Copycat Famous Dave's Country-Roasted Chicken on the Char-Broil Big Easy image

I took bone-in split chicken breasts, marinated them overnight and then tossed them into a lit Big Easy until done. The result was tender, juicy, and oh so very flavorful. And nothing could be easier to make.

8 ounces Italian salad dressing
2 tablespoons lemon juice
2 teaspoons kosher salt
2 teaspoons paprika
2 teaspoons lemon pepper
2 teaspoons Mrs. Dash Original Blend seasoning
4 chicken breasts (large bone-in )

Steps:

  • Place the chicken in a large resealable bag or container.
  • Add the Italian dressing and toss to coat.
  • Refrigerate overnight, turning occasionally.
  • Three hours before you are ready to cook, add the lemon juice to the marinating chicken and toss to coat.
  • Combine the ingredients.
  • Fire up your Big Easy. You'll need a Bunk Bed basket (see below) to keep from overcrowding the chicken.
  • Shake any excess marinade from the chicken.
  • Dust with the rub. Use a little or a lot.
  • Place chicken in the Big Easy basket and lower into the cooker.
  • Cook until done and golden brown, about 10 minutes per pound.
  • Remove and let rest 10 minutes before serving.

I haven't made this one yet, but it sounds very good! Prep time does not include 3 hour marinating time.

1/2 cup kosher salt
1/2 cup paprika
1/2 cup lemon pepper
1/2 cup Mrs. Dash seasoning mix
1 (6 lb) roasting chickens
2 (16 ounce) bottles Italian dressing
1 (8 ounce) bottle lemon juice
1/3 cup roast chicken seasoning (above)

Steps:

  • Mix ingredients for chicken seasoning.
  • Store in a covered container.
  • Place the chicken in a 2 gallon sealable plastic bag.
  • Pour a mixture of the Italian dressing and lemon juice over chicken, turning to coat.
  • Marinate in refrigerator for 3 hours, turning every 30 minutes.
  • Remove chicken from bag and drain.
  • Season generously with 1/3 cup Roast Chicken Seasoning.
  • Preheat the oven to 375.
  • Arrange chicken on a rack in a baking pan.
  • Tent loosely with foil.
  • Bake 1 1/2 to 2 hours or until a meat thermometer registers 170 to 180F, removing the tent 20 minutes before the end of baking process.
  • Let stand for 10 minutes before carving.

A very healthy and spicy version, it gets it's heat from the chipotle peppers so if you want it a little hotter just add some more peppers! The first time I made it I used a whole can! While I really enjoy it, my friends were literally sweating!

Number Of Ingredients 14

2 teaspoons olive oil
1 lb skinless chicken breast, cut into 1-inch pieces
2 garlic cloves, minced
1 teaspoon dried oregano
2 chipotle chiles in adobo, minced (7 oz can, use some of the sauce also!)
1 (8 ounce) can diced tomatoes (I prefer using a 16oz can stewed tomatoes)
2 (14 1/2 ounce) cans low sodium chicken broth
1 cup frozen corn
1/2 cup chopped fresh cilantro
tortilla chips
cheese (Colby, pepper jack or mozzarella all work great) (optional)
sour cream (optional)
avocado, sliced (optional)
3 cups short grain white rice (I like rice in all my soups, plus if you make it hotter this will help with the heat!)

Steps:

  • First get some rice cooking if your using some, just follow directions on the package or use a rice cooker like me.
  • 1. Heat oil in a large stockpot over medium-high heat. Add the chicken and garlic and cook for three minutes, until the chicken is browned on all sides, stirring frequently.
  • 2. Add oregano and stir to coat the chicken. Stir in the minced chipotles, tomatoes, broth and corn. Turn heat up to high and bring to a boil. Turn heat down to low, partially cover, and simmer for 10 minutes, until chicken is cooked through.
  • 3. To serve place rice in bowl. Ladle soup on top and add cilantro and chips and any other toppings you desire.

1/2 minced onion
1/2 finely chopped bell pepper
2 Tbsp butter
2 cloves minced garlic
3 chicken tenderloins
Salt and pepper
1/4 cup wing sauce (temperature of choice)
3 Tbsp KRAFT Honey Barbeque Sauce
1 tsp soy sauce

Steps:

  • Saute onions and peppers in butter and garlic for a couple of minutes. Add chicken tenderloins, and salt & pepper.
  • Cook on medium heat until juices run clear.
  • Mix chicken wing sauce, BBQ sauce and soy together in dish; whisk. Put chicken in container with lid closed and shake vigorously until meat is covered. Serve hot with favorite sides.
