Old Fashioned Macaroni Salad with Cheese image

Stir up this quick and easy, old fashioned macaroni salad recipe in minutes. Studded with celery, red onion, and cheddar cheese, wrapped in a creamy mayo dressing, this pasta's packed with flavor and perfect for picnicking.

1 1/2 cup salad macaroni (or small shell pasta)
3 ribs celery (chopped)
1/4 red onion ((1/4 chopped))
3/4 cup mayonnaise
1/4 lb cheddar cheese (cubed)
1 tsp dried dill

Steps:

  • Cook macaroni according to package directions. Drain well and allow to cool.
  • In large mixing bowl, combine macaroni, celery, onion, mayo, and cheese cubes. Season with dill weed and salt and pepper to taste.
  • Chill until ready to serve. Serve cold.

1 loaf French bread, unsliced
1/2 cup soft butter
4 cups grated cheddar cheese
2 teaspoons dry dill weed
1 teaspoon Worcestershire sauce
1 tablespoon grated onion
2 eggs, beaten

Steps:

  • Remove crusts from bread.
  • Reserve crust for another purpose.
  • Cut bread into 1 inch cubes, set aside.
  • In a medium saucepan, stir butter and cheese over low heat until melted.
  • Stir in dill weed, worcestershire and onion.
  • Beat in eggs.
  • Remove from heat.
  • Using a fork, dip each bread cube into hot cheese mixture, turning to coat all sides.
  • Shake off excess sauce.
  • Arrange coated cubes on an ungreased baking sheet.
  • Refrigerate 1-2 days or freeze immediately.
  • To serve, preheat oven to 350 degrees and bake refrigerated cubes 10 minutes, frozen cubes 15 minutes.
  • Serve hot.

In England, where I was born and raised, friends get together twice a year for English tea. We'd serve an assortment of dishes, and this cucumber salad was always a favorite.

1 cup sugar
1 cup white vinegar
1/2 cup water
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
2 teaspoons salt
4 medium cucumbers, thinly sliced
1/3 cup sour cream

Steps:

  • In a small saucepan, combine the sugar, vinegar, water, dill and salt. Bring to a boil over medium heat. Remove from the heat. Place cucumbers in a large bowl. Pour vinegar mixture over and toss to coat. Cover and refrigerate overnight., Drain and discard vinegar mixture. Stir sour cream into cucumbers. Cover and refrigerate until serving.
