Yummy 'home-style' fried potatoes. Chunky and flavorful fried potatoes with onion, green pepper and parsley.

4 red potatoes
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
2 tablespoons olive oil
1 teaspoon salt
¾ teaspoon paprika
¼ teaspoon ground black pepper
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
  • In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.
  • Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high. Add potato cubes, salt, paprika and black pepper. Cook, stirring occasionally, until potatoes are browned; about 10 minutes. Stir in the onions, green peppers and parsley and cook for another minute. Serve hot.

This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

4 gold potatoes, sliced 1/4 inch thick
4 tablespoons butter
salt
pepper

Steps:

  • Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
  • Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
  • Add salt and pepper sometime during frying time, to taste.

Yummy fried potatoes with the flavor of Kentucky. Easy to make while camping or at home. Leftovers store great in the fridge for a microwave breakfast on the go. For an East Coast twist, add diced green pepper.

2 tablespoons bacon drippings
4 large potatoes, peeled and sliced
½ Vidalia onion, chopped
salt and pepper to taste

Steps:

  • Heat the bacon drippings in a large skillet over medium heat. Add potatoes and onion, and stir to coat. Cook, stirring occasionally, until potatoes are tender and golden brown, about 15 minutes. Season with salt and pepper, and serve.

This is one of my favorite 'cheap meal' recipes that I learned from my Southern cookin' Dad. Creamy hamburger gravy with just the right blend of spices is perfect served over homemade biscuits, mashed potatoes, rice, fried potatoes.. just about anything!

2 pounds lean ground beef
½ onion, finely chopped
5 cups milk
2 tablespoons chicken bouillon granules
2 tablespoons butter or margarine
1 teaspoon ground sage
salt and pepper to taste
½ cup all-purpose flour

Steps:

  • Crumble the ground beef into a large deep skillet over medium-high heat. Cook and stir until evenly browned. Drain most of the grease, leaving just enough to coat the pan. Add the onions, and cook for a few more minutes.
  • Pour 4 cups of the milk into the pan, and stir to scrape up any bits of food that could burn on the bottom of the pan. Mix in the bouillon, butter, sage, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring frequently.
  • Mix the flour into the last cup of milk until smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour. Taste and adjust seasonings before serving.

Dad's Favourite Fried Potato Slices image

This is really my Dad's recipe which he taught me to make here in Orlando, FL - USA! We were too tired to cook anything fancy, so this seemed to be what dad wanted to eat with Potato Bread from Walgreens and some Heinz Tomato Ketchup on the side. I am amazed at how simple this recipe is and yet, how nice it tastes! In my opinion, this is the best thing you can make quickly when guests topple in all of a sudden. I also feel this makes for a nice picnic snack. This is a popular appetiser too in India! Enjoy!

1 potato, washed,peeled and sliced in thin concentric circles
water, as required
salt, as required
oil, to deep fry
1 1/2 cups gram flour (known as "besan" in Hindi)
1 cup water
1 teaspoon red chili powder
1 teaspoon salt
1/4 teaspoon baking soda
2 tablespoons chopped fresh coriander leaves

Steps:

  • Wash, peel and slice a medium-sized potato into thin concentric circles.
  • Make sure you slice the potato thin and not thick.
  • Pour 2 1/2 cups of water in a bowl.
  • Add salt to taste (2-3 tsps) and mix well.
  • Add the potato slices to this salted water.
  • Mix well.
  • Keep aside for 10 minutes.
  • In a medium sized bowl, make a thick batter with your besan flour, red chilli powder, baking soda, salt and 1 cup of water.
  • Now drain out the water from the potato slices.
  • Dip the slices of potato in the gramflour batter.
  • Allow the slices to be coated with the batter on both sides.
  • Heat oil in a frying pan while you are doing this.
  • Once the oil is hot, and the slices are ready, drop them gently into the oil.
  • I ALWAYS make it a point to lower the flame/heat when adding the slices of potato to the hot oil.
  • I dont want ANY MORE spillovers or kitchen fires!
  • Let the slices fry in the oil.
  • Once the slices are golden brown on one side, turn over and allow them to fry the same way till they are golden brown on the other side.
  • Remove from the pan once fried and drain the excess oil on a clean paper kitchen towel.
  • Transfer to a serving plate.
  • Serve immediately (HOT) with Tomato ketchup and white/potato bread.
  • You can also serve this with green chutney.
  • Enjoy!
  • NOTE: The secret of making this very well is to slice the potato thin and not thick.
  • If you slice the potato thick, then, the potato will not cook and remain raw even once fried!

1 can (14.5 oz) sliced new potatoes
1 Tbsp olive oil
Pinch each cayenne pepper, dried basil, dried oregano, dried parsley*
Dash salt and pepper
1 Tbsp minced garlic
1 tsp dried minced onion, soaked in 1 tsp. water for 10 minutes

Steps:

  • Preheat nonstick skillet over Med-High heat. Drain potatoes, pat dry as much as you can without breaking up potato slices.
  • Add oil to skillet. Add dried spices, salt, and pepper. Saute garlic and onions in oil for 30 seconds or so, and then add potatoes.
  • Fry potatoes, flipping occasionally for 15-20 minutes or until browned and crispy on edges.
