THE PERFECT BASIC BURGER

- Preheat an outdoor grill for high heat and lightly oil grate.
- In a medium bowl, whisk together egg, salt and pepper. Place ground beef and bread crumbs into the mixture. With hands or a fork, mix until well blended. Form into 4 patties approximately 3/4 inch thick.
- Place patties on the prepared grill. Cover and cook 6 to 8 minutes per side, or to desired doneness.

SALISBURY STEAK WITH MUSHROOM GRAVY

Steps:
- In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
- Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
- Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
- Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
- In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
- Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

- In bowl, beat egg and water with fork; mix in bread crumbs, onion, mustard, salt, Worcestershire and pepper.
- Mix in beef.
- Shape into four 1/2-inch (1 cm) thick patties. (Make-ahead: Cover and refrigerate for up to 6 hours. Or layer between waxed paper in airtight container and freeze for up to 1 month; thaw in refrigerator).
- Place patties on greased grill over medium-high heat; close lid and cook, turning patties once, for about 10 minutes or until no longer pink inside.
- Place in hamburger buns.

- 1. Shape beef into 6 oval patties. Melt butter in large skillet and add oil. Heat butter until foaming. Add green onions and sauté until softened stir in garlic and sauté for 30 seconds. Add beef patties and cook to desired degree of doneness. Season with salt and pepper. Set beef patties aside to keep warm on a hot platter.2. In same skillet, sauté mushrooms until limp and add to the warm beef patties.3. To prepare Mustard Cream Sauce, deglaze pan with dry white wine. Reduce dry white wine volume by half. Add Dijon mustard, heavy cream, tomato and capers. Heat slowly until hot but do not boil.4. Pour Mustard Cream Sauce over beef and mushrooms. Sprinkle parsley over top to garnish, if desired.

- Heat grill to high. In a medium bowl, use a fork to gently combine beef, mustard, and Worcestershire sauce; season with salt and pepper. Gently form mixture into four 1-inch-thick patties.
- Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until desired doneness, 4 to 8 minutes per side.
