1 tablespoon butter
1 pound boneless skinless chicken breasts, cut into strips
1 package (16 ounces) frozen vegetable blend of your choice
1-1/4 cups water
1 package (5.7 ounces) curry-flavored couscous mix
1/2 cup raisins

Steps:

  • In a cast-iron or other heavy skillet, heat butter over medium-high heat. Add chicken; cook and stir until no longer pink., Add vegetable blend, water and contents of couscous seasoning packet. Bring to a boil; stir in couscous and raisins. Remove from heat; let stand, covered, until water is absorbed, about 5 minutes. Fluff with a fork.

1 tablespoon vegetable oil
1 medium red bell pepper, cut into thin strips
1/4 cup vegetable or chicken broth
1 tablespoon curry powder
1 teaspoon salt
1 bag (1 lb) frozen broccoli, carrots and cauliflower (or other combination)
1/2 cup raisins
1/3 cup chutney
2 cups hot cooked couscous or rice
1/4 cup chopped peanuts

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Cook bell pepper in oil 4 to 5 minutes, stirring frequently, until tender.
  • Stir in broth, curry powder, salt and vegetables. Heat to boiling. Boil about 4 minutes, stirring frequently, until vegetables are crisp-tender.
  • Stir in raisins and chutney. Serve over couscous. Sprinkle with peanuts.

1 ½ cups couscous
3 cups chicken stock
1 tablespoon curry powder
2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons extra-virgin olive oil
½ cup raisins
1 bunch cilantro, chopped
½ cup slivered almonds, toasted

Steps:

  • Pour couscous into a bowl. Mix chicken stock, curry powder, salt, pepper, olive oil, and raisins in a saucepan and bring to a boil; remove from heat. Pour the boiling liquid over the couscous. Seal the bowl with plastic wrap and allow to sit for 10 minutes. Fluff couscous with a fork. Top with cilantro and almonds.

Clams come from the ocean, so they have a natural salinity; chorizo is salted as well, so it's not necessary to add any salt to this easy parchment packet meal. The juices created during cooking season the kale and beans perfectly, while a splash of wine adds a bright burst to round out the flavors.

1/4 cup extra-virgin olive oil
1 clove garlic, finely grated
1 teaspoon smoked paprika
5 ounces curly kale, stems removed, leaves thinly sliced (about 3 tightly-packed cups)
One 15-ounce can no-salt cannellini beans, drained and rinsed
1 ounce Spanish-style chorizo, papery skin peeled, sliced into thin half-moons (about 1/4 cup)
32 littleneck clams, scrubbed
1/4 cup dry sherry or dry white wine
2 tablespoons chopped fresh parsley leaves, for serving

Steps:

  • Position 2 racks in the upper and lower thirds of the oven and preheat to 400 degrees F. Combine the olive oil, garlic, and smoked paprika in a small bowl and set aside.
  • Cut four 16-inch long sheets of parchment paper. Fold each sheet in half and open it like a book. Divide the pieces of parchment between 2 baking sheets (2 pieces per sheet).
  • Divide the kale, beans, and chorizo between the four parchment sheets, placing ingredients on one side of the fold. Drizzle with the sherry and garlic-paprika oil. Top each serving with a single layer of 8 clams.
  • Fold over the top half of the parchment, crimping and overlapping small folds along the open edge to seal tightly, leaving enough room for the clams to open up. Bake until the parchment puffs and the clams open, 15 to 20 minutes. (To tell if the clams are open, gently press the top of the puffed pack with a large spoon and feel the shells; if they give, and are springy, they are open.)
  • Carefully slide each pack off the tray and into individual serving bowls. Taking care to avoid the hot steam, cut open one end of the pack and let the contents slide into the bowl. Sprinkle with parsley and serve immediately.

Season chicken tenders with this Asian-inspired marinade. When you cook them in parchment paper with snow peas and shiitake mushrooms, you seal the flavor and moisture inside without added fat and calories.

8 chicken tenders, about 1 pound
Kosher salt
5 tablespoons low-sodium soy sauce
1 tablespoon toasted sesame oil
2 teaspoons rice vinegar
2 teaspoon sambal or chili-garlic sauce
4 scallions, thinly sliced, greens and whites kept separately
2 teaspoons finely grated ginger
8 ounces snow peas, trimmed
4 ounces shiitake mushrooms, caps sliced and stems discarded (about 12)
3 cups frozen brown rice
1/2 cup roughly chopped cilantro
2 teaspoons toasted sesame seeds

Steps:

  • Position 2 racks in the upper and lower thirds of the oven and preheat to 400 degrees F. Cut four 16-inch long sheets of parchment paper. Fold each sheet in half and open like a book. Divide the pieces of parchment between 2 baking sheets (2 pieces per sheet).
  • Trim away the tendon attached to the thicker part of the tenderloin with kitchen shears and discard. Sprinkle the chicken all over with 3/4 teaspoon salt.
  • Combine the soy sauce, sesame oil, rice vinegar, sambal, scallion whites, ginger, and 1 tablespoon water in a small bowl. Place snow peas and shiitakes in a medium bowl and toss with 2 tablespoons of the soy sauce mixture.
  • Mound 3/4 cup brown rice on each parchment sheet, placing it on one side of the fold, and drizzle with 1 tablespoon water. Top with the vegetables, and two chicken tenders per serving, tucking as many of the vegetables as possible under the chicken. Spoon about 2 teaspoons of the soy sauce mixture evenly over each serving of chicken. (You should have some left over for drizzling later.)
  • Fold over the top half of the parchment, crimping and overlapping small folds along the open edge to seal tightly. Bake until the parchment puffs, 18 minutes; chicken will be cooked through. Transfer the packets to plates and let stand 2 minutes. Avoiding the hot steam, carefully cut open the packets. Drizzle remaining soy sauce mixture over the chicken and rice. Top with scallion greens, cilantro, and sesame seeds.

2 tablespoons chopped fresh basil leaves
Kosher salt and freshly ground black pepper
1 1/2 cups fresh or frozen corn kernels (thawed if frozen)
8 ounces thin green beans, trimmed and cut into 1-inch pieces on the bias
4 skinless cod fillets (6 ounces each)
2 tablespoons unsalted butter, cut into small pieces
2 tablespoons dry white wine

Steps:

  • Position 2 racks in the upper and lower thirds of the oven and preheat to 400 degrees F.
  • Combine the tomatoes, capers, 3 tablespoons of the olive oil, lemon zest and juice, shallot, basil, 1/2 teaspoon salt, and a few grinds of black pepper in a medium bowl. Set aside to let the flavors develop.
  • Cut four 16-inch long sheets of parchment paper. Fold each sheet in half and open it like a book. Divide the pieces of parchment between 2 baking sheets (2 pieces per sheet).
  • Toss the corn and green beans with the remaining tablespoon of olive oil, 1/2 teaspoon salt, and a few grinds of black pepper in a bowl. Divide between the 4 parchment sheets, mounding the mixture on one side of the fold. Sprinkle each cod fillet with 1/4 teaspoon salt and place on top of a vegetable mound. Dot with butter and drizzle with wine.
  • Fold over the top half of the parchment, crimping and overlapping small folds along the open edge to seal tightly. Bake until the parchment puffs, about 15 minutes; the fish will be tender and cooked through. Transfer the packs to plates. Avoiding the hot steam, carefully cut open the pack. Spoon the reserved tomato-basil salsa with juices over each fillet and serve immediately.
