PERFECT POT ROAST

Perfect Pot Roast image

Feed your family with Ree Drummond's Perfect Pot Roast recipe from Food Network. Fresh rosemary and thyme add rich, herbal resonance to this hearty roast.

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 4h30m

Yield 6 servings

Number Of Ingredients 9

Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

1 tablespoon ground coriander
1 tablespoon ground cumin
1 large onion, roughly chopped
2 large carrots, peeled, roughly chopped
6 cloves garlic
3 large slices ginger
4 whole Thai bird chiles
2 cups dry red wine
1 cup sweet soy sauce (kechap manis)
1/2 cup dark soy sauce
3 sprigs fresh thyme
1 to 2 quarts water to cover
1/2 cup chopped scallions
1/2 cup cilantro
Salt and black pepper to taste
Canola oil to cook
1/2 to 2/3 cup lard or duck fat/vegetable shortening
1 teaspoon baking powder
2 cups masa harina
1 teaspoon ginger powder
2/3 cup water plus extra
2 teaspoons salt
Corn husks, soaked and/or banana leaves
2 tablespoons butter
2 sweet potatoes*, fine 1/8-inch dice
2 minced shallots
Salt and black pepper to taste
1/2 cup white wine
1/2 cup chicken or vegetable stock

Steps:

  • Mix chile powder, coriander and cumin. Season the ribs with salt and pepper and rub the spice mix all over. On a hot, oiled grill, grill the ribs until all sides are well browned. Meanwhile, in a medium stock pot, coat with oil and brown onions, carrots, garlic, ginger and chiles. Deglaze with wine and reduce by 50 percent. Add back the ribs, soy sauces, thyme and water to cover. Check for seasoning. The flavor of the liquid will be the ultimate flavor of the ribs. Bring to a boil and simmer for 2 1/2 to 3 hours, until meat is tender and falling off of the bone. Remove ribs from liquid. Strain liquid and reduce by 20 percent. Return ribs to sauce, keep hot and add scallions and cilantro
  • Use a mixer fitted with a paddle at high speed and beat lard with baking powder until fluffy. While still beating, add masa and ginger powder gradually. Slowly add the water and salt. Final consistency should be of soft cake batter and shape should hold a spoon. Test: float a teaspoon of the mix in water. Fold in sweet potatoes*. Fold tamales like usual, and place in a bamboo steamer. Steam until coo
  • In a non-stick skillet melt butter and saute the potatoes, shallots and season. Deglaze with wine and reduce completely. Add a little of the stock at a time, waiting for it to be fully absorbed before adding more. Cook until tender-firm. Check for

BEEF RIBEYE ROAST (BONELESS PRIME RIB)

Beef Ribeye Roast (Boneless Prime Rib) image

This Beef Ribeye Roast recipe is a super easy-to-make Holiday Prime Rib! Juicy & perfectly tender, with a simple no-fail Au Jus gravy!

Provided by Chrissie

Categories     Main Dish

Time 2h

Number Of Ingredients 16

6 pound boneless beef ribeye roast
1/2 cup unsalted butter (at room temperature)
1 teaspoon salt
1 teaspoon freshly cracked black pepper
2 teaspoons fresh sage (finely chopped)
2 teaspoons fresh thyme (finely chopped)
1 teaspoons fresh parsley (finely chopped)
1 teaspoons fresh rosemary (finely chopped)
5 cloves garlic (finely minced)
beef drippings ((skim off some fat, if desired))
1 teaspoon worcestershire sauce
1/4 cup red wine ((optional))
2 tablespoons all purpose flour
2 cups low sodium beef stock ((or broth))
salt and pepper ((to taste))
1 tablespoon butter ((optional))

Steps:

  • Preheat your oven to 425 degrees Fahrenheit.
  • Place your beef ribeye roast in a large roasting pan on a rack. Using a rack makes for even cooking. If you don't have one, use a regular baking dish or cast iron pan. Be sure your roast is at room temperature (let it sit out at room temperature for about 1-2 hours before cooking).
  • Combine the unsalted butter, salt, pepper, herbs and garlic in a small bowl until well combined.
  • Pat the beef roast dry on all sides with some kitchen paper towel and rub the butter mixture all over the roast, making sure to coat all sides.
  • Place the roast in the oven at 425 degrees and set the timer for 15 minutes.
  • After 15 minutes, turn the oven temperature down to 350 degrees Fahrenheit and roast for about 50 minutes to 1 hour and 20 minutes. Check the internal temperature after about 50 minutes. Remove the roast as soon as the internal temperature reaches 120 degrees Fahrenheit (48 Celsius) for medium rare.
  • Once you remove the roast from the oven, use the rack to remove the roast from the roasting pan and let it sit on a cutting board for about 15 minutes before slicing. Loosely tent some foil over the top to keep it warm.
  • Place the roasting pan on the stovetop over medium heat and use a whisk to scrape any bits off the bottom of the pan. Feel free to skim the fat off the top of the beef drippings before placing it over the heat, but if you're making this recipe for a holiday dinner leaving the fat in the drippings will make the au jus nice and rich.
  • Add the wine and Worcestershire sauce to the drippings and whisk them together.
  • Add the flour to the beef stock and whisk to combine. Pour the stock mixture into the pan with the drippings and continue whisking the mixture, until it thickens just slightly.
  • Taste, and season with salt and pepper to your tastes.
  • Place a fine mesh strainer over a bowl and strain the au jus to remove any impurities.
  • If you wish, add a tablespoon of butter to the strained au jus and stir it in to the sauce as it melts.
  • Slice the beef ribeye roast into thick slices (a 6-pound roast should serve 6-8 people generously) and serve with the au jus gravy and your favourite side dishes.

SPICED BEEF ROAST

Spiced Beef Roast image

Provided by Food Network

Categories     main-dish

Time 3h43m

Yield 4 to 6 servings

Number Of Ingredients 15

1 tablespoon ground allspice
2 teaspoons ground mace
1 teaspoon ground cloves
1 tablespoon ground black pepper
2 tablespoons sliced garlic
10 sprigs fresh thyme
350 ml (1/2 bottle) red wine
8 pounds rolled rib-eye roast, trussed
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 large carrots, roughly chopped
2 medium onions, roughly chopped
1 head garlic, peeled and smashed
2 celery stalks, roughly chopped
6 sprigs fresh thyme

Steps:

  • Mix all the marinade ingredients together in a strong plastic bag. Put the roast into the bag and seal tightly. Marinate in the refrigerator for 2 days turning the bag at least 2 times a day.
  • Remove roast from the marinade, and let sit at room temperature for 1 hour before browning.
  • Preheat oven to 275 degrees F.
  • Heat oil in a large dutch oven over high heat. Pat the roast dry of excess marinade. Season the roast with salt and pepper, and sear on all sides until golden brown.
  • Remove the roast to a dish. Heat the oil in the pan and saute the carrots, onions, garlic, celery, and thyme. Add the red wine and any left over marinade to the vegetables, and bring it to a simmer. Scrape up any bits in the bottom of the pot.
  • Place the roast back into the pot. Cover the pot with a heavy lid and bake, half the total cooking time with the lid on, and half without. Allow 20 minutes per pound of meat, or until internal temperature reaches 145 degrees F, about 2 hours.
  • Add water to pot if it looks like its drying out too fast. Remove the roast to a platter, and let rest for 15 minutes before carving. Strain the gravy from the pot and put in a sauceboat.

ROAST BEEF SIRLOIN & BéARNAISE DAUPHINOISE

Roast beef sirloin & béarnaise dauphinoise image

Wow guests with an intensely flavoursome, peppered sirloin joint. Serve alongside our potatoes dauphinoise, enriched with tarragon, shallots and gruyère

Provided by Esther Clark

Categories     Dinner, Lunch, Main course

Time 2h20m

Number Of Ingredients 21

2kg boneless beef sirloin , tied
2 tbsp olive oil
½ tbsp black peppercorns
½ tbsp sea salt
1 large garlic bulb
450g baby carrots , halved
200g watercress
5 tbsp olive oil
2 tbsp cider vinegar
1 tbsp Dijon mustard
½ tsp caster sugar
40g unsalted butter , plus extra for the dish
3 banana shallots , finely chopped
70ml white wine vinegar
500ml double cream
500ml whole milk
3 large garlic cloves , bashed
small bunch of tarragon , leaves finely chopped, stalks reserved
1 large egg yolk (freeze the white for another recipe)
1½ kg King Edward potatoes , thinly sliced
70g gruyère , grated

Steps:

  • Leave the beef at room temperature for 1 hr before cooking. For the dauphinoise, heat the butter in a saucepan over a medium heat. Once foaming, add the shallots and a pinch of salt and fry for 10 mins or until softened. Add the vinegar and reduce it by half, then pour in the cream and milk. Tip in the garlic and tarragon stalks and bring to a simmer. Take off the heat and set aside to infuse for 30 mins.
  • Tip the mixture into a bowl, scoop out the garlic and tarragon stalks, and discard. Whisk through most of the chopped tarragon, the egg yolk and some seasoning. Mix the potato slices through the infused cream until they are fully coated, then arrange in overlapping layers in a buttered 30cm round dish. Pour over any remaining liquid, scatter with the gruyère and set aside.
  • Heat the oven to 220C/200C fan/gas 7. Heat the olive oil in a large non-stick pan over a high heat. Add the beef and fry for 5-7 mins, on all sides, until the fat is golden brown. Remove and put in a roasting tin. Bash the peppercorns and salt together with a pestle and mortar, and rub this over the fatty parts of the meat. Cut the garlic bulb in half through the cloves, then add to the tin.
  • Turn the oven down to 180C/160C fan/gas 4. Put the beef in the oven to cook for 55 mins-1 hr 5 mins (for medium-rare). Put the dauphinoise on the lower shelf to cook for the same amount of time, then add the carrots to the roasting tin for the last 25 mins. A cooking thermometer should read 55C when the beef is cooked. Cover with foil and leave to rest for 25 mins.
  • Make the dressing by whisking all the ingredients together with some seasoning, then toss with the watercress. Serve the beef thinly sliced with the dauphinoise, carrots, the roasted garlic and the lightly dressed watercress leaves.
