Spanish Arroz con Pollo Recipe (Spanish Chicken and Rice Recipe) image

1 1/2-3 pounds of frying chicken pieces
1/4 cup cooking oil
30 ounces chicken broth
1 chopped bell pepper
1/4 teaspoon saffron
3 cloves crushed garlic
2 cups uncooked rice
1 14 ounce can diced tomatoes
1 large diced onion
1/2 teaspoon cumin
green olives with pimentos
salt and pepper

Steps:

  • Begin by sprinkling chicken pieces with salt and pepper. Then brown them in a large skillet in the oil.
  • Once chicken pieces are browned, remove them from the skillet and place them on paper towels to drain.
  • Meanwhile, cook onions, peppers, garlic, and rice in the oil until oil is absorbed and the rice is coated.
  • After that, stir in the broth, cumin, saffron, and tomatoes.
  • Arrange chicken pieces on top of the rice and bring to a boil.
  • When liquids are boiling, lower the heat, and cover the pan.
  • Simmer for about 40 minutes or until chicken is cooked and rice is tender.
  • Garnish with olives to serve.

This recipe is so quick and is so very simple! It is perfect for making in a recreational vehicle (RV) galley for a quick, delicious dinner on the road and on the go! Andale, pues!

1 (6.8 ounce) package Spanish-style rice mix
1 tablespoon butter
2 cups hot water
1 skinless, boneless chicken breast half - cut into cubes
1 cup salsa
1 (14.5 ounce) can diced tomatoes with green chile peppers

Steps:

  • In a large skillet over medium heat prepare rice according to package directions, using the butter/margarine to brown the vermicelli and rice to a golden brown. Add the water, chicken, salsa and tomatoes and bring all to a boil. Cover skillet, reduce heat and let simmer for approximately 25 to 30 minutes, or until all liquid is absorbed.

chicken parts, rinsed, skin on, bone in
1/2 cup butter
10 3/4 ounces cream of mushroom soup
10 3/4 ounces cream of chicken soup
19 3/4 ounces cream of celery soup
4 ounces sliced mushrooms
1 1/4 cups Minute Rice

Steps:

  • melt butter in large sauce pan, add soups and mushrooms. Remove 1 cup of this mixture.
  • Add minute rice to sauce pan and pour this into 9x13 inch casserole. Place chicken pieces on top of rice mixture. Distribute the reserved sauce mixture on top of chicken.
  • Bake at 275 for 3 hours. You may have to plot off excess fat from chicken skin.
  • Because it cooks so long you should leave skin on for cooking and remove after cooking.
  • This helps to retain moisture.

Chicken parts, your choice
1/2 brown onion, diced
2 green onions, sliced
1/2 gold bell pepper, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 large tomato, diced
6 yellow chili peppers, seeded and sliced
1 tsp chili pepper juice
Garlic salt to taste
Black pepper to taste
Water
1 cup rice, uncooked
1 can tomato sauce or paste

Steps:

  • Best prepared with chicken parts (of your choice). Put chicken in a roasting pan with everything but rice and tomato sauce or paste. Put enough water in pan barely covering the top of the chicken.
  • Let chicken cook for 1 hour at 350°F covered.
  • Add rice and tomato sauce or paste and cook for 30 minutes more covered.
