HAWAIIAN EGG ROLLS
As an avid cook, I am constantly trying to come up with recipes for leftovers. This one gives a whole new twist to extra ham. My two children think these egg rolls are wonderful, and they freeze well. I thaw as many as needed and bake them. -Terri Wheeler, Vadnais Heights, Minnesota

- In a large saucepan, saute spinach and ginger in olive oil for 1-2 minutes. In a large bowl, combine the ham, water chestnuts, pineapple, green onion and soy sauce. Stir in the spinach mixture. , Place 3 tablespoons ham mixture in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides over filling toward center. Moisten remaining corner with water; roll up tightly to seal. , In an electric skillet, heat 1 in. of canola oil to 375°. Fry egg rolls until golden brown, about 2 minutes on each side. Drain on paper towels. Serve with sweet-sour sauce.

BEST EGG ROLLS
These are fabulous as a side dish with stir-fry dishes. Serve warm with egg roll sauce or soy sauce if desired.

Steps:
- Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
- In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
- Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
- Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.

- In a shallow bowl, beat eggs and milk. In another bowl, combine the bread crumbs, cheese and parsley. Dip ham cubes in egg mixture, then roll in crumb mixture. , In an electric skillet, heat 1/4 in. of oil to 375°. Fry ham cubes, a few at a time, for 2 minutes on each side or until golden brown. Drain on paper towels., In a small saucepan, heat cheese and milk over medium heat for 3-4 minutes or until cheese is melted. Remove from the heat; stir in salsa. Serve with ham cubes.

- In a large sauté pan, heat 1 tablespoon of vegetable oil over medium high heat. Add red pepper and onion and sauté until onion is soft and translucent, stirring often. Add shredded chicken, corn, black beans, spinach, jalapeños, cumin, chili powder, salt, and cayenne pepper to the pan. Stir to combine. Cover and cook 5 to 8 minutes, until heated through, stirring often. Remove heat and allow any moisture to evaporate, continue to stir often. Remove from heat and add parsley and cheese. Stir to combine. In a small bowl beat the egg to use as an egg wash to seal the egg rolls. Heat tortillas until flexible by wrapping in a lightly damp towel and heating in the microwave 1 to 1-1/2 minutes or by heating on a warm griddle. Divide the filling between the tortillas, placing the filling on one side of the tortilla. Fold the sides in toward the center, the roll the tortilla around the filling, making sure all the filling is completely enclosed. Brush the inside flap of the egg roll to glue it closed. Place edge side down on a ungreased baking sheet that will fit in the freezer. Repeat until all of the filling is used. Cover the egg rolls with plastic wrap and freeze at least 4 hours or up to overnight. Heat 6 to 10 cups of vegetable oil or shortening in a dutch oven or deep fryer to 350°F. Deep fry frozen egg rolls in hot oil 10 to 12 minutes until golden brown. Remove and place on a rack to drain. DIPPING SAUCE: In a medium bowl, combine avocado, mayonnaise, sour cream, buttermilk, vinegar, salt, parsley, onion powder, dill, garlic powder, and pepper. Stir to combine. Cover and refrigerate until ready to serve. To serve, cut egg rolls in half on the diagonal. Serve warm with dipping sauce.

Steps:
- Place one chicken breast between plastic wrap or freezer bags and bash it until it is nice and thin -- repeat with the other breast.
- Mix the pepper, five spice and crushed garlic.
- Sprinkle the mixture over both breasts.
- Roll up one slice of ham and place it on the chicken breast.
- Roll the chicken up firmly and fold the ends under.
- Whisk the egg and milk together.
- Coat the chicken with flour (easiest in a freezer bag) shake off the excess.
- Dip in the egg mixture -- shake of the excess.This step will stop the chicken from separating from the spring roll wrapper.
- Place the chicken "roll" diagonally across the spring roll wrapper. Brush some of the egg mixture on the ends of the wrapper.
- Roll the chicken, tucking the ends in as you roll.
- Deep fry in oil until golden brown and cooked through. Don't have the oil too hot -- otherwise the spring roll wrappers will brown before the chicken is cooked.
- Drain on paper towels and then cut on the diagonal.
- Serve on a bed of lettuce with dipping sauces.
- Serve with your favourite sauce.
