DATE NUT TORTE
Whether I serve my torte with coffee at a luncheon or in the evening when friends visit, I always get compliments. My husband (we've been married 42 years), three children and five grandchildren are all good eaters, and it's a joy to prepare this dessert for them, too! Cooking is something I've always enjoyed. I also like sewing, quilting and gardening. My husband and I travel by trailer as often as we can, and we're members, too, of group called "Laborers for Christ" that helps congregations build churches and schools.

Steps:
- In a bowl, beat eggs. Gradually add sugars and beat until well mixed. Combine the flour, baking powder and salt; add to egg mixture and stir until moistened. Stir in nuts and dates. Pour into a greased 8-in. square baking pan., Bake at 350° for 30 minutes. Torte top will be crusty and the inside chewy. Cool. Cut into squares and serve with a dollop of whipped cream.

- In a large bowl, combine the oats, flour, brown sugar, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. A frozen dessert rich nutty and filled with dates and marachino cherries.My bestfriend and I would whip this up for our boyfriends some 30 years ago. The Whipped cream at serving time is a nice festive touch, but the boys just would slice off a piece and gobble it down with a glass of milk.

- Roll graham crackers to fine crumbs.
- Combine marshmallows, dates, nuts and cherries Mix thoroughly with 2 3/4 cups cracker crumbs.
- Add cream (not whipped); mix thoroughly.
- • Shape into roll (about 3 1/2-inches in diameter); roll in remaining crumbs.
- Wrap well in wax paper.
- Chill several hours in refrigerator.

Steps:
- Preheat oven to 400°F.
- Mix together butter and sugar in a mixing bowl until creamy.
- Blend in the egg.
- Sift together the flour, salt and baking soda.
- Add to the wet mixture and blend until stiff.
- Shape dough into 4 logs about 10x3-inches each.
- Place logs on a baking sheet.
- Using the side of your hand, create a narrow well into the top of each log, running all the way across.
- Spread about 1/4 cup of the date filling evenly into each hollow.
- Top the date filling with chopped nuts.
- Bake the logs for 12-15 minutes, or until set and gloden.
- Allow to cool until just warm, then slice the baked dough at an angle into 3/4-inch thick cookies.
- Allow to cool then dust liberally with confectioners sugar.

My mother-in-law always whipped up this old-fashioned dessert at Thanksgiving and Christmas. My husband and I enjoy the chewy dates and sweet thick syrup drizzled on top. It's impossible to resist a second helping.

- In a saucepan, bring 1 cup brown sugar and water to a boil. Cook and stir for 3 minutes. Remove from the heat and add butter; set aside. - Put butter, sugar, dates, and eggs in a heavy bottomed pan. Bring to boil over medium heat, and stir. When it starts to boil, stir constantly (about 10 minutes) until the liquid starts pulling away from the sides of the pan while you are stirring it, then remove from heat.
