DEE-LICIOUS BRUSCHETTA
A great recipe I make often. Requests are the norm, and people can not believe the tomatoes are canned.

- Mix all together and refridge at least 2 hrs, longer is preferable.
- Serve with fresh or toasted french bread.

SOUTHWESTERN BRUSCHETTA
This is my own creation. While cruising the Sea of Cortez (with no super markets in sight) I needed to come up with an appetizer to take to a 'dingy raft-up' party.

Steps:
- Mix chopped garlic, vinegar, salt, pepper, and cilantro.
- Slowly stir in oil.
- Add chopped tomatoes and jalapenos and allow to sit for 30 minutes at room temperature.
- Meanwhile place the bread rounds on cookie sheet and lightly toast under broiler.
- When the bread is toasted rub tops of toast with whole garlic pieces.
- Top bread with tomato mixture.
- Sprinkle on a little cheese and if desired, pop into warm oven to melt cheese.
- Serve immediately.

Steps:
- Grill or toast bread on both sides.
- Sauté garlic in oil over a medium heat for a couple minutes, taking care not to let the garlic brown.
- Brush one side of each piece of bread with the garlic oil.
- Place a layer of tomatoes over the oil on the bread.
- Sprinkle with cheese, and then basil.
- Bake in a preheated 400°F oven for 8-10 minutes, and then place under broiler for another 1-2 minutes.

PROSCIUTTO & FIG BRUSCHETTA

- Preheat the broiler. Brush the bread slices on both sides with olive oil and season them with salt and pepper.
- Lay the bread slices on a baking sheet and place it as close to the heat source as possible. Broil the bread until golden brown on one side, about 1 to 2 minutes. Turn the slices over and broil for another 30 seconds to 1 minute, until browned.
- Lay the prosciutto on the bread slices, cutting it if necessary to fit. Toss the figs with balsamic vinegar and place on top of prosciutto. Drizzle with olive oil, salt, pepper and garnish with thyme if desired and serve at once (so the toast doesn't turn soggy).

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
- Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.

This is a fail proof version of bruschetta! They turn out so yummy, I can't keep them on the plate for more then 15 minutes. When I make this recipe, the pieces don't see the next day. No Complaints about this recipe!

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Toast muffin halves under broiler until golden, about 2 to 3 minutes. Mix garlic, butter, and basil together in a small bowl; spread butter mixture evenly onto each toasted muffin half.
- Combine tomatoes, olives, and tomato paste in a large bowl; set aside. Whisk together the olive oil, lemon juice, and honey in a small bowl. Spoon some of the tomato mixture onto each muffin, then drizzle the olive oil mixture over the top, place a piece of mozzarella on top, and season with salt and pepper.
- Return muffins to broiler; cook until the cheese has melted, 1 to 2 minutes. Serve immediately.
