Number Of Ingredients 7

3 medium potatoes, scrubbed and cubed(peeled or unpeeled, your choice)
4 strips bacon
1 big bunch dandelion greens(about six cups, torn)-you could also use another green like chard or kale, or even leaf lettuce if you can't get dandelion greens
2 Tbsp vinegar
2 Tbsp water
2 tsp sugar
salt and pepper to taste

Steps:

  • 1. Boil potatoes in lightly salted water until just tender, 8-10 min. Drain and return to pan, cover and set aside.
  • 2. Fry bacon til crisp, drain on paper towells and crumble. Reserve 2T bacon grease in skillet.
  • 3. To reserved bacon grease add the vinegar, water, sugar, salt and pepper. Whisk and bring to a simmer.
  • 4. Pour the hot dressing over the torn greens in a bowl. Add the potatoes and bacon and lightly toss to coat.

My mom use to make this for my sister and I. At first we thought she was crazy eating weeds, but then we discovered the greatest flavor sensation, and now we can't get enough of it!

1/2 pkg bacon - thick sliced
6-8 large potatoes
1 bunch dandelion or escarole
1/2 c onions, yellow, medium
1/4 c white vinegar or basalmic
1/4 c olive oil, light
3 stalk(s) celery

Steps:

  • 1. Cook bacon so that it's crispy, but not burnt. Peel (optional) and quarter potatoes, and boil until almost soft.
  • 2. Drain bacon on paper towels. Chop your onion and celery, and dandelion. Put into a large bowl, and add salt and pepper.
  • 3. Mix together: potatoes, bacon, dandelion, onion, and celery. Drizzle your vinegar and oil slowly while mixing. If you want more bacon, it only tastes better! NOTE: dandelion should be chopped fairly fine.

1 teaspoon lemon juice
2 cups torn dandelion greens or arugula
2 green onions or 1 medium leek (white portion only), thinly sliced
2 hard-boiled large eggs, sliced
1/2 cup grapefruit or tangerine sections
Dandelion blossoms, optional

Steps:

  • In a small bowl, whisk oil and lemon juice. In a large bowl, combine dandelion greens and onions. Drizzle with dressing; toss to coat., Arrange eggs and grapefruit sections over greens. If desired, top with dandelion blossoms.

2 tablespoon red wine vinegar
5 tablespoons good quality olive oil
1 level teaspoon salt
1 level teaspoon freshly ground black pepper
1 heaping tablespoon chopped fresh marjoram
1 heaping tablespoon chopped fresh basil
1 heaping tablespoon chopped fresh parsley
3 tablespoons finely chopped shallots
2 tablespoons lemon juice
5 tablespoons good quality olive oil
1 level teaspoon salt
1 level teaspoon freshly ground black pepper

Steps:

  • Start with about 1pound of potatoes (it's important to use evenly sized new potatoes, and you can either scrape them or peel them). Cook the potatoes in boiling, salted water. Try to cook these perfectly so that they just fall off the blade of a knife when you stick it into the potato (you don't want the potatoes raw but you certainly don't want them falling apart either). As soon as the potatoes are cooked, drain them and put them into a bowl. It is very important to add your dressing at this stage, while the potatoes are still steaming hot (by allowing them to cool down in the dressing the flavors penetrate the potatoes). Here are 3 dressings that I like to use:
  • Potato salad with salsa verde: All you do is dress the potatoes with 2 large tablespoonfuls of salsa verde.
  • Potato Salad with olive oil, lemon and dill: Use olive oil and lemon juice dressing and add some roughly chopped fresh dill and a little salt and freshly ground black pepper. (Instead of dill you could try fresh mint, fresh parsley or fennel tops -- they'll all work).
  • Potato salad with dandelion and shallot: Again, use olive oil and lemon juice dressing, add some thoroughly washed and roughly chopped dandelion leaves and some finely chopped shallot, and season to taste with salt and freshly ground black pepper.
  • Mix together all the ingredients, adding the shallots last.
  • Yield: 4 servings

  • MARJORAM AND BALSAMIC VINEGAR DRESSING: 2 tablespoons balsamic vinegar (just 1 tablespoon may be enough if it is a very good vinegar) 5 tablespoons good quality olive oil 1 teaspoon freshly ground black pepper 3 heaping tablespoons chopped fresh marjoram
  • Mix together all the ingredients.
  • Yield: 4 servings

Dandelions are a healthy, wonderful way to ring in the spring. You can find dandelion greens in the store but fresh picked are the best. Make sure to get them early in the spring for the most tender greens! Yes, the little flower buds are edible.

5 pounds white potatoes, peeled and cubed
3 tablespoons butter
salt and pepper, to taste
1 pound bacon, diced
1 pound torn dandelion greens
1 medium onion, diced
1 egg, lightly beaten
½ cup white vinegar
1 tablespoon white sugar
1 tablespoon all-purpose flour

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, toss with butter, and season with salt and pepper.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove the bacon and drain on paper towels. Set aside the pan with the bacon grease.
  • In a large bowl gently toss together the dandelion greens and onion.
  • In a small bowl, whisk together the egg, vinegar, and sugar. Season with salt and pepper. Stir the egg mixture into the skillet with the warm bacon grease. Mix in the diced bacon and flour, and whisk for about 1 minute, until thickened to the consistency of salad dressing. Pour at once over the dandelions and toss to coat. Serve the greens over the potatoes.
