Dill Cream Cheese Roast Beef And Cucumber Sandwiches Recipes
CREAMY DILL DIP II
Multipurpose dip for veggies, chips, etc.. and no mayonnaise! Easy to double, or halve. If you do not have fresh dill, use 1/3 the amount of dried dill.

Steps:
- In a medium bowl, blend cream cheese and sour cream with an electric mixer until smooth. Mix in green onions, salt, dill and garlic. Refrigerate for at least 30 minutes to blend flavors. If the dip is too thick after chilling, stir in milk 1 tablespoon at a time until you reach your desired consistency.

Steps:
- In a small bowl, combine the cream cheese, fresh dill, lemon zest, and lemon juice. Season the mixture with salt and pepper.
- Lay the slices of bread on your work service and distribute the cream cheese evenly among each slice, spreading into a thin layer. Arrange the cucumber slices in rows over 3 slices of the bread. Top with the remaining bread, and cut into quarters so there are 4 pieces from each sandwich. Serve immediately.

Steps:
- Wrap grated cucumber in a clean kitchen towel; squeeze to release liquid from cucumber. Transfer grated cucumber to a bowl.
- Mix cream cheese, dill, salt, and black pepper into grated cucumber.
- Spread cream cheese mixture over bread slices.
- Divide roast beef and cucumber slices on 5 slices bread and place another slice of bread spread-side down on top to make 5 sandwiches.
