WILD MUSHROOM RAVIOLI

Mushroom Filling, recipe follows
16 wonton wrappers
Salt
2 ounces olive oil
4 ounces mushrooms of your choice, sliced
1-ounce minced garlic
2 ounces Scotch whiskey
16 ounces chicken broth
2 ounces whole butter
4 ounces smoked salmon, cut into 1/2-inch by 1 1/2-inch pieces
2 teaspoons chopped fresh dill
4 tablespoons green onions, cut on the bias
2 teaspoons capers, drained
4 ounces whole butter
3 ounces shallots, peeled and minced
1 tablespoon minced garlic
2 ounces oyster mushrooms, minced
5 ounces portobello mushrooms, minced
8 ounces button mushrooms, minced
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh parsley leaves
3 ounces dry vermouth
2 ounces chicken demi-glace (or 4 ounces chicken broth, reduced by 1/2)
1 teaspoon porcini mushroom powder
2 tablespoons sliced green onions
2 ounces panko bread crumbs
3 tablespoons ricotta cheese
3 ounces your favorite cheese or any combination

Steps:

  • Place 1 heaping teaspoon of mushroom filling in the center of 1 wonton wrapper. Wet the edges of the wonton with a little warm water. Place another wonton wrapper on top and press to seal the edges. Using a fork, crimp around the edges, if desired.
  • Bring a large pot of boiling salted water to a boil. Cook ravioli in boiling water until they rise to the surface and are al dente. Drain.
  • Heat oil in a large saute pan over medium-high heat. Saute mushrooms until soft, then add garlic and continue to cook for 30 seconds. Pull the pan from the heat, add scotch, and return the pan to the burner. Cook until Scotch is evaporated. Add ravioli, chicken broth, butter, and smoked salmon and reduce slightly, until the sauce has body. Dish into 4 bowls and sprinkle with dill, green onions, and capers on top of each bowl of pasta.
  • Melt the butter in a heavy large saute pan over medium heat. Add the shallots and garlic and saute for 2 minutes, being careful not to burn the garlic. Add the mushrooms and leave alone to caramelize, not disturbing the mushrooms while they cook. (The more the mushrooms are stirred, the more moisture will be released.) When the mushrooms are well browned, add in the thyme and parsley. Deglaze with vermouth and cook until the liquid has evaporated. Add chicken demi-glace and reduce until dry. Toss in the porcini powder, green onions, and panko, and pull pan from the heat. Transfer to a sheet pan and let cool, uncovered. When cool, fold in the cheeses and refrigerate, covered, in a tight container until ready to use.

1 cup water
1/2 ounce dried porcini mushrooms
1/4 cup finely chopped onion
1-1/2 cups sliced fresh shiitake mushrooms
3 teaspoons butter, divided
2 ounces reduced-fat cream cheese
1/4 teaspoon salt
1/8 teaspoon pepper
32 wonton wrappers
2 cups sliced fresh button mushrooms
2 garlic cloves, minced
1 cup Italian tomato sauce
2 tablespoons shredded Parmesan cheese
2 tablespoons minced fresh parsley

Steps:

  • In a small saucepan, combine water and porcini mushrooms. Bring to a boil. Remove from the heat; let stand for 30 minutes. Drain, reserving liquid. Finely chop mushrooms; set aside., In a small nonstick skillet, saute onion and shiitake mushrooms in 2 teaspoons butter until tender. Add porcini mushrooms and 1/4 cup soaking liquid. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until liquid has evaporated. Remove from the heat. Stir in the cream cheese, salt and pepper. Cool to room temperature., Spoon about 2 teaspoons of mushroom mixture in the center of a wonton wrapper. (Keep wrappers covered with a damp paper towel until ready to use.) Moisten edges with water, being sure to moisten wrapper all the way to the filling. Top with another wonton wrapper, pressing down around filling to seal. Trim about 1/4 in. from edges if desired. Repeat with remaining wrappers. , Bring a large saucepan or Dutch oven of water to a boil. Add ravioli. Reduce heat to a gentle simmer; cook for 1-2 minutes or until ravioli float to the top and are tender. Drain and keep warm., In a small saucepan, saute button mushrooms and garlic in remaining butter. Add tomato sauce; heat through. Serve over ravioli. Sprinkle with Parmesan cheese and parsley.

1/4 cup sliced shiitake mushroom
1/4 cup sliced oyster mushroom
1/2 cup sliced cremini mushroom (baby portabella)
1/2 cup sliced white button mushrooms
2 garlic cloves, sliced
1/4 cup butter
1/4 teaspoon fresh ground black pepper
1/8 teaspoon sea salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 cup beef broth
1 tablespoon olive oil
1 cup ricotta cheese
1/4 cup parmesan cheese
1/2 cup of coarsely chopped mixed mushrooms
3 cups unbleached white flour
1/2 teaspoon salt
2 eggs
1/2 cup water

Steps:

  • THE FILLING.
  • Melt butter in pan.
  • Add olive oil to melted butter.
  • Add mushrooms.
  • Let mushrooms sweat until they release their juices.
  • Add pepper, salt, and onion/garlic powder.
  • Add 1/8 cup beef broth and let mixture reduce.
  • Once reduced, remove from heat and let cool.
  • Add cheeses to blender/food processor.
  • Add cooled mushroom mixture to cheese.
  • Blend together until smooth.
  • Add more broth if mixture is too thick.
  • Remove mixture to bowl stir in 1/2 cup of mixed mushrooms.
  • Set aside.
  • THE DOUGH: Sift flour and salt together.
  • Place flour mixture on a board, making a well in the center of the flour.
  • Drop eggs into the flour well, using your hand or a fork, break the yolks and beat eggs slightly.
  • Combine the eggs and flour together, gradually adding enough warm water to make a stiff dough.
  • Knead dough well, until smooth; cover the dough and let it rest for 15 minutes.
  • Cut dough in half and roll each half of the dough out on a floured board, into a very thin sheet (about 1/16 to 1/8 inch thick).
  • FILLING THE RAVIOLI: Drop about 1 to 1 1/2 teaspoonfuls of filling about 1 1/2 inches apart all along the dough.
  • When the sheet of dough is fully dotted with dabs of filling mixture, cover filling with other sheet of dough.
  • Using your fingers, gently press dough between each dab of filling to seal it.
  • Cut ravioli into squares with a pastry cutter, or very sharp knife.
  • DRYING THE RAVIOLI: Allow ravioli to dry for one hour before cooking.
  • COOKING THE RAVIOLI: Drop ravioli into 6 to 8 quarts of boiling, salted water and cook for about 10 to 15 minutes, or until dough is tender.
  • Remove cooked ravioli from pot carefully with a skimmer or a large slotted spoon, and drain well.
  • Serve hot and enjoy with your favorite cream sauce.

I was looking for a different filling for my ravioli other than the typical cheese filling. After looking through several fillings, I created this one. It made enough for 9 dozen 2 in x 2 in ravioli.

1 yellow onion
16 ounces white button mushrooms
16 ounces cremini mushrooms
3 garlic cloves
2 tablespoons butter
2 tablespoons extra virgin olive oil
1 tablespoon dried thyme
1 1/2 tablespoons dried oregano
1 teaspoon salt (to taste)
1 teaspoon ground black pepper (to taste)
3 tablespoons all-purpose flour
4 tablespoons heavy cream (40% milk fat)
4 ounces mascarpone
2 tablespoons fresh Italian parsley

Steps:

  • Chop onion.
  • Chop both mushrooms finely (1/4 to 1/8 in).
  • Mince garlic.
  • In a large pan, melt the butter with the oil, add chopped onion, and cook until it is a deep golden brown.
  • Add minced garlic, and cook until fragrant (about 1 minute) then add the chopped mushrooms, thyme, oregano, salt, and pepper. Cook until mushrooms release their liquid and are tender.
  • With a slotted spoon, remove about 1/4 of the mushroom mixture and set aside. Pour the contents of the pan into a blender or food processor, and blend until smooth. Return the blended mushroom mixture back to the pan and add the 1/4 you set aside.
  • In a small cup, mix together the flour and heavy cream until smooth and rather pasty and add it to the mushroom mixture in the pan. Add the mascarpone and stir to incorporate both the flour-cream mixture and the mascarpone until mostly disappeared.
  • Turn heat to medium, and cook stirring constantly until it starts to bubble. It should begin to thicken shortly after it starts bubbling. You are looking for a fairly thick consistency similar to pate or chocolate mousse.
  • If it doesn't seem thick enough add a bit more flour-cream mixture (in a 1-to-1 ratio of flour to cream). You don't want your filling too watery or your dough will get soggy.
  • Once it is thick enough, turn off heat, stir in chopped italian parsley, and set aside to cool completely.
  • To fill ravioli, I recommend using a piping bag with a #12 or #2A tip. I used a smaller one and the chunks of mushroom got stuck in mine. About 1 TBSP filling per ravioli.

1 teaspoon olive oil
1 teaspoon butter

1 teaspoon cornstarch
1/2 cup 1% low-fat milk
1 tablespoon all-purpose flour
2 tablespoons grated fresh parmesan cheese

Steps:

  • To prepare ravioli, place mushrooms in food processor; pulse 10 times or until finely chopped.
  • Heat oil and butter in a large nonstick skillet over medium-high heat. Add shallots and garlic, and sauté for 2 minutes.
  • Add mushrooms and 1/8 teaspoon salt; cook 5 minutes or until moisture evaporates, stirring occasionally.
  • Working with 1 wonton wrapper at a time (cover remaining wrappers with a damp towel to keep them from drying), spoon about 2 teaspoons mushroom mixture into center of each wrapper.
  • Moisten edges of dough with water; bring 2 opposite corners together. Pinch edges together to seal, forming a triangle.
  • Place ravioli on a large baking sheet sprinkled with cornstarch.
  • To prepare sauce, combine milk and flour in a small saucepan over medium-low heat; stir with a whisk.
  • Cook 4 minutes or until slightly thickened, stirring frequently. Remove from heat; stir in cheese, 1 tablespoon chives, 1/8 teaspoon salt, and pepper. Set aside; keep warm.
  • Cook ravioli in boiling water 2 minutes or until tender. Drain. Serve with sauce. Garnish with fresh chives, if desired.

  • Bring a large pot of water to a boil. Add ravioli. Reduce heat to gentle simmer and cook 1-2 minutes until ravioli float to the top and are tender.
  • Top with pasta sauce, parmesan and parsley.

6 tablespoons butter, divided
1 (8 ounce) package fresh mushrooms, finely chopped
1 ½ cups vegetable broth
3 cloves garlic, minced
3 stalks scallions, chopped

Steps:

  • Heat 2 tablespoons butter in a saucepan over medium heat. Add mushrooms, vegetable broth, garlic, scallions, sage, dill, thyme, and parsley and cook until reduced, about 10 minutes. Separate liquid from mushrooms with a spoon and reserve-this will be your sauce later. The consistency should be thin, and the color should be dark.
  • Spoon a small amount of mushroom filling onto one wonton. Take another and seal the two using a fork, wetting the edges with water if necessary. Repeat with remaining wrappers and filling.
  • Heat remaining butter in a pan over medium to medium-high heat. Add ravioli and saute until lightly browned, about 5 minutes. Drizzle sauce on top and serve.

I made a few alterations to Cyn's Wild Mushroom Ravioli, which are AWESOME. I decided to post mine too!

2 cups mushrooms, sliced
1/4 cup butter
1 shallot, chopped
2 garlic cloves, minced
1/4 teaspoon black pepper
1/4 teaspoon sea salt
1/8 cup white wine
1/2 cup ricotta cheese
1/2 cup grated mozzarella cheese
2 tablespoons grated parmesan cheese
1 package wonton wrapper
water
cornmeal
1 cup cream or 1 cup half-and-half
1/2 cup parmesan cheese
1/2 teaspoon garlic powder
salt and pepper

Steps:

  • Saute shallot and mushrooms in butter.
  • Add garlic, white wine, salt and pepper and reduce for a couple of minutes.
  • Cool and add cheeses.
  • Pulse a few times in food processer.
  • Wet edges of one wonton wrapper.
  • Put a spoonful of filling in center and top with another wonton wrapper. If you need alot, make a triangle with one wrapper and you will end up with about 50 ravioli.
  • Press edges together, trying not to allow any air to remain inside ravioli. I sometimes cut with a 3" round cookie cutter, or you can leave it square.
  • Place on tray sprinkled with corn meal and allow to dry for an hour before dropping in boiling salted water.
  • When ravioli floats it is done. Takes about 3 minutes.
  • In the meantime, Heat up Alfredo Sauce ingredients until cheese melts. I also add any remaining mushroom filling to sauce.
  • Serve and enjoy.

  • To make the pasta dough, put the flour in a bowl with 1 tsp of fine sea salt and make a well in the middle. Break in the eggs and add the yolks, then whisk gently with a fork, gradually bringing in more flour from the edges as you do.
  • To make the filling, heat the olive oil in a non-stick frying pan over a medium-high heat and tip in the mushrooms along with a pinch of salt. Fry for 10 minutes until all of the moisture has evaporated and the mushrooms are beginning to caramelise.
  • Cut the pasta dough into two equal pieces and run both through a pasta machine, starting on the widest setting. Run the dough through twice on each setting until you reach the second-to-last setting.
  • Spoon egg-yolk-sized rounds of the filling onto two of the pasta sheets, leaving a 5-6cm gap between each – you should get six ravioli on each pasta sheet.
  • Lift the other two sheets of pasta over the filled pasta sheets and gently press around the fillings to seal, trying to expel any air inside as you do.
  • Melt the butter in a non-stick frying pan over a medium-high heat until it is smelling nutty and has darkened. Cook the mushrooms for a few minutes until starting to caramelise, then remove from the heat and keep warm.
  • Cook the pasta in a large pan of boiling salted water for 2-3 minutes from fresh or 4-5 minutes if frozen. Drain well, then divide between four plates.
