SATAY SWEET POTATO CURRY



Satay sweet potato curry image

Cook this tasty vegan curry for an exotic yet easy family dinner. With spinach and sweet potato, it boasts two of your five-a-day and it's under 400 calories

1 tbsp coconut oil
1 onion, chopped
2 garlic cloves, grated
thumb-sized piece ginger, grated
3 tbsp Thai red curry paste (check the label to make sure it's vegetarian/ vegan)
1 tbsp smooth peanut butter
500g sweet potato, peeled and cut into chunks
400ml can coconut milk
200g bag spinach
1 lime, juiced
cooked rice, to serve (optional)
dry roasted peanuts, to serve (optional)

Steps:

  • Melt 1 tbsp coconut oil in a saucepan over a medium heat and soften 1 chopped onion for 5 mins. Add 2 grated garlic cloves and a grated thumb-sized piece of ginger, and cook for 1 min until fragrant.
  • Stir in 3 tbsp Thai red curry paste, 1 tbsp smooth peanut butter and 500g sweet potato, peeled and cut into chunks, then add 400ml coconut milk and 200ml water.
  • Bring to the boil, turn down the heat and simmer, uncovered, for 25-30 mins or until the sweet potato is soft.
  • Stir through 200g spinach and the juice of 1 lime, and season well. Serve with cooked rice, and if you want some crunch, sprinkle over a few dry roasted peanuts.

Tanzanian Curried Spinach With Peanut Butter image

The original recipe came from the Africhef recipe website, however I make it just a little bit different. This can be served as a side dish, or over rice as a main dish!

2 lbs fresh spinach leaves
1 tablespoon peanut butter
1 large tomatoes
1 medium onion, chopped
2 teaspoons curry powder
1 (8 ounce) can coconut milk
4 tablespoons butter, 1/2 stick
1 teaspoon salt, less if desired
fresh coarse ground black pepper

Steps:

  • Wash the spinach leaves, stack and roll leaves together, then coarsely chop.
  • Place the tomato carefully into a small pot of boiling water for 30 seconds, peel skin off. Slice tomato in half and scoop out runny inside, discard this part, then coarsely chop the fleshy part.
  • In small bowl, whisk the peanut butter and coconut milk til smooth.
  • Heat the butter over medium low heat in large frying pan.
  • Add the onion, tomato, salt and curry powder and sauté for about 5 minutes, or until the onion is soft. Stir only occasionally so that you don't break up the tomato too much.
  • Add the spinach, and continue cooking for about 10 minutes, until the spinach is softened, but not overly cooked.
  • Stir in the peanut butter/coconut milk mixture.
  • Simmer, over medium-low heat, for about another 5-8 minutes, stirring constantly, to make sure that the mixture doesn't stick to the bottom of the pot.
  • Season lightly with a little coarse ground pepper to taste.
  • Serve as is as a side dish, or over hot cooked rice for a main dish.

2 lbs spinach
1 1/2 ounces peanut butter
1 tomatoes
1 onion
2 teaspoons curry powder (or paste, your favourite blend!)
1 cup coconut milk
3 tablespoons ghee or 3 tablespoons butter
1 teaspoon salt

Steps:

  • Wash the spinach & roughly chop. De-skin the tomato, peel and chop. Peel and chop the onion.
  • Mix the peanut butter with the coconut milk in a jug & set aside.
  • Heat the ghee . butter over a medium heat in a large frying pan. Add the onion, tomato, salt and curry powder / paste and sauté for 5 minutes, or until the onion becomes soft.
  • Add the spinach, continue cooking for about 15 to 20 minutes, until the spinach is cooked.
  • Pour the peanut butter and coconut milk mixture into the pan & stir gently to mix.
  • Simmer, for another 5 minutes, stirring constantly, to ensure that the mixture does not stick to the pot.
  • This dish makes a lovely side dish, & can also be eaten with rice, ugali or samp and beans to form a delicious main course.

This recipe is from Tanzania. It takes very little time and is really fantastic. Even better the second day for lunch. I added ½ a brick of firm tofu and served it over quinoa, but it would also be good over basmati rice or noodles.

  • Chop the veggies.
  • Mix the peanut butter with the coconut milk.
  • Heat oil in a skillet and sauté the veggies with the salt and curry powder for about 5 minutes or until the onion is softened.
  • Add spinach and cook for 15 minutes longer.
  • Add peanut butter and coconut milk.
  • Simmer for 5 minutes until heated through.
  • Serve over rice.

I decided to not follow any specific recipe from any particular country or culture, but instead I made a simple composite of every peanut curry I've ever come across. I didn't use coconut milk, as I feel that's a little too sweet and rich for the peanut butter. I loved how this came out, and I can't imagine it being any richer.

1 tablespoon kosher salt, plus more to taste
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon paprika
½ teaspoon cayenne pepper
2 ½ pounds skinless, boneless chicken thighs, cut into 2-inch pieces
2 tablespoons vegetable oil
1 large yellow onion, chopped
6 cloves garlic, minced
1 tablespoon finely grated fresh ginger
3 ½ cups chicken broth, or to taste
¾ cup unsweetened natural peanut butter
½ cup ketchup
1 tablespoon packed brown sugar
1 pound zucchini, cut into chunks
1 red bell pepper, cut into chunks
1 green poblano pepper, diced
2 cups hot cooked rice
1 lime, for garnish
½ cup roasted peanuts, plus more for garnish
3 tablespoons chopped fresh cilantro, for garnish

Steps:

  • Mix salt, coriander, cumin, turmeric, paprika, and cayenne pepper together in a small bowl.
  • Place chicken pieces in a separate bowl and add 1/2 of the spice blend. Mix together thoroughly to coat each surface with spice blend.
  • Heat oil over high heat in a heavy pot. Brown half of the chicken pieces on all sides. Transfer to a bowl. Repeat with the rest of the chicken.
  • Reduce heat to medium and add onion to pot. Saute until onions start to turn translucent and golden, 1 or 2 minutes. Add garlic and ginger; cook about 1 minute. Stir in remaining spice blend; cook and stir one minute. Pour in chicken broth. Add browned chicken along with accumulated juices. Stir in peanut butter and ketchup; add brown sugar. Bring to a simmer and reduce heat to maintain a gentle, steady simmer. Simmer, stirring occasionally, about 30 minutes.
  • Transfer zucchini, red bell pepper, poblano pepper, and peanuts to the pot. Stir to mix. Continue simmering until chicken and vegetables are fork tender, 30 to 40 minutes. Remove from heat.
  • Serve over rice with a squeeze of lime and a sprinkle of peanuts and chopped cilantro.

This creamy soup makes the most of a few supermarket staples: red curry paste, coconut milk and peanut butter. Since curry pastes vary in heat and salt, be sure to taste this soup at the end and adjust the flavor as you like. The rich soup is quite thick, so if you prefer a looser soup, stir in a little extra water until it reaches your ideal consistency. Chile-lime flavored peanuts, available at some grocery stores, are particularly good for topping, but roasted salted peanuts also work beautifully. Find the slow-cooker version of this recipe here.

2 tablespoons coconut oil, preferably unrefined virgin
1 large yellow or red onion, chopped
1/2 teaspoon kosher salt, plus more for seasoning
5 large garlic cloves, crushed
1 (4-ounce) jar red curry paste (1/2 cup), plus more to taste
1 tablespoon packed light brown sugar, plus more to taste
1 teaspoon ground turmeric
2 1/2 pounds sweet potatoes or yams, peeled and cut into 1- to 2-inch pieces
1 (13-ounce) can full-fat coconut milk
3/4 cup smooth natural peanut butter
1 medium bunch baby kale or spinach (6 to 8 ounces), stemmed (if needed) and chopped
Juice of 1 lime, plus more to taste
Pinch of ground cayenne (optional)
Chopped roasted, salted peanuts, for serving

Steps:

  • Using the sauté setting, heat the coconut oil in the pot of a 6- to 8-quart pressure cooker. Add the onion, season with a generous pinch of salt and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the garlic and cook until fragrant, 1 minute. Add the curry paste and stir until combined, 1 minute. Stir in the brown sugar and turmeric, then add the sweet potatoes, 2 1/2 cups water and 1/2 teaspoon salt. Cover and cook on high pressure for 25 minutes.
  • Release the pressure naturally for 10 minutes, then release the remaining pressure manually. Open the lid. Stir thoroughly, allowing some of the sweet potatoes to fall apart and thicken the soup. Add the coconut milk and peanut butter.
  • Using an immersion blender, purée the soup. Add the kale and lime juice and stir to combine. Cook until the greens are wilted and tender, 3 to 5 minutes. Taste the soup and add cayenne, more salt, brown sugar, lime juice or curry paste as desired. Serve in bowls with peanuts on top.

2tbsp vegetable oil
8 skinless boneless chicken thighs, cut into chunks
1 onion, finely chopped
3 garlic cloves, crushed
2 red chillies, finely sliced (deseeded if you don't like it too hot)
2tsp fresh ginger, grated
2tbsp garam masala
100g smooth peanut butter
400ml coconut milk
400g can chopped tomatoes
coriander , ½ roughly chopped, ½ leaves picked
roasted peanuts, to serve
cooked basmati rice, to serve

Steps:

  • Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more.
  • Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through.
  • Serve with the remaining coriander, roasted peanuts and rice, if you like.

1 large chicken , jointed, or 1.5kg bone-in chicken pieces
6 garlic cloves , 2 finely chopped, 4 left whole
3 lemongrass stalks, bashed and roughly chopped
thumb-sized piece of ginger , peeled and finely chopped
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground turmeric
2 limes , juiced
2 red chillies , 1 roughly chopped and 1 sliced to serve (optional)
1 small onion , roughly chopped
2 tbsp vegetable oil
100g smooth peanut butter
4 tbsp kecap manis , or 3 tbsp soy sauce mixed with 1 tbsp light brown soft sugar
400g can coconut milk
a few spring onions , chopped
small handful of coriander , chopped
small handful of roasted peanuts , roughly chopped (optional)

Steps:

  • Put the chicken, chopped garlic, a third of the lemongrass and half the ginger, spices and lime juice in a large bowl. Toss, then cover and leave for 30 mins, or chill for up to 24 hrs. Blitz the whole garlic, the rest of the lemongrass and ginger, remaining spices, chopped chilli, onion and a large splash of water to in a food processor. Set aside.
  • Heat the oil in a pan and brown the chicken all over. Set aside on a plate. Cook the paste for 8-10 mins until it splits. Stir in the peanut butter and kecap manis. When thickened, add the coconut milk and half a can of water, bring to a simmer, season, then add the chicken with its juices. Continue to simmer for 40 mins, stirring often. Turn off the heat, add the rest of the lime juice and season. Leave to rest for 10 mins. Scatter over the sliced chilli, spring onions, fresh coriander and peanuts to serve.
