DEVILED GREEN BEANS
This is a different way to prepare green beans instead of just plain old beans. We were pleasantly surprised by the taste, and I would serve it with more of a plain type meat like breaded pork chops, or breaded chicken because it has its own distinctive taste. This came from a 1970's cookbook called "Cooking for Two".

Steps:
- Drain liquid from beans into a saucepan.
- Bring to boiling; cook liquid till reduced to about one-third.
- Add beans and heat through; drain.
- Add butter, mustard, Worcestershire sauce, salt and pepper; stir gently till blended.
- Sprinkle with cornflake crumbs.

- Toss beans, artichoke hearts, olives and dressing in large bowl. Top with romaine and lettuce. Arrange eggs and pepperoni on salad greens. Sprinkle with pepper.
- Cover and refrigerate up to 4 hours. Toss just before serving.

DEVILED SWISS STEAK
This is a recipe from an old church cookbook of my mother's from Okoee, Florida during the time my grandfather was a minister there.

Steps:
- Preheat oven to 325.
- In a large shallow bowl, combine flour, salt, pepper, and mustard powder.
- Dredge round steak in this mixture.
- Heat oil in large skillet over medium-high heat. Brown steak on both sides.
- Remove and place in a shallow baking dish.
- Add remaining ingredients to skillet, stirring well to pick up the bits on the bottom of the pan.
- Pour over the steak.
- Cover with tin foil and bake for 2 hours.

Steps:
- Boil green beans in 2 cups of water for approximately 6 minutes or until beans are just tender.
- Drain beans, reserving 3 Tbsp cooking liquid.
- (This may be done ahead.) Refrigerate until ready to finish.
- About 15 minutes before serving, warm the bacon grease or olive oil in a pan over medium heat.
- Add onion and cook just until softened.
- Whisk together the reserved cooking liquid, mustard, soy sauce and brown sugar.
- Add to the onions and stir.
- Add the beans and stir to coat.
- Cover and simmer on low for 10 to 12 minutes, stirring occasionally.
- Taste and add salt if needed.

- Cook beans on high for 9 minutes or until tender crisp in microwave, stir once then let sit covered Microwave butter or margarine in small bowl on high 45 seconds or until melted Add mustard, sugar, lemon juice and vinegar, stir until smooth.

- Microwave, covered, on high 1 minute or until heated through.
