Creamy easy bean dip, made in just minutes!

1 16-ounce can of refried beans (any kind, but pinto is most common)
4 ounces cream cheese, softened
1/2 cup sour cream
2 tablespoons taco seasoning
1 4-ounce can of green chiles
1 cup of shredded cheddar cheese, divided
pico de gallo, for serving
Tortilla chips, for serving

Steps:

  • Preheat the oven to 350-degrees Fahrenheit, and ensure your cream cheese and sour cream are softened.
  • In a large bowl, combine the refried beans, softened cream cheese, sour cream, taco seasoning, green chiles and half of the shredded cheese.
  • Using an electric mixer, beat the mixture together until smooth and creamy, about 1 minute. Spread the mixture into an 8x8" baking dish.
  • Sprinkle the remaining cheddar on top. Bake the bean dip for 20 minutes, or until the edges start to barely bubble.
  • Let cool slightly, and then spread store-bought pico de gallo on top before serving with tortilla chips.

MY "THE MARGUERIE" BEAN DIP FOR DAD



My

The Marguerie was an upscale restaurant in Ipswich Massachussettes and was done in a beautiful big Victorian age house. I first went there at age 8 and before seated, guests sat in a cozy area where this bean dip and crackers were provided. It burned down when I was a child. Years later in my 20s when I had left home he asked me one holiday if I had a recipe or could find one for this dip. No was the answer. So I set to work re-creating the taste I remembered as a child. Dad adored it, so did we all. I had hit it perfectly and now it just isn't Christmas without this dip. You can scale this recipe down though it is an excellent keeper in the fridge. This is a zippy though not hot dip, dad doesn't "do hot." You can certainly play with the amounts to suit you. I thought this would be far too "mayonnaisey" and it isn't. 3 cups mayonnaise
3 tablespoons prepared horseradish, in a jar
3 -4 tablespoons sweet pickle relish, green
1 small onion, finely chopped
1 teaspoon dry mustard
2 (16 ounce) cans red kidney beans, drained and rinsed
salt
pepper

Steps:

  • Cook time is sitting time! Make sure you have rinsed your beans and allowed to dry of all excess water. At times I have mashed a few beans and we all preferred all of the beans left whole. Use prepared horseradish, not horseradish sauce.
  • Mix together all but the beans in a large bowl. Salt and pepper to taste.
  • Stir in the beans.
  • Allow to sit overnight in fridge for flavors to develop and adjust seasonings prior to serving.
  • We love this best on a Triscuit Cracker and have tried it on humdreds of crackers!

I created this very meaty layered bean dip for my then boyfriend who is now my husband, years ago. He loves meat in everything, so I recreated an old recipe that I had, by adding additional seasoning and lean ground beef, and it has been a family favorite ever since. This is a very filling appetizer. Great for hearty eaters.

2 can(s) 16 oz. refried beans
1 can(s) 2.2 oz sliced black olives
1 1/2 cup(s) mild salsa
2 cup(s) shredded cheddar cheese, (mild or sharp)
2 cup(s) shredded monterey jack cheese
2 pound(s) ground round
2 package(s) taco seasoning mix
- sliced green onions
- sour cream
- tortilla chips
2 teaspoon(s) ground cumin

Steps:

  • Preheat oven to 350 degrees F. Mix taco seasoning and cumin with ground round and saute' in a large skillet. Drain excess fat.
  • Spread one can of refried beans in bottom of a buttered glass dish 9X13X2. Top with half the olives, half the salsa, half the cheese, and half of the meat mixture. Repeat layers with remaining ingredients.
  • Bake in preheated 350 degree F oven for 30 to 35 minutes. or until heated through and cheese is bubbly. Garnish with chopped green onions. Serve with sour cream & tortilla chips while still hot.
  • This recipe has been family approved for almost 20 years.

400g can cannellini beans , rinsed and drained
400g can chickpeas , rinsed and drained
juice 2 lemons , zest 1
2 garlic cloves , crushed
2 tsp ground cumin
100ml Greek yogurt

Steps:

  • Put half the beans and chickpeas into a food processor with the lemon juice, garlic, cumin and yogurt, then whizz until smooth. Tip in the rest of the beans and pulse once to get a very chunky dip. Stir in the lemon zest and plenty of seasoning, then divide between 4 containers and store in the fridge.
