- Heat oven to 300°F. In large bowl, mix cereals and almonds.
- In microwavable measuring cup, mix butter, brown sugar and juice concentrate. Microwave uncovered on High 30 seconds; stir. Pour over cereal mixture, stirring until evenly coated. Pour into ungreased large roasting pan.
- Bake uncovered 30 minutes, stirring after 15 minutes. Stir in cranberries. Cool completely, about 15 minutes. Store in airtight container.

- In a large bowl, combine the first five ingredients. Place the butter, honey, honey mustard, curry powder and garlic powder in a small microwave-safe bowl. Microwave, uncovered, on high for 1 to 1-1/2 minutes, stirring every 30 seconds or until mixture is smooth. Pour over cereal mixture and toss to coat., Place half of the mixture in a large microwave-safe bowl. Microwave, uncovered, on high for 2-3 minutes, stirring after each minute. Stir in 3/4 cup cranberries. Immediately spread onto waxed paper; cool completely. Repeat with remaining cereal and cranberries. Store in an airtight container.

CRANBERRY-ORANGE CURD
This cranberry-orange curd is not only easy to make, it makes the perfect accompaniment to baked goods and pastries over the holidays. If your prefer a smoother texture, press the cranberry mixture through a fine mesh sieve after blending in the food processor. This makes enough to fill a pint jar.

- Pour orange juice into a measuring cup and add enough water to make 3/4 cup liquid. Pour into a medium saucepan.
- Add orange zest, cranberries, and sugar and bring to a boil over medium-high heat. Reduce heat to medium-low and cook, stirring occasionally, until cranberries have burst, 8 to 10 minutes.
- Pour cranberry mixture into a food processor or blender; blend until smooth, 10 to 20 seconds. Reserve 1/3 cup and return remaining cranberry mixture to saucepan over low heat.
- Whisk egg yolks together in a small bowl. Slowly add reserved cranberry mixture, whisking constantly. Slowly whisk egg-cranberry mixture back into the saucepan and continue whisking for 5 minutes, or until mixture is thickened and the curd coats the back of a metal spoon. Add butter and whisk until melted and fully incorporated.
- Pour into a sterile jar and allow to cool. Curd keeps in the refrigerator for up to 1 week.

CRANBERRY-ORANGE SNACKING CAKE
Use a can of leftover cranberry sauce from Thanksgiving to make the jam swirl topping of this simple cake. It's perfect for breakfast or as an afternoon snack.

- Place an oven rack in the center of the oven and preheat to 350°F. Line a 13x9-inch baking dish with parchment paper, leaving an overhang on 2 long sides.
- Cook butter in a small saucepan over medium heat, stirring often, until it foams, then browns, 5-8 minutes. Remove from heat (it will continue to darken). Set aside to cool slightly.
- Add cranberry sauce to a separate saucepan and smush and stir to break apart. Add orange and lemon juice. Cook over medium heat, stirring frequently (or whisking well if using jellied), until smooth, 2-3 minutes. Set aside to cool slightly.
- In a medium bowl, combine sugar and orange zest; use your fingers to rub the zest into the sugar until fragrant and the sugar is tinted orange. Add flour, salt, baking powder, baking soda, and cardamom to the bowl; whisk to combine.
- In a large bowl, whisk together eggs, yogurt, and vanilla until smooth. Add dry ingredients to the wet and stir to just combine; the mixture will be quite thick, like cobbler batter. Add browned butter, scraping in any browned bits from the bottom of the pot; stir to combine.
- Transfer the batter to the prepared baking dish and spread into a fairly even layer to fill the dish from corner to corner. The batter will be very stiff and not look like enough-this is ok, it will rise big time! Dollop cranberry mixture over the top in big spoonfuls and use a knife to swirl it into the batter. Even if it looks like cranberry is covering most of the top of the cake, it will rise to reveal space between the swirls.
- Bake until risen and golden brown and a cake tester inserted into the center comes out clean, 45 to 50 minutes. Let cool before using parchment overhang to remove from the pan.
CRANBERRY ORANGE CHEX MIX
This is so different from any other Chex mix I've tried and so simple to prepare. A co-worker shared this recipe with us after bringing it to a get-together. We all agreed that it made a great holiday munchie. The dried cranberries gives it a festive touch while the orange juice provides a refreshing citrus flavor. Be sure to use concentrate....not juice!

- Mix cereals and almonds in a large bowl; set aside.
- Microwave butter, brown sugar and orange juice*concentrate* in a 1 cup microwaveable measuring cup, uncovered, on high for 30 seconds; stir.

- Pour into a large roasting pan.

When cooking more than 2 batches at once I increase the bake time to 60 minutes to compensate for the loss of heat from opening the oven door repeatedly

- Preheat Oven to 250 degrees.
- In a large bowl, combine cereals, pretzels, and almonds.
- In a small bowl, combine brown sugar and spices. Stir in melted butter and orange concentrate.
