DEEP DISH MINI PIZZAS
These deep dish mini pizzas are SO EASY to make and they taste amazing!!

Steps:
- Preheat the oven to 375F.
- Spray a muffin tin with cooking spray.
- Lay the crescent roll dough on a cookie sheet and cut out 12 circles (for the mini pizzas shown in the photos) or 12 squares (if you want larger pizza muffins).
- Place the dough at the bottom of each muffin cup. If you cut them into squares, overlap the corners so the top edge is even.
- Add a layer of cheese, a spoon of pizza sauce to cover the cheese, another layer of cheese and your favourite toppings.
- Bake at 375F for 15 minutes until the cheese starts to bubble and the crust is golden brown.
- Let them sit for 5 minutes before pulling the mini pizzas out of the muffin tin.
- Enjoy!
MINI DEEP-DISH PIZZAS
Steps:
- Preheat the oven to 425 degrees F. Spray the cavities of a mini muffin pan with cooking spray.
- Remove the pizza dough from the packaging and allow it to come to room temperature on a floured surface.
- Using a rolling pin or your hands, roll it out into a VERY thin layer. Using either a small round cookie cutter (about 2 inches) or an empty 4.5-ounce can, cut it into rounds.
- Using your fingers, stretch the dough without tearing and press into the prepared muffin cups.
- Next, assemble the pizzas. Spoon about 2 teaspoons of the crushed tomatoes into each cup. Sprinkle with a little Italian seasoning and top with about 1 tablespoon of mozzarella. Top with the mushrooms, sausage and pepperoni or whatever toppings you prefer.
- Bake until the crust is golden brown and the cheese is melty and bubbly, 15 to 20 minutes.

- Place into oven and bake for 10-12 minutes, or until cheese has melted.

- Preheat oven to 450 degrees. Lightly brush 6 standard muffin cups with oil. On a lightly floured work surface, roll out each dough piece to a 6-inch round. Fill each cup with 1 round, gently pressing dough into bottom and sides of cup. Season with salt and pepper.

MINI DEEP DISH PIZZAS
These use whole wheat sandwich wraps for the crust. I know this isn't exactly a 'traditional' deep dish pizza, as the cheese and pepperoni are on top of the sauce, but I decided to give these little pizzas a 'deep dish' name because of the enormous amount of sauce and cheese packed into these little guys! The crust for these hand-held pizzas are made from whole wheat wraps, which bake up nice and crispy, so they taste a lot like a thin crust! I added parmesan cheese and spices to the sauce, so every bite is bursting with cheesy flavor! You could add any toppings you'd traditionally have on your pizza to make them even more personalized!

- 1. Preheat oven to 425 degrees. Spray a 12 count muffin tin with non-stick cooking spray.
- 2. Start by laying each tortilla out individually on a flat surface, and use an empty can, cup, or cookie cutter to cut 3-4 medium circles out of each wrap. I used the empty pizza sauce can, which worked well! Press firmly enough, using a rocking motion, until it cuts through the wrap.
- 3. Press each wrap circle into muffin tin using your fingers. Note: it doesn't have to cover the entire side of the tin, it should just fit snuggly!
- 4. Meanwhile, pour pizza sauce into a medium sized bowl; Add in the Parmesan cheese and the spices. Stir until everything is well combined.
- 5. Drop about 1-2 tbs of sauce in each wrap, this really varies according to how much sauce you like!
- 6. Divide mozzarella cheese evenly over each mini pizza.
- 7. Place 4 mini pepperoni's on top of each pizza.
- 8. Bake in preheated oven for 12-15 minutes, or until cheese is melted and lightly browned.
- 9. Wait for pizzas to cool, and remove from muffin tin using a fork or knife. Pizza's should pop out with ease!
- Serve warm and enjoy!
- Weight Watchers Points Plus: 3pp for 2 Pizzas, and 5pp for 3 Pizzas.
