Best Homemade Brownies image

The ultimate recipe for brownies! They're fudgy, moist, and super chocolaty, with perfect crispy edges. From Weeknight Baking by Michelle Lopez.

1 1/2 cups granulated sugar*
3/4 cup all-purpose flour
2/3 cup cocoa powder (sifted if lumpy)
1/2 cup powdered sugar (sifted if lumpy)
1/2 cup dark chocolate chips
3/4 teaspoons sea salt
2 large eggs
1/2 cup canola oil or extra-virgin olive oil**
2 tablespoons water
1/2 teaspoon vanilla

Steps:

  • Preheat the oven to 325°F. Lightly spray an 8x8 baking dish (not a 9x9 dish or your brownies will overcook) with cooking spray and line it with parchment paper. Spray the parchment paper.
  • In a medium bowl, combine the sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
  • In a large bowl, whisk together the eggs, olive oil, water, and vanilla.
  • Sprinkle the dry mix over the wet mix and stir until just combined.
  • Pour the batter into the prepared pan (it'll be thick - that's ok) and use a spatula to smooth the top. Bake for 40 to 48 minutes, or until a toothpick comes out with only a few crumbs attached (note: it's better to pull the brownies out early than to leave them in too long). Cool completely before slicing.*** Store in an airtight container at room temperature for up to 3 days. These also freeze well!

An absolute favorite of my son...peanut butter and chocolate, what's not to love?...topped off with pecans and caramel...they are sinful... I usually make these for the 4th...and will probably make them again, as these won't last long... Enjoy!

BROWNIES
2 c sugar
1 c butter
1/3 c cocoa powder
4 eggs
1 tsp vanilla
1 1/2 c flour
1/2 tsp salt
1 1/3 c peanut butter
TOPPING
1/2 c butter
1/4 c cocoa powder
1/2 tsp salt
1/3 c milk
10 large marshmallows
1 tsp vanilla
1 lb ( 16 ounces) confectioners' sugar
caramel topping
pecans chopped

Steps:

  • 1. Spray a 9 x 13 baking dish with nonstick cooking spray, set aside. Preheat oven to 350 degree F. In a medium sized microwave safe bowl, add 1 cup butter and 1/3 cup cocoa. I start with 1 minute and check to see if butter is melted. Continue in 30 second intervals, until it is. Mix with a whisk and set aside to cool.
  • 2. In another bowl, beat sugar, eggs and vanilla. In another bowl, blend flour and salt.
  • 3. Once cocoa mixture is cool enough, add the flour mixture to it, and whisk until thoroughly blended. Add this mixture to the sugar mixture. Stir, well until all is incorporated.
  • 4. Pour into the prepared baking dish and bake for 25 - 30 minutes or until pick comes out clean.
  • 5. While hot, spread peanut butter evenly over the top as it melts. Cool completely.
  • 6. When cake is cool, make topping. In a large saucepan, add butter, milk, marshmallows, and cocoa. Stir until butter and marshmallows are melted and everything is thoroughly blended. Add the salt and vanilla.
  • 7. Beat in the confectioners' sugar until smooth. Spread over the cooled cake and peanut butter.
  • 8. Drizzle with caramel and sprinkle with pecans. Enjoy!

TRIPLE CHOCOLATE FUDGE BROWNIES

1 1/2 c. (3 sticks) butter
3 c. sugar
2 1/4 c. cocoa powder
1/2 tsp. salt
1 1/2 tsp. vanilla
4 eggs
1 1/4 c. flour
1/2 tsp. baking powder
1 1/4 c. white chocolate chips
Topping:
2 1/2 c. dark or semi-sweet chocolate chips, melted
1 c. white chocolate chips, melted

Steps:

  • Preheat oven to 325 degrees. Butter and dust with cocoa powder a 9x13" pan. (You can also line the pan with parchment paper, leaving excess paper over the sides.) Set aside.
  • Place a heat-resistant (glass or stainless steel bowl) over a pan of simmering water. Place the butter in the bowl to begin melting. In a separate bowl, combine the sugar, cocoa powder and salt. When the butter is completely melted, gradually add the sugar mixture to the butter until fully combined. Remove from heat, and add the vanilla. Let mixture cool for about 10 minutes.
  • To the cooled mixture whisk in the eggs one at a time, making sure to beat the mixture well. Mix together the flour and baking powder, and gradually add this to the batter until completely combined. Fold in the white chocolate chips. Spread the batter evenly into the prepared pan. Bake at 325 for about 45 minutes or until toothpick inserted comes out with crumbs. Let brownie cool completely.
  • To the cooled brownie, pour the melted chocolate chips over the top and even spread. Add dolops of the melted white chocolate chips, and swirl together with a spatula. Let cool completely before cutting (place in the refrigerator to speed up the cooling/setting process.) Enjoy!

Baking these at 400°F results in brownies that are moist and fudgy on the inside with a delicate, thin crust on the outside.

Nonstick cooking spray
4 ounces / 113 grams unsweetened chocolate
8 tablespoons (1 stick) / 113 grams unsalted butter, cubed
1 1⁄4 cups / 250 grams granulated sugar
1 teaspoon / 5 grams pure vanilla extract
1⁄2 teaspoon / 3 grams fine sea salt
2 eggs / 100 grams large eggs
1⁄2 cup / 60 grams all-purpose flour

Steps:

  • Get prepared
  • Arrange the oven racks so one is in the center position. Preheat the oven to 400°F.
  • Spray the bottom and sides of an 8-inch square baking pan with nonstick cooking spray. Cut a piece of parchment paper 8 inches wide and 15 to 16 inches long. Lay the paper in the pan so it travels up and over two of the sides. Spray the paper with nonstick cooking spray.
  • Make the batter
  • Pour 1 to 2 inches of water into the bottom of a small saucepan and choose a bowl that fits over the saucepan to make a double boiler. Make sure the water is not touching the bottom of the bowl; if it is, pour some water out. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.
  • Unless you are using chocolate chips, roughly chop the chocolate. Put the butter and chocolate into the bowl of the double boiler and melt them, using a heat-proof rubber spatula to stir and scrape down the sides of the bowl so the chocolate doesn't burn.
  • Remove the bowl from the double boiler and wipe the bottom of the bowl so no water drips. Add the sugar, vanilla, and salt and whisk them in. Add the eggs one at a time and whisk until the batter is shiny and smooth, 1 to 2 minutes. Add the flour and stir with a rubber spatula until no flour is visible.
  • Bake the brownies
  • Using a rubber spatula, transfer the batter to the prepared pan. Use the spatula to smooth out the top of the batter.
  • Place the brownies on the center rack of the oven and bake for 20 minutes, rotating the pan from front to back halfway through the baking. Remove the brownies from the oven and cool on a cooling rack. The tops will appear dry, but the insides will remain fudgy if you poke the center with a toothpick or cake tester. Holding the sides of the parchment paper, lift the brownies out of the pan and place them on a cutting board. Using a large knife, cut the brownies into 16 equal pieces.
  • Store the brownies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
