THE BEST MEAT AND POTATOES
This recipe will please not only the meat-and-potato lover in your house but will also please the cook. It comes together in just 30 minutes with minimal cleanup! We seared tender, juicy strip steaks in a hot cast-iron skillet, then made a fast pan sauce with mustard, wine and herbs. Mashed potatoes are kicked up with sour cream, horseradish and spinach for a stick-to-your-ribs side dish that's a cinch to prepare in the microwave.

- Put the potatoes and 2 tablespoons water in a large microwave-safe bowl. Cover tightly with plastic wrap and poke a few holes in the top. Microwave until the potatoes are tender and can be easily broken apart with a fork, about 15 minutes.
- Carefully remove the plastic (watch out for hot steam) and add the sour cream, horseradish, 4 tablespoons butter, 1 teaspoon salt and some black pepper to the bowl and mash until creamy. Fold in the spinach until wilted and well combined.
- Rub both sides of each steak with the garlic clove, then put the clove in a large cast-iron skillet. Season the steaks on both sides with 2 teaspoons salt and a generous amount of black pepper.
- Add the olive oil to the skillet and heat over medium-high until shimmering. Add the steaks and cook, undisturbed, until deep golden-brown and no longer sticking to the pan, about 5 minutes. Flip the steaks and continue cooking until golden-brown and an instant-read thermometer registers 125 degrees F when inserted into the center for medium-rare. Remove the steaks to a cutting board to rest for 10 minutes before slicing. Discard the garlic clove.
- Meanwhile, turn off the heat and let the pan cool for about 2 minutes. Turn the heat to medium-low and add the shallots. Cook, stirring occasionally, until softened and golden-brown, about 2 minutes. Stir in the Dijon and thyme leaves until well combined. Pour in the white wine and simmer until thickened and reduced by half, 4 to 5 minutes. Swirl in the remaining 2 tablespoons butter until melted and silky.
- Thinly slice the steaks crosswise and divide among plates. Spoon sauce over the steak and serve with the potatoes.
DEBBIES SWEET POTATO CASSEROLE
Another Sweet Potato Casserole. This is my version. I have been making this for 30 years and it is a family favorite. Mine is made with baked sweet potatoes. I think it makes a big difference.

- Combine all the filling ingredients in large bowl and mix well. (I use my hand mixer for this)
- Pour into a greased 3 quart baking dish.
- Mix all topping ingredients. Spoon onto filling mixture.
- Bake 350 degrees for 30-40 minutes. (depending on the depth of your baking dish).

DEBBIE'S POTATO CASSEROLE
One of my dance club friends who is a very good cook, gave this recipe to me. Everytime I prepare this dish, I think of her and how beautifully she and her husband dance our favorite specialty dance called the 'Night Club Two Step'.

- 1. Saute onions in butter. Mix the soup with 1/2 can water & whisk together with the cream cheese. Add to the onions in skillet, stir until melted and smooth. Add the potatoes and chicken.
- 2. Pour into a buttered 8 X 11 baking dish and bake at 350 degrees for 45 - 50 minutes. The top should be nicely browned. Top with cheddar cheese, return to the oven until cheese is melted, about 5 minutes.

- Combine the first 6 ingredients. Shape into 4 patties; press to flatten slightly. In a large skillet, heat oil over medium-high heat. Brown patties on both sides; drain. Add tomato juice. Simmer, covered, until a thermometer inserted into meat reads 160°, 20-25 minutes. Remove patties to a serving platter; keep warm. , Whisk flour into water; gradually add to skillet. Reduce heat to medium-low; cook, stirring constantly, until thickened. Spoon over patties. Serve immediately.

DEBBIE'S TWICE BAKED POTATOES
Steps:
- Preheat oven to 450 degrees F. Rinse potatoes. Place potatoes directly on the center rack inside the oven and bake for approximately 50 minutes or until you can easily stick a fork inside the potatoes with little resistance.
- Cut the potatoes in half lengthwise. Scoop the white portion of the potatoes out until all that's left is the brown outer portion of the skin (you may have to leave a little of the white part on the skin so they don't collapse). When all of the potatoes have been hollowed out, combine all of the potato meat in a large bowl and mash until there aren't any lumps. Add the bacon bits, shredded cheese and butter into the bowl and mix until blended (you may also choose to add chives, etc. or whatever else you want at this point).
- Divide mixture among the skins (you will not use all of the skins) and then sprinkle an extra bit of cheese on top of each. Place potatoes onto a 13x9 inch baking pan. Cover with aluminum foil and return to oven to bake for approximately 14 more minutes.

- Preheat the oven to 350 degrees.
- Lightly coat a 10 x 6 x 2 inch (1 1/2 quart) glass baking dish with nonstick cooking spray and set aside.
- Combine the sweet potatoes with 1/4 cup of the melted butter along with the brown sugar, cinnamon, nutmeg and salt in a mixing bowl and beat until very well blended.
- Add 1 cup of the marshmallows and blend.
- Transfer the mixture to the baking dish smoothing out the top with a spatula.
- Put the remaining marshmallows over the top.
- Bake for about 20 minutes or until the potatoes are very hot and the topping is golden brown.
- Remove from oven and serve immediately.

DEBBIE'S PERSONAL POTATO SALAD
This potato salad is a high seller in our catering business. Many people are not fond lovers of mustard, so I came up with this as a substitute for the mustard.

- Peel and cut raw potatoes into cubes. Rinse well and boil for 10-12 minutes. Drain and set aside. Make sure these are totally dry before mixing your potato salad. I often set them on a clean towel spread out on a cookie sheet for about half an hour.
- Boil eggs, shell, rinse with cold water, chop and set aside. Chop Vidalia onion and also set aside.
- When boiled potatoes are air dried, mix cubed potatoes, chopped eggs and onion in a large mixing bowl.
- In a separate small bowl mix the miracle whip salad dressing, Green Goddess salad dressing, salt and black pepper. Pour over potatoes, egg and onion mixture and gently mix together. You may top with a gentle shake of paprika, and or sliced boiled eggs. Chill and serve.
- Note: Some people enjoy more sauce in their salads, so just increase the two salad dressings per your personal taste. Be sure to increase or decrease your salt and pepper as well.
DEBBIE'S POTATOES AND MEAT
Steps:
- Brown pork steak in oil. When done put pork steak in a 9 x 13 baking pan. Add salt and pepper.
- Peel and slice potatoes and put on top of pork. Slice green pepper, mushrooms and onion, and put on top of pork.
- In a bowl put in cream of mushroom soup with same amount of water, stir, and pour on top of meat, potatoes, and vegetables. Sprinkle paprika and cover with aluminum foil.
- Bake at 350 degrees F for about 1 1/2 hrs. Remove foil, and allow potatoes to brown.
