2 tablespoons uncooked amaranth
2 boxes (9 ounces each) frozen corn
1 tablespoon butter
1 tablespoon chopped fresh or 1 teaspoon dried dill weed

Steps:

  • Heat heavy skillet over medium-high heat until very hot. Heat 1 tablespoon of the amaranth in skillet 30 to 45 seconds, stirring constantly with wooden spoon, until most of the seeds pop. Remove from skillet. Repeat with remaining 1 tablespoon amaranth.
  • Cook and drain corn as directed on package. Stir in butter and dill weed; sprinkle with amaranth.

2-1/2 cups fresh or frozen sugar snap peas
2 cups fresh or frozen corn
1 small sweet red pepper, julienned
1/4 cup water
1 tablespoon butter
1 teaspoon minced fresh dill or 1/4 teaspoon dill weed
1/8 teaspoon salt, optional
1/8 teaspoon pepper

Steps:

  • Place the peas, corn, red pepper and water in large saucepan; cover and cook over high heat for 2-4 minutes or until vegetables are crisp-tender; drain. Add the butter, dill, salt if desired and pepper; toss to coat.

2-1/4 cups frozen corn
3 teaspoons dill weed

Steps:

  • In a small saucepan, bring water and bouillon to a boil. Stir in corn, dill and garlic powder. Return to a boil. Reduce heat; cover and simmer for 3-4 minutes or until corn is tender. Drain.
