CHICKEN-CHICKPEA CURRY

4 plum tomatoes, chopped
2 large shallots, halved
1 2-inch piece ginger, peeled
1/2 to 1 jalapeno pepper, seeded
1 teaspoon curry powder
Kosher salt
3 tablespoons vegetable oil
2 15-ounce cans chickpeas, drained and rinsed
2 cups shredded rotisserie chicken (skin removed)
2 cups frozen cut okra or sliced fresh okra
1/4 cup chopped fresh cilantro, plus more for topping
Plain yogurt and naan bread, for serving (optional)

Steps:

  • Pulse 3 chopped tomatoes, the shallots, ginger, jalapeno, curry powder and 1 teaspoon salt in a food processor until smooth. Heat the vegetable oil in a large Dutch oven or pot over medium-high heat. Add the tomato mixture and cook, stirring often, until darkened and paste-like, 10 to 12 minutes (add water as needed if the mixture is sticking).
  • Add 2 1/2 cups water to the pot and bring to a simmer. Add the chickpeas and cook, stirring often, until the sauce thickens slightly, 8 to 10 minutes.
  • Stir in the chicken, okra and cilantro. Cook, stirring gently, until the okra is crisp-tender, 2 to 3 minutes. Divide among bowls and top with yogurt, more cilantro and the remaining chopped tomato. Serve with naan.

2 teaspoons active dry yeast
1 1/4 cup warm water
3 cups all-purpose flour, plus more for dusting
2 teaspoons kosher salt
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon ground turmeric
Cooking spray, for the bowl
5 cups vegetable oil, for frying
2 tablespoons vegetable oil
6 cloves garlic, minced
1 Scotch bonnet or habanero chile, minced (see Cook's Note)
1 yellow onion, chopped
Kosher salt
1 tablespoons Caribbean curry powder
1 teaspoon ground allspice
1 teaspoon ground cumin
1 teaspoon ground nutmeg
1 teaspoon paprika
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 chicken bouillon cube
Two 15-ounce cans chickpeas, drained
2 cups chicken broth or stock
Lime juice, as needed
3 cups sugar
1 cup tamarind paste
5 Scotch bonnet or habanero chiles, stems removed
2 cloves garlic
1 cup white balsamic vinegar

Steps:

  • For the bara (or flatbread): Put the sugar and yeast in a medium bowl. Stir in the warm water and let it sit until bubbles begin to form, about 5 minutes.
  • Stir to combine the flour, salt, cumin, black pepper and turmeric in a medium bowl. Add the water and yeast mixture to the flour and knead, using your hands or a mixer with a dough hook attachment, until the dough is smooth and glossy, about 2 1/2 minutes.
  • Lightly oil a large bowl with cooking spray and place the dough in the bowl. Spray the dough and place plastic wrap directly on top of the dough, then add plastic wrap to the top of the bowl as well. Let the dough sit in a warm draft-free place until doubled in size, about 2 hours.
  • Heat the oil to 350 degrees F in a large Dutch oven or cast-iron skillet. Turn the dough out onto a flour-dusted work surface. Working one at a time and keeping the unused portions covered, flatten a small ball of dough with a rolling pin to the thickness of 2 tortillas, about 4 inches.
  • Working in batches, fry the flattened dough until puffed and golden, about 45 seconds per side. Drain on a paper-towel-lined plate. Transfer the baras to a plate and cover with plastic wrap to steam and keep warm.
  • For the chickpeas: Meanwhile, heat the oil in a large skillet over low heat. Saute the onion, garlic, minced chile and a large pinch of kosher salt, about 10 minutes. Add the curry powder, allspice, cumin, nutmeg, paprika, black pepper, cayenne, bouillon cube, chickpeas and chicken broth. Bring to a simmer and cook until all the liquid has reduced, about 1 hour. Right before serving, season with salt and lime juice to taste.
  • For the tamarind sauce: Add the sugar, tamarind paste and 1 cup water to a small pot over low heat. Warm until the tamarind paste has dissolved into the water, about 5 minutes. Remove and cool.
  • For the pepper sauce: Put the habaneros, garlic, white balsamic vinegar and a pinch of salt in a blender and puree until smooth.
  • For the cilantro sauce: Add the cilantro, white balsamic vinegar, and salt to a blender and puree until smooth.
  • For the garnish: Toss the cucumber and cilantro in a bowl with a pinch of salt.
  • To assemble: Place two baras slightly overlapping on a plate, then top with 2 to 3 spoons of chickpeas. Top with a little tamarind sauce, pepper sauce, cilantro sauce and grated cucumber and cilantro.

DAD'S CURRIED CHICKEN



Dad's Curried Chicken image

This Trinidadian version of curried chicken is an earthy, rich stew of whole chicken pieces in an aromatic, vibrant broth, spiked with hot chile and a traditional herb paste.

1 (4-pound) chicken, cut into 8 pieces, skin removed
1 tablespoon freshly squeezed lime juice
2 tablespoons Green Seasoning
1 teaspoon coarse salt
1 Scotch bonnet pepper or other hot red chili pepper, finely chopped
2 cloves garlic, crushed
¼ cup Trinidad Curry Powder
2 tablespoons canola oil
1 medium onion, chopped
1 cup chicken stock or water
Roti or white rice, for serving

Steps:

  • Place the chicken pieces in a bowl and toss with the lime juice. Drain, rinse the chicken with cold water, and drain again. Remove the chicken from the bowl and pat dry with paper towels.
  • Place the chicken in another bowl with the Green Seasoning, salt, chili pepper, and garlic. Toss well to coat and refrigerate for at least 30 minutes but ideally overnight.
  • Combine the curry powder with just enough water to form a thick paste. Heat the oil in a heavy-bottomed pot. Add the curry paste and onion. Cook, stirring constantly, for 1 to 2 minutes over medium-low heat-do not allow the curry to scorch. Add the chicken pieces and stir well to coat. Add the stock or water, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.
  • Remove the lid and simmer for 5 minutes more over medium-high heat, until the sauce reduces by one-third. Serve with roti or white rice.

This is a great curried chicken recipe from Trinidad recipe that I got from a book called "The Naparima Girls' Highschool Cookbook". It's easy to prepare and very flavorful.

1 (3 lb) whole chickens
1 teaspoon minced garlic
2 tablespoons minced green seasoning (found in most West Indian grocery stores. If unable to find minced thyme and green onion should work)
1 teaspoon salt, to taste
1 teaspoon hot pepper
2 tablespoons vegetable oil
3 -4 tablespoons curry powder
1/2 cup chopped tomato
1/2 cup chopped onion
1/2 cup hot water

Steps:

  • Cut chicken into small pieces and season with garlic, green seasoning, salt and hot pepper.
  • Marinate for 30 minutes or more.
  • Heat oil in an iron pot or skillet.
  • Mix curry powder with 1/4 cup of water until smooth; add to hot oil and cook 2 minutes.
  • Add chicken and stir to coat in curry; cook until all water dries out; stir well (about 10 mins).
  • Add tomatoes and onion; cook for a minute; stir in 1/2 cup hot water.
  • Lower heat to medium; cover and cook until meat is tender; add more water if more sauce is necessary.
  • Adjust salt and hot pepper.

1/4 cup butter, melted
2 garlic cloves, minced
2 teaspoons fresh ginger, minced
1 small onion, diced
2 tablespoons curry powder
2 teaspoons ground cumin
1 teaspoon ground thyme
2 sweet potatoes, scrubbed and diced
1 1/2 cups water
1/2 teaspoon red hot sauce
1/8 teaspoon salt
2 cups cooked chickpeas
1 1/2 lbs boneless skinless chicken breasts, pounded and diced

Steps:

  • Place 2 tablespoons of the butter, plus the garlic, ginger and onion in a deep skillet. Saute for 2 to 3 minutes over medium heat.
  • Add the curry powder, cumin and thyme and saute for another minute.
  • Add the potatoes, water, red hot sauce and salt and cook for about 15 minutes, or until the potatoes are soft but not mushy.
  • Add the chickpeas and cook another 5 to 10 minutes.
  • In a separate skillet, saute 2 tablespoons of the remaining butter and the chicken over medium heat for 5 to 7 minute, or until the chicken is white in the center.
  • Add the vegetable curry mixture and bring to a simmer.
  • Serve hot over rice.
