PEA POD CARROT MEDLEY
We grow pea pods, and I wanted to use them in something other than stir-fries. This fit the bill! I've carried it to church potlucks and received compliments on its pretty orange glaze and fresh taste. -Josie Smith, Winamac, Indiana

Steps:
- Place carrots and water to cover in a small saucepan; bring to a boil. Reduce heat; simmer, covered, 5 minutes. Add peas; simmer, covered, until peas are crisp-tender, 2-3 minutes. Drain and remove vegetables from pan; set aside., In same pan, mix remaining ingredients until cornstarch is dissolved; bring to a boil. Cook and stir until thickened, 1-2 minutes. Add vegetables; toss to coat.

Toss carrots and snow pea pods with an easy dill butter for a quick and colorful side dish.

Steps:
- In 2-quart saucepan, heat 1 inch water to boiling. Add carrots. Cover and heat to boiling; reduce heat. Cook covered about 4 minutes or until carrots are crisp-tender. Do not drain water.
- Add pea pods to carrots in saucepan. Heat uncovered to boiling; continue boiling uncovered 2 to 3 minutes, stirring occasionally, until pea pods are crisp-tender. Drain vegetables; return to saucepan.
- Stir butter, dill weed and salt into vegetables until butter is melted.

- Peel carrots and cut into 2-inch matchsticks. Trim snow peas. Set each aside separately.
- In a medium saucepan of boiling water, cook carrots 5 minutes, until crisp-tender.
- Add snow peas and cook 1 minute longer. Drain, return vegetables to the pan.
- Toss with butter until butter is melted. Toss with dill until well coated. Serve hot.
