1 fully cooked boneless ham (5 lb.)
1 jar (10 oz.) apricot jam
1/2 cup packed brown sugar
1/4 cup GREY POUPON Dijon Mustard

Steps:

  • Heat oven to 325°F.
  • Place ham, fat side up, in roasting pan sprayed with cooking spray. Diagonally score surface of ham; cover with foil.
  • Bake 1 hr. Meanwhile, mix remaining ingredients until blended.
  • Remove and discard foil from ham; brush with about 1/3 of the jam mixture. Bake, uncovered, 1 hr. or until ham is heated through (140ºF), brushing with remaining jam mixture every 20 min.
  • Transfer ham to cutting board; tent with foil. Let stand 15 min. before carving ham to serve.

A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

One 8- to 10-pound fully-cooked bone-in ham
3/4 cup packed dark brown sugar
3/4 cup pure maple syrup
1/4 cup low-sodium soy sauce
Zest and juice of 1 navel orange
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon onion powder
Freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
  • Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
  • Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
  • Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
  • Let the ham cool for 15 minutes before thinly slicing.

1 (5 to 6 lb.) cooked bone-in ham (shank or butt portion)
cloves whole
1/2 cup Dijon Mustard
1/4 cup Classic Worcestershire Sauce
1/4 cup packed brown sugar

Steps:

  • SCORE ham and stud with cloves. Place ham on rack in roasting pan. Bake at 325°F for 1 1/2 to 2 1/4 hours or until internal temperature of 140°F.
  • COMBINE Mustard, Worcestershire and sugar in small saucepan. Heat just to a boil until sugar melts, stirring.
  • BASTE ham with glaze often during the last 30 minutes of baking. Serve with additional glaze or Dijon mustard on the side.
  • Flavor Variation: Orange Marmalade Glaze: Combine 3/4 cup orange marmalade, 1/3 cup FRENCH'S Honey Mustard and 2 tbsp. orange juice in saucepan. Stir and heat until melted and smooth.

1 (9-pound) store bought bone-in spiral ham
3/4 cup water
1/2 cup maple syrup
1/2 cup dark brown sugar
2 tablespoons whole-grain Dijon mustard
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pumpernickel bread
Assorted mustards
Pickled shallots
Cornichons
Assorted cheeses

Steps:

  • Preheat oven to 300 degrees F.
  • Place ham in a roasting pan and pour about 3/4 cup water into the bottom of pan. Cover with aluminum foil and bake for 1 hour and 40 minutes or until heated through, soft and tender.
  • Make the glaze:
  • Whisk all ingredients together in a saucepan until smooth and heat over medium-low to medium heat until simmering. Simmer for 2 minutes and remove from heat.
  • When ham is heated through, remove the aluminum foil, and pour or brush the glaze over the top to cover completely. Raise oven temperature to 400 degrees F.
  • Return the ham to the oven and cook, uncovered, for 20 minutes or until glaze is caramelized and bubbly. Let rest for 10 minutes before slicing. Serve with desired fixings.

  • In a large baking dish with 2-inch high sides, pour in the water. Gently place the ham, flesh side down into the dish. With a sharp knife, cut a hatch-cross score all over the exterior of the ham, about an inch apart. Cover the entire dish tightly with aluminum foil, and bake for 2 1/2 to 3 hours on the middle oven rack, or until the ham registers 130 degrees internally.
  • Meanwhile, combine the honey, brown sugar, dijon mustards, cayenne, cinnamon, black pepper, smoked paprika, balsamic vinegar, and kosher salt in a large measuring cup. Whisk until fully combined, set aside.
  • When the ham has reached temperature, remove from oven, and turn up the heat to 425 degrees. Place oven rack to the lower-middle position. Remove foil from ham and gently pour off the accumulated juices. Gently transfer the ham to a shallow baking sheet, flesh side down. Brush on some of the glaze all over the surface of the ham, making sure to get into all the crevices. Be careful, it’s super tender and may fall apart depending on the score cuts. Place the glazed ham back into the 425 degree oven, and allow it to caramelize and candy. This will take about 10-15 minutes. Remove ham once again and liberally glaze it a second time. Place back into the oven for another round of caramelization, an additional 10 minutes or so.
