2 eggs
1 tablespoon white sugar
1 cup sifted all-purpose flour
1 cup milk
1 teaspoon vanilla extract
¼ teaspoon salt
vegetable oil for frying
sifted confectioners' sugar

Steps:

  • Combine eggs, sugar and salt; beat well. Add remaining ingredients and beat until smooth.
  • Heat a rosette iron in deep, hot oil (375 degrees) for 2 minutes.
  • Drain excess oil from iron. Dip in batter to 1/4 inch from the top of the iron, then dip iron immediately into hot oil (375 degrees).
  • Fry rosette until golden, about 30 seconds. Lift out; tip upside down to drain. With fork, push rosette off iron onto a rack placed over paper towels.
  • Reheat iron 1 minute; make next rosette.
  • Sprinkle rosettes with confectioners' sugar.

2 large eggs
2 teaspoons sugar
1 cup 2% milk
3 teaspoons vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
Oil for deep-fat frying
ICING:
2 cups confectioners' sugar
1 teaspoon vanilla extract
1 to 3 tablespoons water

Steps:

  • In a small bowl, beat eggs and sugar; stir in milk and vanilla. Combine flour and salt; gradually add to batter until smooth., Heat 2-1/2 in. of oil to 375° in a deep-fat fryer or electric skillet. Place rosette iron in hot oil, then dip in batter, three-fourths up the sides of iron (do not let batter run over top of iron). Immediately place in hot oil; loosen rosette with fork and remove iron. , Fry rosettes, a few at a time, until golden brown, 1-2 minutes on each side. Remove to paper towel-lined wire racks. Repeat with remaining batter. , For icing, combine the confectioners' sugar, vanilla and enough water to achieve a dipping consistency. Dip edges of rosettes into icing; let dry on wire racks.

These are a holiday tradition at our house. I take the recipe and make it x 6. I take boxes, line with foil for family and friends. What I also do is have the powdered sugar ready and heat the oil in a fry pan next to the foil, that way when some are done it's easier to get them done and in boxes and we can eat some.. Also I use a whisk to mix the ingredients so they don't get clumpy Enjoy!! also I put aprox servings without the doubling or like me making it 6 times. cook time is of course with the recipe that I made it which was 6 times the original recipe.

powdered sugar, for the cookies (I sprinkle my powdered sugar over my cookies)

Steps:

  • First heat oil to cook the rosettes in and get your rosettes iron nice and hot.
  • I heat my oil to 350.
  • Mix all ingredients with a whisk and dip your rosettes iron in batter and dip in heated oil. Take off iron, I use a knife to help slide it off and then put them on foil and sprinkle with powdered sugar and place in boxes.

Rosettes are delicate fried pastries common throughout the world. This easy, traditional recipe is simply made with eggs, sugar, milk, flour, and oil.

2 large eggs (slightly beaten)
2 teaspoons sugar
1 cup milk
1/4 teaspoon salt
1 cup flour (all-purpose)
1 tablespoon vanilla extract
4 cups canola (for frying)

Steps:

  • Gather the ingredients.
  • Place 3 inches of canola oil in a deep fryer or deep, heavy-bottomed saucepan, and heat to 375 F, using a candy/frying thermometer clipped to the pot. Attach the desired rosette shapes to your handle (some handles can accommodate 2 rosette shapes).
  • While oil is heating, prepare the batter. In a medium bowl, add sugar to eggs and whisk to combine.
  • Add milk and whisk to combine.
  • Measure the flour correctly and whisk together with the salt.
  • Transfer to the bowl with eggs and milk and beat until smooth. Add the vanilla and mix again. (The consistency should be that of heavy cream. If it is too thick, add a little milk. If the batter is too thick, the rosettes will not be crisp.)
  • When ready to fry, immerse the rosette iron with attached shape(s) into the hot oil until thoroughly heated (1 minute or so). Lift iron out, shaking off excess fat and blotting onto a paper towel. Dip into prepared batter only to the depth of the form, not over the top as the excess batter will have to be scraped off after frying in order to take the rosette off the form.
  • Dip forms into the hot oil. When foamy bubbling stops and/or rosettes are a golden brown, lift iron out of oil, allowing excess oil to drain off back into the fryer or saucepan.
  • Remove the rosettes using a skewer to push them off or tap the back side of the rosette forms with a wooden spoon. Drain rosettes open side down on paper towels so excess oil will run out.
  • Dip the rosette iron into the hot fat, blot lightly on paper towels and then dip into the batter. Continue in this manner until all the batter is used up. Dust the rosettes with confectioners sugar while still warm or when cool, or just before serving.
  • Serve and enjoy.

Rosettes are traditional Swedish cookies. Light and crispy, they are favorites of young and old. Rosettes are unusual in that they are fried. You will need a rosette iron, which is available in many stores (Target is one) and online. The irons come in many shapes, but the rosette is traditional. I didn't list quantities for oil and powdered sugar as more will be required than will actually become part of the rosettes. They will be around 30 calories each (before sugaring). Allowing the batter to rest creates thinner, crisper cookies. Preparation time includes resting time.

2 eggs
1 cup milk
1 tablespoon sugar
1/4 teaspoon salt
1 cup sifted flour
flavorless oil (canola)
powdered sugar

Steps:

  • Have ready: a jelly roll pan lined with several layers of paper toweling; powdered sugar in a shaker or sieve.
  • Whisk eggs, milk, sugar and salt together. Sprinkle in flour a little at a time. Beat until smooth. Let batter sit for 30 minutes.
  • Heat 3 - 4" of oil in a small, deep pan to 365°F.
  • Stir batter.
  • Heat rosette iron by submerging in hot oil for 10 seconds.
  • Lift out, shake off excess oil and dip immediately into batter just so the top edge of the iron is even with the surface of the batter. If you dip it too far, the rosette won't come off the iron.
  • Plunge the coated iron into the hot oil. Don't let the iron touch the sides or bottom of the pan.
  • As soon as the batter puffs, gently pull the iron out. The rosette should slip back into the oil.
  • When lightly browned, carefully lift out with a fork or slotted spoon and place on paper toweling to drain.
  • Reheat iron and proceed with remaining batter. You'll have to work very quickly. The frying only takes a few seconds.
  • Don't be tempted to fry more than two at a time. It will cool the oil too much and you'll get flabby, greasy rosettes. The oil should not go below 355°F.
  • After you've fried a few, dust them with powdered sugar.
