GRILLED MARINATED NY STRIP STEAK



Grilled Marinated NY Strip Steak image

Steak nirvana: nicely marbled, full of flavor and seared on the grill or on a cast iron skillet.

½ cup red wine
2 tablespoons balsamic vinegar
2 tablespoons olive oil
¼ cup minced shallot
1 tablespoon minced garlic
1 tablespoon Dijon mustard
1 teaspoon minced fresh tarragon leaves ( or ½ teaspoon dried)
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
2 1-pound 1 ½-inch thick NY Strip steaks

Steps:

  • In a large (gallon sized) zippertop plastic bag combine the red wine, balsamic, olive oil, shallot, garlic, mustard, tarragon, salt and pepper. Squish so that everything is blended, then slide in the steaks and turn them so that they are coated with the marinade.
  • Seal the bag, pressing out excess air, and refrigerate the steaks in the marinade for 2 to 4 hours.
  • Heat the grill to medium high. Grill the steaks for a total of 5 minutes on each side, flipping them a total of three times to get cross hatch marks on both sides, turning the steak ¼ turn for the last two flips, so that the grill marks will form and cross hatch on the other side. Let sit on a cutting board for 5 to 10 minutes before slicing and serving.

Elevate your steak with a simple marinade that can be used for a salad dressing too! This recipe for New York strip is approachable and foolproof for those who are intimidated by cooking steak.

Number Of Ingredients 10

1 tablespoon Dijon mustard
1 1/2 lemons
1 teaspoon finely chopped thyme leaves
1/2 teaspoon garlic powder
4 tablespoons vegetable oil
One 12- to 16-ounce New York strip steak
Kosher salt and freshly ground black pepper
1 tablespoon honey
1/4 cup extra-virgin olive oil
1.5 cups mixed greens

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the Dijon, juice of 1 lemon, thyme, garlic powder, 1/2 teaspoon pepper and 2 tablespoons of the vegetable oil in a small bowl; whisk until combined and homogenous.
  • Remove 2 tablespoons of the marinade and rub all over the steak for 1 minute. Let sit for 10 minutes at room temperature.
  • Meanwhile, whisk the juice of the remaining 1/2 lemon and the honey into the remaining marinade until the honey is blended. Season with salt. While whisking slowly, add the olive oil. Whisk constantly for 2 minutes; set aside to dress the salad later.
  • Heat a large ovenproof saute pan over high heat for 2 minutes 30 seconds. Season the steak all over with 1 teaspoon salt.
  • Add the remaining 2 tablespoons vegetable oil to the hot pan, then add the steak. Cook until crusty and browned, about 1 minute on each of the 4 long sides of the steak.
  • Place in the oven for 3 minutes. Remove the steak from the pan and let rest for 2 minutes before serving.
  • Meanwhile, toss the mixed greens with the dressing. Slice the steak and serve alongside the salad.

½ medium red onion, thinly sliced
10.5 oz cherry tomato, 1 package
3 tablespoons olive oil, divided
kosher salt, to taste
ground black pepper, to taste
2 teaspoons shallot, minced
1 tablespoon dijon mustard
½ teaspoon worcestershire sauce
1 teaspoon honey
2 tablespoons extra virgin olive oil
¼ cup red wine vinegar
1.25 lb boneless new york strip steak, about 1¼ inches (3 cm) thick
1 head red leaf lettuce, washed, dried, and cut into ½-inch (1.25 cm) pieces
½ cup walnuts, toasted, chopped
¼ cup gorgonzola cheese, crumbled

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • Spread the sliced onion on half of the baking sheet and arrange tomatoes on the other half. Drizzle each side with 1 tablespoon olive oil and season with salt and pepper. Toss to coat.
  • Roast in the oven for 10-15 minutes, or until the onion is caramelized and the tomatoes are browned in spots and just beginning to burst. Remove from oven and let cool.
  • In a small bowl, whisk together the shallot, Dijon mustard, Worcestershire sauce, honey, extra-virgin olive oil, red wine vinegar, salt, and pepper. Refrigerate until ready to use.
  • Liberally season the steak all over with salt and pepper.
  • Heat a cast-iron skillet over medium-high heat. Add the remaining tablespoon of olive oil to the hot skillet. When the oil is smoking, add the steak to the pan. Sear for 5 minutes, or until a deep golden brown crust forms. Flip the steak and cook another 5 minutes on the other side. Sear the sides of the steak until golden brown, another 3-4 minutes total.
  • Transfer the pan with the steak to the preheated oven for about 5 minutes, or until an instant-read thermometer inserted into the center of the steak reads 125-130˚F (51-54˚C) for medium-rare. Remove the steak from the oven and let rest for 10 minutes before slicing.
  • Add the lettuce to a large bowl. Add the roasted tomatoes, roasted onion, walnuts, Gorgonzola, and sliced steak. Toss well. Divide the salad between serving bowl and drizzle over the dressing.
