My sister's birthday is tomorrow. She loves chocolate and coffee, She recently moved to a very nice retirement community where she has her own apartment. Occasionally they have a Java Chocolate Ice Cream with chocolate chunks in it. She said that they don't have it often and it is gone quickly when they do. I thought I would...

1/2 c brewed coffee, cooled -cold (can leave in refrigerator overnight)
1 pt heavy whipping cream
1 can(s) (14 oz) sweetened condensed milk
1/2 c dove candy bar, chopped

Steps:

  • 1. Chop the Dove bar into small chunks. Set aside. (It will not take the whole Dove bar to make 1/2 cup chunks -so you can enjoy the rest of the candy bar as a treat.).
  • 2. In a cold bowl (I use a medium aluminum mixing bowl), use an electric mixer and cold beaters to beat the whipping cream. Beat for 2 minutes on high (notice the picture). Whipped cream will hold its shape.
  • 3. In a larger bowl, blend the sweetened condensed milk and the cold coffee, beat with electric mixer for one minute.
  • 4. Fold the whipped cream into the sweetened condensed milk coffee mixture, until blended.
  • 5. Put into a 2-quart glass or metal casserole dish or loaf pan. Place in freezer for 2 hours, until it starts to freeze (Middle will still be soupy, but the sides firm.).
  • 6. Remove from freezer and fold in the chocolate chunks (I mix it in a mixing bowl -but you can leave it in the casserole dish while stirring in the chocolate chunks. Make sure that they are dispersed throughout the ice cream.
  • 7. If you removed the ice cream from the casserole dish to a bowl -return it to the dish. Place back into to the freezer section of the refrigerator, and freeze 2 more hours or until desired consistency.
  • 8. Makes about 1-1/2 quarts of deliciously easy coffee chocolate chunks ice cream. Enjoy a Scoop today!

Well, I forgot to take a picture of the birthday girl enjoying the ice cream (and she did), but here is a picture of both of my sisters and me taken back in January 2013 -Virginiais in the middle.   • In another small pan, combine the hot coffee and sugar and cook over medium-low heat. Stir until the sugar dissolves, then let simmer for 20 minutes. Allow syrup to cool, then put in fridge to chill.
  • When the coffee-infused condensed milk has chilled, pour it into a medium bowl. In another bowl, whip the heavy cream until it holds stiff peaks (about 3 minutes). Mix a scoop of the whipped cream into the condensed milk and stir until combined.
  • Pour the remaining whipped cream into the condensed milk mixture and fold the mixture until combined.

  • To a high-speed blender or food processor, add frozen ripe banana, cacao powder, and dandy blend (or espresso powder or strong-brewed coffee), and blend on high until creamy and smooth. If using a Vitamix, it’s important to first turn on your blender using the “variable” setting on medium speed, then quickly flip to high speed and use the tamper to blend. If the motor is starting to overheat, turn off and let it rest for a minute or two, then proceed. If using a food processor, you should be able to blend on high and scrape down sides as needed.
  • If it has trouble blending, add a bit of dairy-free milk to encourage blending. Just be careful not to add too much or it can become runny.
  • Taste and adjust flavor as needed, adding more cocoa or cacao powder for chocolate flavor, or coffee powder / espresso of choice for more intense coffee flavor.
  • Optional: Top with cacao nibs for a little crunch or sliced banana for more texture. Enjoy immediately. Freeze leftovers in ice cube or popsicle molds for best results (will last in the freezer up to 1 month, though best when enjoyed fresh).
