CARAMEL APPLE POKE CAKE
Caramel Apple Poke Cake is super simple to make. The caramel drizzle and toffee bits make it irresistible. So perfect for fall!

Steps:
- Preheat oven to 350°F. Spray a 9 x 13-inch pan with nonstick cooking spray.
- In a large bowl with an electric mixer, beat the cake mix, apple pie spice, water, oil, eggs and vanilla on medium speed for 2 minutes.
- Use a rubber spatula to fold in the apple pie filing.
- Pour batter into prepared pan.
- Bake in preheated oven for 28-33 minutes.
- Remove cake to a wire rack and cool for 10 minutes.
- Poke warm cake every inch or so with a straw, halfway into cake. Drizzle 3/4 cup caramel sauce over the cake, allowing it to fill in holes. Cool cake completely.
- Top cake with whipped topping, toffee bits and remaining 1/4 cup caramel sauce.
- Cover and refrigerate leftover Caramel Apple Poke cake for up to 3 days.

CARAMEL APPLE POKE CAKE
Steps:
- Heat the oven to 350 degrees Fahrenheit.
- In a large bowl, combine the vanilla cake mix, cinnamon, nutmeg, ginger, milk, eggs, and applesauce.
- Pour mixture into an 8x8 inch pan. Bake 30-35 minutes, or until a toothpick comes out clean.
- Allow cake to cool completely (I place mine in the fridge to speed up the process).
- Using the end of a wooden spoon, poke about 30-36 holes into the cooled cake - do not poke all the way down to the bottom, only about halfway.
- Pour the caramel syrup over the top of the cake, making sure to fill each of the holes. Sprinkle with diced fresh apple, if you'd like.
- Spread the whipped topping over the caramel. Sprinkle the English toffee bits over the whipped topping.
- Refrigerate the caramel apple poke cake for at least 2 hours before serving. Enjoy!

- Preheat oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking pan.
- Combine white sugar, oil, and eggs in a large bowl; beat with an electric mixer until smooth. Add apples, flour, 1 teaspoon vanilla extract, and cinnamon; beat until a thick batter forms. Spread batter in the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Poke holes in the hot cake with a fork.
- Combine brown sugar, butter, heavy cream, and 1 teaspoon vanilla extract in a small saucepan over medium heat. Bring to a boil; cook for 2 1/2 minutes. Pour immediately over the warm cake. Let cake sit for 3 hours to soak up the glaze.

- Prepare box cake according to directions. In a small bowl, place apples and add flour and cinnamon, toss to coat. Fold apples into the batter. Pour into 9x13 baking dish. Bake and cool completely.
- Prepare stabilized whipped cream: In a small bowl, add 2 TBS warm water, and add your gelatin, mixing to combine. Let sit for 3-5 minutes, or until set. Using a stand or hand mixer, pour in heavy cream and powdered sugar. Beat for 30 seconds on medium speed. Cook gelatin in microwave for 30 seconds, stir, and then 30 additional seconds, stir. Gelatin should be liquid, if not, cook until it's liquid. Turn stand mixer onto high speed, and slowly stream the gelatin into the bowl with the cream. Turn all the way onto high and beat until stiff peaks form. Set aside.
- Use the end of a wooden spoon to poke holes all over your cooled spice cake. Drizzle 1/2 cup caramel syrup over the poked holes.
- Spread the whipped cream over the top of the cake, then top with remaining caramel syrup. Add chopped nuts to the top, then refrigerate at least 2 hours.

- Mix cinnamon, ginger, cloves, and nutmeg together in a large bowl. Remove 1/2 teaspoon for the frosting (“Reserved Spices”). To the large bowl, mix in flour, baking powder, baking soda and salt. Set aside.
- With a stand or hand mixer, beat butter and sugar over medium high speed for a full 4 minutes until very light and fluffy, scraping down sides as needed. With mixer running on medium, add vanilla followed by eggs, then egg yolk, ONE at a time, beating just until the yellow disappears after each egg.
- Gradually add flour mixture to butter/sugar mixture in thirds, alternately with buttermilk in between each third, beating until just combined after each addition. Stir in apples and walnuts just until combined. Spoon batter into prepared pan.
