grease to 360 degrees.
- In a bowl or pie plate or even a plastic bag place your cornstarch in and add a filet of your favorite fish. Close the bag and shake to coat the fish.
- Beat your eggs in a bowl and run the corn starched filets through the eggs.
- Mix your Corn Meal, Corn Flour, All Purpose Flour and Cajun Seasonings together in a Bowl, Pie Plate or a plastic bag and run your corn starched, egged filets through the flour mixture. Close the bag and shake to coat the fish.
