Yummy Dessert. Fresh peaches are best, but you can use canned.

1 cup white sugar
⅓ cup butter
⅓ cup all-purpose flour
1 egg
1 teaspoon vanilla extract
3 cups fresh peaches - pitted, skinned, and sliced
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Line a 9 inch pie pan with crust. Place peaches in the unbaked pie shell.
  • Cream together the sugar and butter or margarine. Add the egg, flour, and vanilla; mix together completely. Spread this mixture over the top of the peaches.
  • Bake at 300 degrees F (150 degrees C) for 1 hour.

This is not your everyday peach pie! The amount of sugar stated will give you a semi-sweet pie if you like a sweeter filling then add in more sugar. Prep time does not include making the pie pastry. Although I have only made this using peaches you might want to give it a try using apples ;-) Serve this topped with vanilla ice cream

3/4 cup sugar
1 tablespoon vanilla
1/3 cup butter
1/3 cup flour
1 large egg
5 -6 cups fresh peaches (skinned and sliced)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 prepared pie pastry (to fit a 9 or 10-inch deep dish pie plate)
1 small egg, beaten

Steps:

  • Line a 9 or 10-inch deep-dish pie plate with prepared pastry.
  • Brush beaten egg over the bottom and around the sides of the inside of the pastry (this will prevent a soggy crust).
  • Toss the peaches with cinnamon and nutmeg, then place the sliced peaches onto the crust.
  • In a bowl using an electric mixer cream butter with sugar and vanilla until fluffy.
  • Add in egg and flour; beat until combined, then spread the mixture over the top of the peaches.
  • Place the pie dish onto a a large piece of heavy-duty foil or onto a baking sheet (to catch any spills).
  • Set oven rack to bottom position.
  • Bake at 375°F for 1 hour.
  • Let sit at room temperature for a minimum of 30 minutes or more before slicing.

2 cups flour
1/4 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/2 cup butter
1 egg white, beaten
5 medium freestone peaches
3/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 egg yolks, beaten
2/3 cup heavy cream

Steps:

  • Crust: Combine flour, baking powder, salt and sugar in a bowl.
  • Cut in butter until mixture resembles coarse crumbs.
  • Pat evenly on sides and bottom of a 10" pie pan.
  • Brush bottom of crust with beaten egg white and chill while you fix the filling.
  • Method for filling: Peel, halve and pit peaches.
  • Arrange cut side up in crust. Combine sugar and spices and sprinkle evenly over fruit. Bake at 400°F for 15 minutes.
  • Blend egg yolks with cream; pour over fruit, letting some of the mixture run into the center of the peaches.
  • Continue baking until filling is set, about 30 minutes.
  • Cool at least 1 hour before serving.
  • NOTE: If you don't have a 10" pie pan use a 8" square pan.
  • And if you aren't counting calories serve topped with vanilla ice cream.

1/2 Perfect Pie Dough (1 disk), recipe follows
3 cups peeled, pitted, and sliced peaches
1/2 cup brown sugar
2 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon fresh lemon juice
Flour, for dusting
1 tablespoon cold unsalted butter, cut into pieces
1 large egg, lightly beaten
2 teaspoons sugar (recommended: turbinado)
Vanilla bean ice cream or fresh whipped cream, for garnish
1 1/2 cups flour
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, cut into small pieces, chilled or frozen
4 to 6 tablespoons ice cold water

Steps:

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper or foil.
  • Stir together the peaches, brown sugar, flour, cinnamon, nutmeg, and lemon juice in a large bowl until combined.
  • On a well-floured surface, using a lightly floured rolling pin, roll out the pie dough into a large circle, about 12 to 14 inches in diameter. Move the dough circle to the prepared baking sheet. Chill the rolled-out dough in the refrigerator until firm, about 15 minutes. Spoon the fruit mixture onto the center of the dough leaving a 1-inch border. Fold the edges of the dough over the fruit, pleating the dough, then dot the fruit filling with the butter pieces. Lightly brush the dough with the beaten egg, and sprinkle with sugar.
  • Bake the pie until the crust is golden brown and the filling is bubbling, 25 to 30 minutes. Cover if the crust browns too quickly. Allow the pie to cool slightly. Serve warm with vanilla bean ice cream or alongside fresh whipped cream.
  • In a mixing bowl, mix together the flour and the salt; cut or work the butter into the flour with your fingers or with a pastry blender until you have large pea-size chunks scattered throughout. Alternatively, pulse the dough in a food processor, or mix in a stand mixer with the paddle attachment on low speed.
  • Add the ice water slowly while stirring with a fork, or in the food processor or mixer, until just combined. Be careful not to overwork the dough. Divide the dough into 2 disks, flatten and refrigerate each for at least 15 minutes.

For the crust:
3 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
3/4 teaspoon salt
2 sticks cold unsalted butter, cut into small pieces
For the filling:
4 pounds peaches, peeled and cut into wedges
3/4 cup plus 1 tablespoon sugar
1/4 cup all-purpose flour
1 tablespoon fresh lemon juice
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
2 tablespoons unsalted butter, cut into small pieces
1 large egg

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add the butter and pulse until the mixture looks like coarse meal with pea-size bits of butter. Add 1/2 cup ice water and pulse until the dough just starts to come together. Divide the dough between 2 pieces of plastic wrap and form each into a disk; wrap tightly and refrigerate until firm, at least 1 hour.
  • Make the filling: Toss the peaches in a bowl with 3/4 cup sugar, the flour, lemon juice and spices.
  • Lightly dust a large piece of parchment paper with flour. Roll out 1 piece of the dough into a 12-inch round on the parchment. Ease the dough into a 9-inch pie plate. Add the filling, mounding it slightly in the center; dot with the butter and refrigerate. Roll out the second piece of dough into a 12-inch round and cut it into 1/2-inch-wide strips. Lay half of the strips on the pie in one direction, leaving about 1 inch of space between each strip. Lay the remaining strips on top, crossing them diagonally to make a lattice pattern (no need to weave); trim the edges of the strips, leaving a small overhang. Fold the overhanging dough under itself and crimp the edge of the crust with your fingers.
  • Beat the egg with 1 tablespoon water and brush on the crust edge and lattice top. Sprinkle with the remaining 1 tablespoon sugar and refrigerate until firm, about 30 minutes.
  • Position a rack in the lower third of the oven. Put a baking sheet on the rack and preheat to 425 degrees F. Put the pie on the hot baking sheet and bake 20 minutes. Reduce the oven temperature to 375 degrees F and continue baking until the pie is golden and the filling is bubbly, 50 minutes to 1 hour. (Cover loosely with foil if the top is browning too quickly.) Transfer to a rack to cool completely before slicing.

¼ teaspoon ground nutmeg
6 fresh peaches - pitted, skinned, and sliced
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Cream sugar and butter or margarine together. Add flour and nutmeg; mix until mealy. Spread 1/2 of mixture in pie crust. Arrange peaches on top of crumb mixture. Sprinkle remaining crumb mixture on top of peaches.
  • Bake at 450 degrees F (230 degrees C) for ten minutes. Reduce heat to 350 degrees F (175 degrees C). Continue baking for 40 minutes, or until brown.

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. 1/2 teaspoon fine salt
1 tablespoon granulated sugar
1 cup (2 sticks) cold unsalted butter, cut into small pieces
3 pounds peaches, halved, pitted, and cut into 1/2-inch slices (8 cups)
2 tablespoons light-brown sugar
2 tablespoons all-purpose flour
2/3 cup packed light-brown sugar
2/3 cup all-purpose flour (spooned and leveled)
2/3 cup old-fashioned rolled oats
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces

Steps:

  • Make crust: In a food processor, pulse flour, salt, and granulated sugar until combined. Add butter; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Sprinkle with 6 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons ice water, 1 tablespoon at a time); do not overmix. Form two disks with dough, wrap tightly in plastic, and refrigerate until firm, at least 1 hour (or up to overnight).
  • Preheat oven to 375 degrees with rack in the bottom of the oven. Lightly flour a rolling pin and work surface and roll out one disk of dough to a 12-inch round. Make crumble: In a small bowl, combine brown sugar, flour, and oats; using your hands or a pastry cutter, work in butter until large clumps form.
  • Transfer peach filling to pie shell, then sprinkle crumble evenly over top. Place pie on a rimmed baking sheet and bake until juices are bubbling and topping is golden, 1 hour 30 minutes to 1 hour 45 minutes. Let cool on a wire rack 1 1/2 hours before serving.
