Grilled Curried Pumpkin Burgers with Cucumber and Mint Raita image

Canned pumpkin holds together a chunky mix of zucchini, peppers and chickpeas; its natural sweetness is the perfect foil for the spice of garam masala and curry powder.

2 Family Size Tea Bags
2 quarts water
Sugar or sweetener, optional
1 cup nonfat Greek yogurt
1 teaspoon lime zest
Pinch cayenne pepper
Kosher salt
2 small Kirby cucumbers, unpeeled, finely diced
2 tablespoons minced fresh mint
6 ounces hearts of romaine leaves
1 cup fresh cilantro leaves
4 tablespoons vegetable oil, plus more for oiling the grill grates
1 cup finely diced yellow onion
2 cups finely diced yellow bell pepper
1 1/2 cups finely diced zucchini
Kosher salt
1 tablespoon curry powder
1 tablespoon garam masala
1/2 teaspoon ground ginger
1 1/2 cups chickpeas, roughly chopped
3/4 cup canned pumpkin puree
1 cup plain breadcrumbs
Freshly ground black pepper
4 hamburger buns
4 lime wedges, for serving

Steps:

  • For the iced tea: Pour 4 cups boiling water over teabags in a heatproof pitcher and allow to brew, 3 to 5 minutes. Remove teabags and add sweetener to taste. Stir in 6 cups ice cubes until melted. Keep refrigerated until ready to use. Makes two quarts.
  • For the raita: Whisk the yogurt, lime zest, cayenne and a pinch of salt together in a medium bowl until smooth. Whisk in enough water to make the yogurt barely pourable. Stir the cucumber and mint into the yogurt. Set aside.
  • For the burgers: Preheat a grill for cooking over medium-high heat. Cut the lettuce into thin strips and coarsely chop the cilantro leaves. Toss together in a small bowl and refrigerate until ready to serve.
  • Heat the oil in a medium skillet over medium-high heat. Add the onions and cook, stirring occasionally, until tender and browned, about 4 minutes. Add the bell peppers, zucchini and 1 teaspoon of salt and cook, stirring occasionally, until tender and beginning to brown, 3 to 5 minutes. Add the curry powder, garam masala, and ground ginger and cook, stirring, 1 minute more. Transfer to a plate and refrigerate for about 5 minutes to cool.
  • While the vegetables cool, stir together the chickpeas and pumpkin in a medium bowl. Add the cooled vegetables, breadcrumbs, 1 teaspoon salt and some pepper and stir with a rubber spatula until combined.
  • Divide the mixture into 4 equal portions and form each portion into a patty. Rub oil on the grill grates and place the patties on the grill. Grill 6 minutes on each side, then transfer to a plate.
  • Place a dollop of raita on the bottoms of the buns, then top with a patty, another dollop of the raita, some of the lettuce and cilantro mix and cover with the bun tops. Serve with lime wedges and iced tea.

1 1/4 cups chopped onions
2 tablespoons minced peeled fresh ginger
2 teaspoons coarse kosher salt, divided
2 teaspoons Madras curry powder
1 3/4 lbs ground lamb
3 tablespoons chopped fresh cilantro
1 1/2 teaspoons cracked black pepper, divided
3 medium zucchini, cut lengthwise into 1/4-inch-thick slices (about 12 ounces)
6 green onions, trimmed
1 fresh poblano chile
6 pita breads
1 large tomatoes, thinly sliced

Steps:

  • For raita:
  • Mix yogurt, mint, cilantro, and lime peel in small bowl. Season to taste with coarse salt and pepper. Cover; chill until cold, at least 30 minutes and up to 4 hours.
  • For burgers and vegetables:.
  • Heat 2 tablespoons oil in large skillet over medium heat. Add onion, ginger, and 1/2 teaspoon coarse salt. Sauté until onion is tender, about 8 minutes. Mix in curry powder and stir 30 seconds. Remove from heat. Cool onion mixture to room temperature, at least 15 minutes.
  • Place lamb in large bowl. Add onion mixture, 1 teaspoon coarse salt, cilantro, and 1 teaspoon cracked pepper. Blend mixture gently; shape into six 1/2-inch-thick patties.
  • Prepare barbecue (medium-high heat). Combine zucchini, green onions, and chile in another large bowl. Add 2 tablespoons oil, 1/2 teaspoon coarse salt, and 1/2 teaspoon cracked pepper; toss to coat. Place vegetables and burgers on grill. Cook until grill marks appear, about 4 minutes. Turn vegetables and burgers over. Cook vegetables until tender, about 3 minutes. Cook burgers to desired doneness, about 4 minutes for medium-rare. Cut zucchini and green onions crosswise into 2-inch-long pieces. Cut chile into thin strips.
  • Place breads on plates; top with burgers and tomato slices. Mound vegetables on burgers; spoon dollop of raita over. Fold bread up around burgers and serve with remaining raita.

2 tablespoons diced radish
1 teaspoon diced red onion
1 teaspoon fresh lime juice
For lamb patties
3/4 pound ground lamb
3 tablespoons chopped red onion
1 1/2 tablespoons Major Grey's mango chutney
3 tablespoons chopped fresh coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander seeds
1/8 teaspoon paprika
1 tablespoon vegetable oil

Steps:

  • Make raita:
  • In a small bowl stir together all raita ingredients and season with salt and pepper.
  • Make patties:
  • In a large bowl mix together all patty ingredients except oil until combined well and season with salt and pepper. Form mixture into 4 patties about 1 inch thick. In a large heavy skillet oil over moderately high heat until hot but not smoking and cook patties until just cooked through, about 3 1/2 minutes on each side.
  • Serve lamb patties with raita.

1 teaspoon cumin
1 small white onion, grated
2 tablespoons chopped fresh parsley leaves
1 beaten egg
1/2 teaspoon salt
1/2 teaspoon white pepper
4 pita bread, halves
2 cups plain yogurt
1 tablespoon olive oil
2 teaspoons fresh lemon juice
1/2 English cucumber, grated and squeezed dry
1/4 cup minced white onion
1 clove garlic, minced
3/4 cup chopped of fresh mint
1/2 teaspoon pepper
salt
shredded lettuce
sliced tomatoes
cucumber
onion

Steps:

  • For the mint tzatziki blend the yogurt with the oil and lemon juice.
  • Add the cucumber, onion, garlic, mint, and pepper.
  • Taste and add salt.
  • Cover and refrigerate while preparing the lamb burgers.
  • Preheat grill to medium high.
  • In a large bowl, combine lamb and remaining ingredients.
  • Form into 12 small patties around 3/4 of an inch thick.
  • Place on hot grill and cook 5 minutes on the first side, four on the other.
  • You want the outside nicely browned with a bit of pink remaining in the middle.
  • Serve three each in a pita half with the shredded lettuce, tomato, cucumber and onion.
  • Offer the Minted Tzatziki at the table.
