Homemade Danish Dessert image

Simple and delicious fruit glaze that can be made quick and easy with a Kool-Aid Packet. You will make this Homemade Danish Dessert recipe again and again.

1 Kool-aid packet (any berry flavor: strawberry, raspberry, cherry)
1 cup granulated sugar
¼ cup corn starch
2 cups cold water
2-4 cups sliced strawberries or fresh raspberries (optional)

Steps:

  • Combine Kool-aid packet, granulated sugar, and cornstarch in a 1 quart sauce pan. Mix well.
  • Add two cups cold water and bring to a boil over medium high heat. Stir constantly.
  • As mixture is getting close to coming to a boil it will begin to slightly thicken.
  • Once mixture is boiling, turn the heat down to medium or medium low and let it continue to boil (stirring constantly) for 1 minute.
  • Remove from heat and allow to cool completely before adding fruit. If you do not plan to add fruit for a cake topping and want to eat it like pudding, pour danish dessert into prepared dishes and let cool.
  • I prefer to let mine cool in the fridge before adding the fruit.

This cake is very refreshing. I make it in the summer. It's the perfect finish to a barbecue or great cake to take to a pot-luck.

18 1/2 ounces white cake mix (you will use a little over half)
1 1/8 cups water
3 egg whites
1/4 cup oil
8 ounces cream cheese
2 cups powdered sugar
1/2 pint whipping cream or 1 (8 ounce) container Cool Whip
4 3/4 ounces junket danish dessert mix
1 pint fresh strawberries or 1 pint fresh raspberry

Steps:

  • Use a little more than half of the cake mix, add water, egg whites and oil. Bake as directed in a 9x13 inch pan. Let cake cool.
  • Mix the powered sugar with the cream cheese together till smooth.
  • Whip the whipping cream and fold into powered sugar and cream cheese mixture.
  • Pour on cooled cake and put in fridge.
  • Cook Danish Dessert according to package directions.
  • When Danish Dessert has cooled add fruit and put on top of cream cheese mixture.

This cake has been a favorite since 1965, when a girl won a baking competition in with her grandmother's secret family recipe.

Yield Serves 10-12

Number Of Ingredients 12

3 eggs
1 cup (225 g) granulated sugar
1⁄2 tsp. vanilla sugar (see note at top)
1¾ cups (225 g) all-purpose flour or cake flour
2 tsp. baking powder
2⁄3 cup (150 ml) whole milk
3⁄4 stick (75 g) butter, melted
1 stick (100 g) butter
1½ cups (150 g) dried shredded coconut
1¼ cups (250 g) dark brown sugar
1⁄3 cup (75 ml) whole milk
Pinch salt

Steps:

  • Preheat the oven to 375°F. Prepare a 9-inch springform or round cake pan, greased and lined with baking parchment.
  • In the bowl of a stand mixer, whisk the eggs, granulated sugar and vanilla sugar on a high speed for a few minutes, until white and light. Meanwhile, in a separate bowl, sift the flour and baking powder together.
  • Carefully fold the flour into the egg mixture. Mix the milk with the melted butter in a jug/pitcher and carefully pour into the batter, folding it in until incorporated. Pour the batter into the prepared cake pan.
  • Bake in the preheated oven for 35-40 minutes, or until almost done (try not to open the oven door for the first 20 minutes of the total baking time).
  • To make the topping, put all the ingredients in a saucepan and gently melt together.
  • Remove the cake from the oven and carefully spread the topping all over the cake. Return to the oven. Turn up the heat to 400°F and bake for a further 5 minutes.
  • Leave cake to cool before eating, if you can (we are well aware it's hard to do that).

1 egg white
1/2 cup sugar
1 (2 1/2 ounce) package blanched slivered almonds, pulverized in a blender
1 tablespoon cornstarch
1 teaspoon almond extract
1 cup semi-sweet chocolate chips (6 ounces)
1/3 cup butter
1 egg
1 teaspoon grated fresh lemon rind
1 teaspoon sugar
1 teaspoon vanilla
12 blanched almonds

Steps:

  • Cover a baking sheet with parchment paper or grease and flour it.
  • Preheat oven to 350°F.
  • In a large bowl, whisk the egg white until foamy; add the sugar, and beat until mixture holds soft peaks.
  • Fold in the pulverized almonds, cornstarch, and almond extract.
  • Spoon into 12 mounds evenly spaced on the prepared baking sheet, allowing plenty of space between them.
  • Bake until top is dry and cakes are a creamy color, about 10 minutes.
  • Remove from sheet and cool on rack.
  • Melt 1/2 cup of the chocolate chips in a small bowl over hot water.
  • Melt the butter in another pan.
  • Whip the egg with the lemon rind, sugar, and vanilla until light and fluffy.
  • Mix the COOLED chocolate and butter together and add the egg mixture.
  • When this has thickened, spread it over the base of the cakes, allowing the mixture to set.
  • Melt the remaining chocolate and pour over the firm chocolate layer.
  • Decorate each cake with an almond.
  • Makes 12 cakes.
