1 can (15 ounces) solid-pack pumpkin
1 can (14 ounces) fat-free sweetened condensed milk
1/2 cup egg substitute
1/2 teaspoon salt
1/2 teaspoon each ground ginger, cinnamon and nutmeg
1 unbaked pastry shell (9 inches)

Steps:

  • In a large bowl, beat the pumpkin, condensed milk, egg substitute and seasonings just until smooth. Pour into pastry shell., Bake at 425° for 15 minutes. Reduce heat to 350°; bake 25-30 minutes longer or until a knife inserted in the center comes out clean. Cool completely on a wire rack. Store in the refrigerator.

I developed this recipe because I am lactose intolerant and am always looking for dairy-free recipes. It also happens to be low cholesterol, low fat, and high flavor! What's not to love? I call it pumpkin spice pie because I like a lot more spice in my pie than the average recipe calls for. Happy baking (and eating)!

1 pastry for single-crust pie
1 (15 ounce) can pumpkin puree
½ cup rice milk
6 large egg whites
¾ cup packed brown sugar
3 tablespoons molasses
4 teaspoons canola oil
1 tablespoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 10-inch pie plate with pie crust.
  • Combine pumpkin puree, rice milk, egg whites, sugar, molasses, oil, cinnamon, cloves, vanilla extract, salt, and nutmeg in a large mixing bowl. Beat until blended using a hand mixer or whisk. Pour filling into the pie crust.
  • Bake in the preheated oven until the middle is set, 50 to 60 minutes.

1.5 (12 ounce) packages Mori-Nu extra firm lite tofu
2 cups canned pumpkin or 2 cups cooked pumpkin
2/3 cup honey or 2/3 cup maple syrup
1 teaspoon vanilla
1 tablespoon pumpkin pie spice (or 1 1/2 teaspoons ground cinnamon, 3/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/4 teas)
1 unbaked 9-inch pie crust

Steps:

  • Preheat oven to 350F degrees.
  • Blend tofu in a food processor or blender until smooth.
  • Add remaining ingredients and blend well.
  • Pour into an 8-inch unbaked deep dish pie shell.
  • Bake for approximately one hour.
  • Filling will be soft, but will form up as it chills.
  • Chill and serve.
  • Makes 1 9-inch pie.
  • Variation, Pumpkin Creme Pie:For a creamier version, blend one package Mori-Nu Lite tofu, ex-firm, 4 tablespoons water, 2 packages Mori-Nu Mates Vanilla Pudding Mix, 2 cups pumpkin, and spices.
  • Follow directions as above.

1 deep dish pie shell (unbaked)
1/3 cup pasteurized liquid egg-whites
2/3 cup Splenda sugar substitute
1 dash salt
1 (15 ounce) can pumpkin
1 teaspoon cinnamon
1/2 teaspoon ginger
1 (12 ounce) can fat-free evaporated milk

Steps:

  • Preheat oven to 425°F.
  • In a large bowl mix egg whites, splenda & salt.
  • Add the Pumpkin to egg mixture, along with the Cinnamon & Ginger.
  • Mix til well blended. (I use a whisk).
  • Add FF Evap Milk. Blend well.
  • Pour into unbaked pie shell.
  • Bake at 425 for 15 minutes
  • Reduce heat to 350 & bake for an additional 35 minutes.

⅓ cup white sugar
1 large egg
2 tablespoons molasses

1 teaspoon ground nutmeg
1 teaspoon salt

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Grease a 9-inch pie pan and line with gingersnap cookies (should be 12 to 14 cookies).
  • Whisk pumpkin, almond milk, sugar, egg, molasses, cornstarch, cinnamon, ginger, nutmeg, and salt together in a bowl; carefully pour over cookies.
  • Bake in the preheated oven for 15 minutes. Turn heat down to 350 degrees F (175 degrees C) and continue to bake until set, 30 to 35 minutes. Let cool to room temperature before cutting.

1 ⅓ cups all-purpose flour
¾ teaspoon salt, divided
½ cup vegetable shortening
3 tablespoons Almond Breeze Vanilla almondmilk, or more as needed
1 (15 ounce) can pumpkin puree
¾ cup honey
⅔ cup Almond Breeze Vanilla almondmilk
4 eggs
1 teaspoon pumpkin pie spice

Steps:

  • Heat oven to 400 degrees F.
  • In medium bowl, mix flour and 1/4 teaspoon salt. With pastry blender or 2 knives, cut shortening into flour until texture is crumbly. Sprinkle 3 tablespoons of the almondmilk over mixture and mix with fork until mixture comes together in a ball. If necessary, sprinkle a little more almondmilk over the mixture.
  • Sprinkle a little flour over a 12-inch square of waxed paper. Place ball of dough in center; pat into disc. Sprinkle with flour and top with another square of waxed paper. Roll very thinly into 12-inch circle. Remove top piece of waxed paper and turn crust upside down over a 9-inch deep-dish pie plate. Fit into pie plate and remove waxed paper. Crimp edges.
  • To make the filling, beat the rest of the ingredients and remaining 1/2 teaspoon salt with electric mixer on low speed in a large bowl until well-mixed. Pour into crust.
  • Bake 50 to 55 minutes or until knife inserted 1 inch from edge comes out clean. Cover edges of crust with strips of foil to keep from over-browning, if necessary. Cool completely, about 2 hours. Store in refrigerator.
