- In a large cast-iron skillet, cook bacon until crisp, about 10 minutes. Remove bacon using a slotted spoon, and let drain on paper towels, reserving drippings in skillet. Add onion to skillet; cook until tender, 2 to 3 minutes. Remove onion with drippings, and let cool completely. In a large bowl, combine ground beef, bacon, cooked onion, salt, and pepper. Divide mixture into 8 portions, and shape each portion into a 5-inch patty. In same skillet, cook burgers in batches until desired degree of doneness is reached, 6 to 8 minutes per side. Add cheese during last minute of cooking. Serve on buns with lettuce, ketchup, and red onion.

- Heat charcoal or gas grill to medium. Combine ground pork, onion and hot sauce; mix well with hands. Shape into 4 (8-oz.) burgers; season with salt and pepper on both sides.
- Grill burgers until internal temperature reaches 165 degrees F., turning after 8 minutes. Place 2 slices cheese on top of each burger to melt.
- Lightly toast brioche buns on grill, being careful not to burn. Place pork burgers on buns; top each with 4 half strips of bacon.
- Serve with lettuce, tomato, pickles, mayonnaise and mustard on the side.

- In 10-inch skillet, heat 1 tablespoon bacon drippings over medium-high heat. Add onions; cook about 15 minutes, stirring frequently, until softened.
- Reserve 1/2 cup of the beer. Stir remaining beer into onions. Heat to boiling; reduce heat to medium and simmer uncovered, stirring occasionally, until onions are golden and liquid has evaporated, about 30 minutes. Cool.
- Meanwhile, roughly chop 4 slices of the cooked bacon; set aside. Roughly chop half of the onion mixture; stir into chopped bacon.
- In medium bowl, stir chopped onion and bacon mixture into beef. Add salt and pepper. Shape beef mixture into 4 large patties, thinner at center and thicker at edges for even cooking.
- In 10-inch skillet, heat remaining bacon drippings over medium-high heat. Add patties; cook 8 minutes for medium-rare, 10 minutes for medium, 12 minutes for medium-well, turning once. After turning, add reserved 1/2 cup beer to burgers, then top burgers with cheese. Cover skillet to melt cheese.
- Place burgers on bun bottoms; top with lettuce leaves, tomato slices, and remaining caramelized onions. Cut remaining 4 slices bacon in half; crisscross 2 pieces on top of onions on each burger, and cover with tops of buns.

BACON, ONION AND CHEESE STUFFED BURGER

- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
SIMPLE ONION AND BACON JAM
Bacon jam isn't just for burgers, add it to grilled cheese, waffles or roasted veggies, the possibilities are endless. I prefer the ratio of more onion to bacon but feel free to add additional bacon. I've made the consistency thicker than a traditional jam.

- In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
- Prepare a grill or large skillet for medium heat.
- As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
- Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

- In a large skillet, cook the bacon over medium heat until lightly browned, but not crisp (8 minutes or so). Transfer the bacon to paper towels to drain. Pour off all but 2 to 3 tablespoons of bacon fat from the skillet. Add the onion, season lightly with salt and pepper, and cover the pan; cook for 2 minutes. Uncover, add a splash of water, scrape up any browned bits from the bottom of the pan. Cover, and continue to cook, stirring often, until the onions are soft and beginning to color- about 10 minutes. Add the vinegar, water, and mustard. Return the bacon to the skillet and bring the mixture to simmer. Continue to simmer, uncovered, until the liquid has thickened and most of it has been absorbed- 2 to 4 minutes. Transfer to a small bowl and let cool. Leave at room temperature for up to 2 hours, or refrigerate for up to 2 days (reheating, as needed).
- In a large mixing bowl, use a fork to gently combine bacon, ground beef, Worcestershire sauce, 1 teaspoon salt and 1/2 teaspoon pepper. Form into 4 hamburger patties, and press your thumb into the center of each patty to create a deep depression. Preheat your grill. Grill burgers to desired doneness (4 to 5 minutes per side). Toast the buns too, if desired- if you're serving with buns.
- Serve the burgers topped with warm balsamic- caramelized onions. No additional condiments are needed! Serve on buns, if desired.
