HAYSTACKS
This is a simple one dish meal that's been in my family for years - corn chips, vegetables, beans and cheese all piled up to make a delicious haystack! Kids love it!

Steps:
- In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
- To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.

- Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave. Blend together.
- Stir peanuts and noodles gently into the melted peanut butter mixture.

- Melt bar and peanut butter in microwave until smooth, at 30-second intervals.
- Be careful not to burn or overcook.
- Stir chocolate and peanut butter mixture.
- Add cereal and gently toss till coated.
- Drop onto wax paper, making 6 stacks.
- Refrigerate until chocolate hardens (about 30 minutes).

This is a quick and easy chocolate-fix that the kids and adults will love. It's easy to play around with the ingredients to suit. My family has been making it for years and it's still a fave! Ingredients can be switched up with great results. It's also great with white chocolate and cranberries or crushed peppermints. You can use any nuts in place of the almonds.

- Line a baking sheet with waxed paper.
- Stir oats, chocolate chips, coconut, and almonds together in a large bowl.

Steps:
- Mix peanut butter, honey, banana, water and salt. Add rest of ingrediant and mix together. Form a ball using a tablespoon and press each ball together tightly. Place each ball onto a sprayed cookie sheet and bake at 350 degrees for approximately 20 minutes.
- My friend used raw honey, natural-smooth peanut butter, unsweetened coconut and raw honey.

My grandpa made these himself quite often, especially at Christmas time. Quick, easy, and no baking required! Also, try walnuts in place of the peanuts for a different version.

- Mix the oats, coconut, peanuts, and raisins together in a large bowl.
- Stir the sugar, milk, butter, and cocoa powder together in a saucepan and bring to a boil; boil for 1 minute and immediately remove from heat. So good and easy to make! My siblings and I made huge batches of these cookies Sunday afternoons, and they were usually gone by Tuesday! The time for boiling the mixture is listed at 5 minutes, but if you cook it a little less, the cookies are chewier.

- In a medium saucepan, combine sugar, milk, butter, cocoa (I tend to go a little heavy on the cocoa) and salt.
- Heat to boiling, stirring frequently.
- When it has reached a rolling boil, cook for 5 minutes, stirring constantly.
- Remove pan from heat and mix in vanilla, oats and coconut.
- Drop by spoonfuls onto wax paper.
- Work quickly!
- Let cool.
- Alternate/optional additions, add any one with coconut: 1/2-3/4 cup mini marshmallows or 1/2 cup walnuts.
HAYSTACKS
These look like mini haystacks thus the name. Kids and adults love them. Very "Harvesty" when served on dish with the mini pumpkins or candy corn, etc.

- Drop the mixture by tablespoons onto the prepared baking sheet. Allow to set; in warmer months or when the kitchen is warm, this is best done in the fridge. Do let them sit at room temperature for several minutes before serving.
