DEB'S CHICKEN SALAD
My family really likes this on hot summer days. We think that the tart, sharp, salty, and sweet flavors teamed with the juicy/crunchy bits of cucumber and apple is amazing. Keep salad chilled until serving. Serve over mixed greens.

Steps:
- Mix chicken, bacon, cucumber, celery, and apple in a large bowl.
- Whisk mayonnaise, blue cheese, sweet onion, basil, lemon juice, ginger, Worcestershire sauce, salt, and pepper together in a bowl; pour over the chicken mixture and toss to coat.
- Cover bowl with plastic wrap and refrigerate until chilled, at least 20 minutes.

CHINESE SOY SAUCE CHICKEN
This recipe is an adaptation from a basic soy sauce chicken recipe from the internet and consultation with my grandma. I can eat this everyday! You can use skinless, boneless chicken parts, but the taste won't be the same.

Steps:
- Mix all ingredients, except chicken, scallions, sesame seeds in a large pot over medium heat.
- Add chicken, then let simmer 30-40 minutes, turning chicken pieces occasionally.
- Remove chicken pieces from sauce and set aside in a serving platter.
- Skim fat from the sauce, thicken it with cornstarch mixture (1 tsp cornstarch dissolved in 1 TB water) and pour the sauce over chicken.
- Sprinkle scallions and sesame seeds and serve with rice.

- Heat the oil in a large skillet over medium high heat.
- Add onion and garlic; saute 3 minutes.
- Add chicken; cook 4 minutes on each side or until browned.
- Add bell pepper, vinegar, mushrooms, italian seasoning and tomatoes.
- Reduce heat to medium low; cook 20 minutes or until chicken is done.
- Serve over rice.

I don't actually know why it is called Debs, it is just what the family has always called it. It is like chocolate soufflé, but better and easier.

Steps:
- Set oven to 375F (moderate oven).
- Cream butter and sugar.
- Add egg, flour, 2 T cocoa powder and milk. Mix well.
- Pour mixture into greased casserole dish.
- Sprinkle sugar and remaining 2 T cocoa powder on top.
- Gently pour hot water on top. (Don't be scared, just pour the water on and watch the magic happen in the oven).
- Bake at 375 for 30 minutes.
- The end result is a cakey top and a chocolate sauce underneath. Serve with ice cream, whipping cream, creme fraiche, etc.

Steps:
- On medium heat, saute the onions in the olive oil.
- Dredge the chicken in the flour and saute in the pan with the onions and add the garlic and brown.
- Add the vinegar and scrape pan to incorporate the bits and let it bubble, then lower the heat to a simmer.
- Add the soy sauce and the broth and cover; continue to simmer about 30 minutes and garnish with scallions when serving.
