INDIAN CURRIED CHICKEN THIGHS

Serve these delicious curried chicken thighs with warm naan bread and jasmine or basmati rice.

4 skinless, boneless chicken thighs, cubed
salt and pepper to taste
5 tablespoons curry powder
1 teaspoon paprika
¾ teaspoon ground cinnamon
¾ teaspoon ground ginger
½ teaspoon ground turmeric
1 small onion, chopped
2 cloves garlic, minced
1 bay leaf
3 tablespoons olive oil
1 (14 ounce) can coconut milk
1 (5.3 ounce) container Greek yogurt
2 tablespoons tomato paste
1 (16 ounce) canned chickpeas, drained and rinsed
1 cup frozen peas
4 tablespoons crushed pineapple
½ lemon, juiced
¼ teaspoon cayenne pepper

Steps:

  • Season cubed chicken with salt and pepper and set aside.
  • Preheat a large dry skillet over medium heat. Add curry powder and toast until lightly browned and fragrant, stirring constantly, 2 to 3 minutes. Add paprika, cinnamon, ginger, and turmeric and roast, stirring constantly, for 1 to 2 minutes. Stir in onion, garlic, and bay leaf. Pour in olive oil and mix to combine.
  • Mix chicken, coconut milk, yogurt, tomato paste, salt, and pepper into the spices in the skillet. Stir well to combine. Mix in chickpeas, peas, and pineapple. Bring mixture to a boil, reduce heat, and simmer for 20 to 25 minutes. Remove bay leaf and stir in lemon juice and cayenne pepper. Simmer for 5 more minutes. Taste and adjust the seasoning to your liking.

This recipe came from a friend who helped me complete my mission to find a curry that I like. On my last out of town visit to her, she even took me to her local grocery store to buy her favorite curry powder. It's a Madras blend by Sun Brand, very mild and not at all aggressively spiced. And what do you know? I now like curry. I only buy the boneless thighs when they are on sale. Bone-in thighs with the skin removed work equally as well. A little less water is needed using those but a bit more cooking time is needed.

4 boneless skinless chicken thighs (about 1 pound)
1 tablespoon vegetable oil
1 teaspoon curry powder
1/2 teaspoon salt
1 dash ground ginger
1 dash ground cumin
1/4-1/2 cup onion, chopped
1/3 cup water
1/2 cup sour cream

Steps:

  • Cut chicken into 1-inch strips. I have kept bone-in thighs whole.
  • Heat oil in 10-inch skillet until hot.
  • Cook chicken in oil over medium-high heat until brown on all sides.
  • Sprinkle with remaining ingredients except sour cream.
  • Reduce heat. Cover and simmer about 10 minutes or until chicken is done. (longer for bone-in thighs.
  • Turn off heat. Stir in sour cream.

1 kg (2lb) Chicken thighs (Skinless boneless or bone in.)
4 tablespoon Curry powder (I used mild Madras curry powder)
1 teaspoon Dried thyme
4 cloves Garlic (minced)
1 medium Onion (chopped)
1 thumbsize Ginger (minced)
1/2 teaspoon Cayenne pepper
1 400g Canned Chopped tomatoes
1 400g Canned Coconut milk
2 5g Stock cubes
Salt (to taste)
3 tablespoons Vegetable oil
1/4 teaspoon Sugar (Optional)
Chopped coriander or parsley (to garnish)
1/4 teaspoon Paprika
1 tablespoon Curry powder
1/4 teaspoon Black pepper
1/4 teaspoon Salt

Steps:

  • Pat the chicken thighs dry with a paper towel.Add curry powder, paprika, black pepper, and salt to the chicken. Mix till well combined.
  • Place pot on medium heat. Add oil into the pan and when it's heated, add the chicken thighs.Brown the chicken sides for 2-3 minutes each on each side.Take out the chicken from the pan.
  • Add chopped onion, garlic, and ginger to the pan.Sautee for 2 minutes or till the onions are translucent then add in curry powder, dried thyme, cayenne pepper, stock cubes, and salt.Add in the chopped tomatoes, sugar, and coconut milk. Stir and leave to simmer for 3 minutes.
  • Add in the chicken thighs and let the curry cook for 10-15 minutes or till cooked and thickened.Take off heat, garnish with chopped parsley, serve and enjoy.

1 small onion, cut in half and thinly sliced
4 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 (14.5 ounce) can diced tomatoes
1 tablespoon tomato powder

Steps:

  • Season chicken thighs with 2 teaspoons curry powder, honey powder, salt, and black pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil and butter. Add chicken and cook until browned, 2 to 3 minutes per side. Transfer to a plate. Add onion; cook and stir until soft and translucent, about 5 minutes. Add garlic and ginger; cook until fragrant, about 2 minutes. Return chicken to Instant Pot®. Add tomatoes and tomato powder. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
