Dill Pickle Macaroni and Cheese image

Dill pickle relish adds a bit of crunch and a ton of flavor to traditional, creamy baked macaroni and cheese.

cooking spray
1 ½ cups elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 cup shredded extra-sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
⅓ cup dill pickle relish, well drained
¼ cup minced onion
1 teaspoon chile-garlic sauce (such as Sriracha®)
salt and ground black pepper to taste
1 slice bread
1 teaspoon butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 1 1/2-quart casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 7 minutes, making sure not to overcook. Drain and set aside.
  • While the macaroni is cooking, melt 3 tablespoons butter over medium-low heat in a large saucepan. Blend in flour and cook, stirring constantly, until mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk in milk and bring to a simmer over medium heat. Cook and stir until thickened, 10 to 15 minutes.
  • Mix in Cheddar cheese and Monterey Jack cheese; stir until melted. Add dill pickle relish, onion, Sriracha sauce, salt, and pepper to cheese mixture. Stir in cooked macaroni. Pour mixture into the prepared casserole dish.
  • Butter both sides of bread and tear into large pieces. Blend in a food processor or electric blender until you have crumbs. Spread on top of casserole.
  • Bake in the preheated oven until bubbling and browned on top, about 45 minutes.

Yield about 9 jumbo muffins or 12 standard-size muffins.

3-1/2 cups all-purpose flour
3 tablespoons sugar
2 tablespoons baking powder
2 teaspoons dill weed
1 teaspoon salt
1 cup shredded cheddar cheese
1-3/4 cups whole milk
2 large eggs, lightly beaten
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Combine milk, eggs and butter; stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups almost full. Bake at 400° for 25-30 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Serve warm.

I found this recipe in a book, and then altered it to my own taste. I like it with the dill pickle relish, but my hubby doesn't. He would be perfectly happy with just the cheese in these, but you can also use sweet relish if you prefer. 1 1/2 c bisquick (or maybe corn bread mix?)
1/4 tsp garlic powder
3/4 c grated cheddar cheese (i used a little less as i ran out of cheese)
1/4 tsp onion powder
several grinds of pink sea salt with garlic
1 Tbsp sugar
1/4 tsp dry mustard
2 Tbsp 2% milk
1 large egg, beaten
1/4 c relish (dill pickle relish)

Steps:

  • 1. Mix these muffins by hand. To double, like I did, only use 1 egg. But if you are going to omit the relish, try adding a second egg to make up for the difference.
  • 2. Put cheese on top of bisquick in a bowl. Sprinkle seasonings on top, and mix to blend. Put liquid ingredients together separately, then pour into the bisquick mix and mix just until blended. Put into the silicone muffin cups (or you could use paper muffin cups in a muffin tin, but the silicone makes them just pop right out very easily so that is how I make them). Bake at 350 degrees 20-25 min, but check after about 18 min.
  • 3. If you want to use mini muffin pans, bake about 12 min, but could take longer.
  • 4. I really like these warm, split in half from top to bottom, and then with a tad bit of butter on each piece.
  • 5. I was thinking this would be good in corn bread mix, instead of using the bisquick!

TANGY DILL PICKLE RELISH



Tangy Dill Pickle Relish image

After searching for a great dill pickle relish, I combined a couple and came up with this wonderful tasting relish. Hope you enjoy it as much as my family.

Number Of Ingredients 11

3 lbs cucumbers (about 8-9 pickling cucumbers)
2 -3 sweet onions
1/4 cup pickling salt
3 cups white vinegar
3/4 cup sugar
4 -5 garlic cloves, minced
2 teaspoons dill seeds
2 teaspoons mustard seeds
2 teaspoons celery seeds
1/2 teaspoon turmeric
2 tablespoons cornstarch

Steps:

  • Finely chop cucumbers and onions. Place in a large bowl and sprinkle with salt, stir well. Let stand for 1 hour.
  • Drain mixture in a colander, rinse under cold water and drain again, pressing out any excess moisture.
  • In a large pot, bring vinegar, sugar, garlic, dill seed, mustard seed, celery seed to a boil.
  • Add cucumber mixture, bring to a boil again, stirring frequently. Reduce heat and simmer for 10 minutes. After 9 minutes, mix the cornstarch with a bit of the simmering juice until no lumps remain. Add to the relish and mix well until thickened.
  • Remove from heat, add the turmeric and mix well.
  • Pour into sterilized jars, leaving 1/2 inch head space. Seal with lids and rings. Process in boiling water bath in canner for 10 minutes.
