TRADITIONAL SAUSAGE STUFFING RECIPE

1 pound ground sausage
1 white onion (diced)
1 1/2 cups sliced celery
1/4 cup salted butter
1/4 cup all-purpose flour
2 cups low sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups heavy cream
1 large egg
1 pound stale loaf bakery-style bread* (cubed)
1 cup dried cranberries
1 tablespoon minced fresh sage
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh thyme

Steps:

  • Preheat oven to 425 degrees. Lightly grease a 9x13 pan.
  • Heat a large skillet over medium high heat. Add in ground sausage and cook until browned, about 5 minutes.
  • Add in onion and celery and saute until onions are soft and translucent, about 5 to 7 minutes, and sausage is cooked. Add in butter and allow it to melt.
  • Whisk in flour until all white specks disappear and cook 2 minutes. Pour in the chicken broth, season with salt and pepper, and whisk to combine. Bring to a boil. Once boiling the mixture will thicken quickly. Once it thickens remove from heat and set aside.
  • In a small bowl whisk together the egg and heavy cream. Set aside.
  • In a large mixing bowl mix together the stale diced bread*, dried cranberries, and fresh herbs. Slowly pour the cream mixture over it and stir to moisten everything. Then pour the chicken broth and sausage mixture over and stir to combine. Immediately transfer it to the prepared 9x13 pan and spread it out in an even layer.
  • Bake at 425 degrees for 30 minutes, until the top starts to brown. Serve hot.

1 stick unsalted butter, plus more for the dish
1 pound loose breakfast sausage (or use links and remove the casings)
2 onions, chopped
4 stalks celery, chopped
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
2 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
2 large eggs
1/2 cup chopped fresh parsley
16 cups stale 1/2-inch country white bread cubes (about 2 pounds)

Steps:

  • Preheat the oven to 350˚. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat, until no longer pink, 3 to 5 minutes. Add the onions, celery, sage and thyme and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the chicken broth, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then remove from the heat.
  • Whisk the eggs and parsley in a large bowl. Add the bread cubes and sausage-broth mixture and toss until evenly combined. Transfer to the prepared baking dish, dot with the remaining 2 tablespoons butter and cover with foil.
  • Bake the stuffing until hot, about 30 minutes. Uncover and bake until golden brown, 20 to 30 minutes. Let cool at least 15 minutes before serving.

2 1/2 pounds (1.25kg) high-quality sandwich bread or soft Italian or French bread (about 2 loaves), cut into 3/4-inch dice (about 5 quarts)
8 tablespoons butter (1 stick; 4 ounces; 115g)
1 1/2 pounds (680g) sage sausage, removed from casing
1 large onion, finely chopped (about 12 ounces; 350g)
4 large ribs celery, finely chopped (about 12 ounces; 350g)
2 cloves garlic, minced or grated on a Microplane grater
1/4 cup minced fresh sage leaves (or 2 teaspoons dried sage leaves)
Kosher salt and freshly ground black pepper, if needed (see note)
1 quart low-sodium homemade or store-bought low-sodium chicken or turkey stock (4 cups; 1L), divided
3 whole eggs
1/4 cup minced parsley leaves, divided

Steps:

  • Adjust oven racks to lower-middle and upper-middle positions. Preheat oven to 275°F (135°C). Spread bread evenly over 2 rimmed baking sheets. Stagger trays on oven racks and bake until completely dried, about 50 minutes total, rotating trays and stirring bread cubes several times during baking. Remove from oven and allow to cool. Increase oven temperature to 350°F (180°C).
  • In a large Dutch oven, melt butter over medium-high heat until foaming subsides (do not allow butter to brown), about 2 minutes. Add sausage and mash with a stiff whisk or potato masher to break up into fine pieces (largest pieces should be no bigger than 1/4 inch). Cook, stirring frequently, until only a few bits of pink remain, about 8 minutes. Add onion, celery, garlic, and sage and cook, stirring frequently, until vegetables are softened, about 10 minutes. Remove from heat and add half of chicken stock.
  • Whisk remaining chicken stock, eggs, and 3 tablespoons parsley in a medium bowl until homogeneous. Stirring constantly with a wooden spoon, slowly pour egg mixture into sausage mixture. Add bread cubes and fold gently until evenly mixed.
  • Use part of stuffing to stuff turkey, if desired (see note). To cook remaining stuffing, transfer to a buttered 9- by 13-inch rectangular baking dish (or 10- by 14-inch oval dish), cover tightly with aluminum foil, and bake until an instant-read thermometer reads 150°F (66°C) when inserted into center of dish, about 45 minutes. Remove foil and continue baking until golden brown and crisp on top, 15 to 20 minutes longer. Remove from oven, let cool for 5 minutes, sprinkle with remaining parsley, and serve.

16 cups 1-inch bread cubes, white or sourdough (1 1/2 pound loaf)
8 tablespoons (1 stick) unsalted butter
2 cups medium-diced yellow onion (2 onions)
1 cup medium-diced celery (2 stalks)
2 Granny Smith apples, unpeeled, cored and large-diced
2 tablespoons chopped flat-leaf parsley
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
3/4 pound sweet or spicy Italian sausage, casings removed
1 cup chicken stock
1 cup dried cranberries

Steps:

  • Preheat the oven to 300 degrees F.
  • Place the bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temperature to 350 degrees F. Remove the bread cubes to a very large bowl.
  • Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 minutes, until the vegetables are softened. Add to the bread cubes.
  • In the same saute pan, cook the sausage over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables.
  • Add the chicken stock and cranberries to the mixture, mix well, and pour into a 9 by 12-inch baking dish. Bake for 30 minutes, until browned on top and hot in the middle. Serve warm.

This stuffing has lots of flavor and is nice and moist. You can also change the ingredients to your liking. I quadruple this recipe and make the extra in my electric roaster, that's how much everyone loves it. This recipe is very adaptable, you can change it around anyway you like and it will still be delicious!

¾ cup margarine, melted
¾ cup finely diced onion
1 ½ cups chopped celery
8 cups soft bread cubes, divided
3 teaspoons poultry seasoning

  • Place sausage in a large, deep skillet; cook over medium-high heat until evenly brown, about 10 minutes. Remove sausage from the skillet and let drain on paper towels. Combine melted margarine with the sausage drippings until there is 1 cup of drippings and margarine combined.

Mom's recipe for Thanksgiving sausage stuffing. Can be stuffed in turkey for a moister version. Makes large tin tray of stuffing. We usually at leat double it for our get togethers of 12-14. We like leftovers :-) Equipment: Large Frying/Saute Pan, Large Mixing Bowl, Cutting Board, Sharp Knife, Mixing or Wooden Spoon, Med to Deep Foil Baking Pan, Aluminum Foil, enough to cover baking pan. 1 cup salted butter (or your preference)
3 tablespoons butter, to coat foil pan (Can sub for PAM spray)
3 (10 ounce) bags dry bread cubes (10 to 14 ounce each. Use mostly 'Seasoned', but can be any brand. Can use some Cornbread cubes or ot)
1 large onion
3 -4 stalks celery
2 lbs pork sausage (Jimmy Dean Pork Sausage, Regular flavor, but can use any brand. Can use part Sage or Spicy variety, )
3 (32 ounce) boxes chicken broth (Any brand. Will use UP to 3 boxes, may only need 2.)
pepper (Oregano or Basil) or italian seasoning (Oregano or Basil)

Steps:

  • Chop onion and celery into a medium dice.
  • In large frying pan, melt one stick of butter and saute vegetables. Season generously with Garlic Salt, Salt, Pepper, and Italian Seasoning. (It WILL be salty, but remember -- this mixture will flavor the dry bread cubes later). When done, empty into large mixing bowl.
  • Preheat oven to 350 degrees.
  • Using the same pan, brown pork sausage. Be sure to break into chunks as it's cooking. Drain off grease, and empty into large mixing bowl.
  • Add 2-3 bread cubes into the mixing bowl and stir. Set aside for now to allow the cubes to absorb the juice and flavor of the vegetables and sausage.
  • Use the same pan again, melt the other stick of butter and heat through with two boxes of chicken broth (you may not need the 3rd).
  • Pour amounts of the heated butter/chicken broth mixture over the cubes, et al in the mixing bowl. Stir to mix. DON'T pour it all at once! It's not an exact science, and you'll want it moist enough that it WILL NOT hold a firm form of a meatball. It may appear TOO juicy, but it will cook out when baking. Be generous, or it will be too dry. We like it to come out crunchy on top, but moist below.
  • Taste to make sure it's flavorful. Adjust seasoning, if needed.
  • REMEMBER to butter or PAM spray the foil pan.
  • Load the stuffing mixture, and smooth on top.
  • Cover with foil and bake at 350 degrees for 30 minutes or so. Remove foil and bake for additional 15-20 minutes, or until crispy and golden on top. Let it sit for a few minutes before serving.

2 onions, sliced
25g butter
1 small Bramley apple, peeled, cored and diced
2 x 400g packs meaty Cumberland sausages, removed from their skins
handful sage, leaves chopped, plus extra for topping
140g granary breadcrumbs

Steps:

  • Fry 2 sliced onions in 25g butter for 5 mins, then add 1 small diced Bramley apple and cook briefly.
  • Cool, then mix with 800g Cumberland sausages, skins removed, the chopped handful of sage, 140g granary breadcrumbs and seasoning.
  • Use to stuff the neck end of the bird, then roll any leftovers into balls. Or, pack the whole mixture into a 1kg loaf tin and top with extra sage leaves.
  • Bake with turkey for 30-40 mins. Drain off any fat and serve sliced.
