STUFFED PORK CHOPS I
I got this recipe from a friend and it is awesome! When I want comfort food, this is the one that I turn to. My husband loves it too! We love the stuffing so much I usually double the recipe for the bread crumb mixture, leave everything else the same. For the bread cubes, French bread works best, not sourdough.

- Preheat oven to 350 degrees F (175 degrees C).
- In a skillet, heat the oil and brown the pork chops. Place the pork chops in a baking dish.
- In a bowl, toss the bread cubes, melted butter, chicken broth, celery, onion, and poultry seasoning together. Put heaping mounds of the bread crumb mixture onto the pork chops.
- Combine the cream of mushroom soup with the water, and pour this mixture over the stuffing and pork chops.
- Cover and bake for 30 minutes.
- Uncover and continue baking for 10 minutes longer or until juices run clear. The meat thermometer should read 145 degrees F (63 degrees C).

Steps:
- Sauté the onion and celery in butter.
- Add to the stuffing mix, prepared with the amount of liquid indicated on the box.
- Add egg and mix.
- Cut a pocket in the pork chops; be careful not to cut yourself; I know that's funny coming from me, lol.
- Stuff pork chops and place in a baking dish.
- Shake soy sauce and Worcestershire sauce over the pork chops.
- Sprinkle with Season-All salt, salt, and pepper.
- Next, plop the mushroom soup, mixed with a little water, over the top to make a smooth gravy.
- Cover with foil paper.
- Bake for 90 minutes at 375 degrees Fahrenheit or until the pork chops are very tender. You can take the foil off for the last 10 minutes to brown the chops, if you want to brown them a little. Make sure you don't lose all the liquid or they will dry out.

Steps:
- Preheat oven to 375 degrees Fahrenheit.
- Prepare stuffing according to directions on box, increasing water by 1/4 cup.
- Cut slit into the side of each pork chop, cutting it almost in half. This is easiest on a mostly frozen chop.
- Stuff (and I mean stuff) each chop with as much stuffing as it can hold. You can also add a pat of butter, salt and pepper, or seasonings if desired.
- Bake for 35 minutes, or until juice runs clear.
- We enjoy having cauliflower with our meal.
- Also-- DO NOT brown chops before hand. This causes them to be too tough, and too rigid to stuff correctly.

JOE MAJOR'S STUFFED PORK CHOPS

- Insert a boning knife in the side of each chop, cutting a deep pocket to within 1/2 inch of the bone, being careful to keep the opening only large enough to insert the tip of a pastry bag. (Or ask your butcher to do this for you.)
- Put ground pork, garlic, green onion, egg white, 1/4 cup water, salt and the black and red peppers to taste in a bowl and mix well. Pack the mixture into a pastry bag and pipe 1/4 of it into each chop. Season chops with salt and black pepper and dredge in flour.
- Heat the oil in a heavy skillet over high heat and brown the chops, 2 minutes on each side. Remove them from the pan and add the onion, green pepper and celery. Sauté until onions are transparent, about 3 minutes, then add the stock, scraping up any brown bits. Return chops to the skillet, add thyme and bay leaf, cover and simmer 15 minutes. Turn chops and simmer 15 to 20 minutes more. Remove and let them stand 5 minutes before serving.

STUFFED PORK CHOPS
I made this for my family, and they loved it! The original recipe called for a bit less raisins than I added (my amount is below), and I used a bit more butter than called for (my amount is also below). - Preheat broiler with rack 4 inches from heat.
- Line a baking sheet with aluminum foil.
- In a bowl mix bread, raisins, parsley, butter, salt, and pepper and water.
- Mix gently.
- Cut a deep pocket in each pork chop and fill with stuffing.
- Place on baking sheet and press down lightly to flatten.
- Sprinkle with salt, pepper, and brown sugar to taste.
- Broil on one side until slightlly browned, about 8-10 minutes.
- *Can substitute other dried fruit like cranberries.

- Cut up banana pepper, onion and pepperoni.
- Fry with about 3 or 4 T pepper juice.
- Cut a"pocket" in pork chops.
- Stuff with cheese and pepper/pepperoni/onion mix (If pork chops are not thick enough to stuff, you can layer all of the stuff on top and bake).
- Bake in 350 degree oven until done.
