CHICKEN CURRY SOUP

This chicken curry soup recipe is comfort in a bowl and perfect served with pillowy naan bread for an easy, wholesome meal.

2 tbsp butter (Alternatively use ghee or coconut oil )
2 onions (finely chopped)
2 celery spears (finely chopped)
2 carrots (peeled and finely chopped)
2 large leeks (finely chopped)
4 garlic cloves (crushed)
2 tsp crushed ginger
2 tsp ground turmeric
2 tsp curry powder
1 tsp ground cinnamon
1 tsp Chilli powder
1 tsp paprika
2 bay leaves
2 large potatoes (peeled and cubed)
6 cups chicken stock (1.5 liters)
4 chicken breasts (de-boned + skinless)
1 cup cream/coconut milk
salt (to taste)
pepper (to taste)
lemon juice (to taste)
Plain yoghurt (For serving)
Fresh coriander/cilantro (For serving)

Steps:

  • Melt the butter and a splash of oil(optional) in a large pot.
  • Add the onion, celery, leek and carrot and fry for 10 minutes until soft and fragrant.
  • Add the garlic and ginger and fry for a minute before adding the spices. Stir together.
  • Add the potato and fry for another minute before pouring in the chicken stock.
  • Season with salt and pepper, add the cream and allow to come to a simmer.
  • Add the chicken breasts then cover and allow to simmer for 7-10 mins until the chicken is cooked. Remove from the pot and allow to cool slightly.
  • Place the lid back on the pot and allow to simmer for another 10 minutes.
  • Shred the chicken and add back to the soup. Simmer for 5 minute then season to taste.
  • Serve with plain yoghurt and fresh coriander/cilantro.

1 tablespoon olive oil
4 skinless, boneless chicken breasts, cubed into bite-sized pieces
1 tablespoon mild curry paste
2 (14.5 ounce) cans chopped tomatoes
½ chicken stock cube
6 (10 ounce) packages frozen chopped spinach, thawed and drained
2 (15 ounce) cans chickpeas

Steps:

  • Heat oil in a large pot over medium heat. Add chicken to the hot oil and cook until browned, 6 to 7 minutes. Add curry paste and stir to coat. Add tomatoes and stir. Fill an empty tomato can with water and add to the pot; repeat with the 2nd tomato can. Crumble in stock cube and simmer soup for 10 minutes.
  • Add spinach to the pot and simmer until defrosted, 10 to 15 minutes more. Stir to mix well into soup. Add chickpeas and cook until heated, 2 to 3 minutes.

4 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
3 medium carrots, chopped
1 medium sweet red pepper, chopped
1 small onion, chopped
2 tablespoons olive oil
1 garlic clove, minced
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup water
1 can (13.66 ounces) coconut milk
3/4 cup minced fresh cilantro

Steps:

  • In a large shallow dish, combine the curry, salt, pepper and cayenne. Add chicken, a few pieces at a time, and turn to coat., In a large saucepan over medium heat, cook the chicken, carrots, red pepper and onion in oil for 4 minutes. Add garlic; cook 1-2 minutes longer or until chicken is browned and vegetables are tender; drain., Stir in the garbanzo beans, broth, tomatoes and water. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Stir in coconut milk; heat through. Garnish servings with cilantro.

1 ½ teaspoons curry powder
1 teaspoon ground turmeric
½ teaspoon cayenne pepper, or to taste
1 teaspoon smoked paprika
1 teaspoon garam masala
1 teaspoon ground cumin
2 tablespoons extra-virgin olive oil
1 cup chopped onion
6 cloves garlic, minced
2 teaspoons minced fresh ginger
3 cups chicken stock
salt and ground black pepper to taste
1 cup cubed russet potatoes
2 cups chopped carrots
2 cups Chicken breast tenderloins, cooked, fried
1 (13.5 ounce) can Nuts, coconut milk, canned (liquid expressed from grated meat and water)
1 cup frozen French-cut green beans

Steps:

  • Combine curry powder, turmeric, cayenne pepper, smoked paprika, garam masala, and cumin in a large saucepan or Dutch oven. Stir spice mixture constantly over low heat until warm and fragrant, 3 to 4 minutes. Be careful not to let the spices burn. Add olive oil and stir to combine all the spices with the oil.
  • Increase heat to medium and add chopped onion. Cook and stir, 3 to 4 minutes. Add garlic and ginger, stirring, about 2 minutes longer. Pour in chicken stock and season with salt and pepper. Stir to get all the spices from the bottom of the pan into the stock. Add potatoes and carrots, bring to a boil, and cover. Reduce heat to a simmer, and cook for about 20 minutes.
  • Return heat to medium and add cooked chicken, coconut milk, and green beans. Bring to a boil and cook for 1 to 2 minutes, stirring to make sure coconut milk is well blended into the soup. Ladle into bowls and serve warm.

1 bone-in chicken breast (about 1 1/2 pounds), halved
2 medium carrots, sliced diagonally into 2-inch pieces
1 bay leaf
Kosher salt
6 cups low-sodium chicken broth
2 tablespoons unsalted butter
1 large onion, very thinly sliced
1 teaspoon sugar
1 1/2 teaspoons Madras curry powder
1/3 cup jasmine rice
3 tablespoons finely chopped fresh mint
3 tablespoons chopped fresh dill
1 lemon, cut into wedges

Steps:

  • Combine the chicken, carrots, bay leaf and a pinch of salt in a medium saucepan. Add 3 cups broth and bring to a boil; immediately reduce the heat to low, cover and cook until the chicken is just firm, about 20 minutes.
  • Meanwhile, heat the butter in another saucepan over medium-low heat. Add the onion, sugar and 1 teaspoon salt; cook until the onion is soft, 5 minutes. Add the curry powder and cook for 1 minute. Add the rice and the remaining 3 cups broth. Increase the heat to medium, cover and simmer until the rice falls apart, 15 to 20 minutes.
  • Remove the chicken from its broth; discard the skin and shred the meat into pieces. Return the shredded chicken to the same broth.
  • Puree the rice mixture with an immersion blender until smooth (or use a regular blender, then return to the pan). Pour in the shredded chicken and broth, stirring gently to combine; bring to a simmer. Toss in the chopped herbs and serve the soup with lemon wedges.

SHORTCUT PALAK PANEER



Shortcut Palak Paneer image

This super simplified version of a famous northern Indian Punjabi dish cooks all in one pan and relies on premade paneer and frozen spinach as shortcuts. While it's not quite like the authentic version, it is still packed with flavor and quite satisfying. We also found that frying queso fresco cubes made for a nice, saltier alternative to packaged paneer, which is sometimes hard to find.

4 tablespoons unsalted butter
8 ounces store-bought paneer or queso fresco, cut into 3/4-inch cubes
1 medium yellow onion, diced small
Kosher salt and freshly ground black pepper
5 cloves garlic, finely grated
2-inch piece ginger, peeled and finely grated
3/4 teaspoon curry powder
3/4 teaspoon garam masala
1 large tomato, about 8 ounces, halved and grated on the large holes of a box grater
2 boxes (10 ounces each) frozen chopped spinach, defrosted and drained
2/3 cup heavy cream
Serving suggestion: steamed basmati rice or naan

Steps:

  • Line a plate with paper towels. Heat 1 tablespoon butter in a large skillet over medium heat. When the butter stops foaming, add the paneer cubes and brown well on 2 sides, about 4 minutes total. Remove to the lined plate and reserve. Wipe out the skillet with a paper towel.
  • Have a lid nearby for the skillet. Add another 2 tablespoons butter to the skillet over medium-high heat, then add the onion and 1/2 teaspoon salt. Cook, stirring frequently, until the onion is browned and translucent, about 5 minutes. Add the garlic, ginger, curry powder and garam masala and stir together, 1 minute. Add the grated tomato and stir for another minute. Add the chopped spinach, heavy cream, 1/4 cup water, 1 1/2 teaspoons salt and a few grinds of pepper. Cover and cook over medium-low, 8 minutes. Add the remaining tablespoon butter and carefully fold in the paneer cubes. Simmer for an additional 2 minutes to warm the paneer through.
  • Serve with steamed basmati rice or naan

1 onion , finely chopped
3 tbsp Thai red curry paste
2 x 400g cans coconut milk
400ml chicken stock
100g risotto rice
4 large eggs
about 200-300g leftover roast chicken , shredded
340g can sweetcorn , drained
2-3 limes , juiced
2 spring onions , sliced

Steps:

  • Heat the oil in a saucepan over a medium heat. Add the onion and fry for 10 mins or until softened and turning translucent. Add the curry paste and cook for 1 min. Stir in the coconut milk, chicken stock and risotto rice and bring to a simmer. Cook for 15-20 mins or until the rice is tender.
  • Bring a pan of water to a simmer, add the eggs and cook for 7 mins. Stir the chicken and sweetcorn into the soup and cook for 5 mins to warm everything through. Season to taste and finish with the lime juice. Gently peel the shells off the eggs and cut them in half. Top the soup with the eggs and spring onions.

  • Add 1 tablespoon sesame oil to a large dutch oven or large pot and place over medium high heat. Add in chicken thighs and generously season with salt and pepper. Brown chicken on both sides. You don’t need to cook the chicken all the way, just get it nice and golden brown for flavor purposes. Transfer chicken to a plate and set aside.
  • In the same pot, add the remaining ½ tablespoon sesame oil. Immediately add in minced garlic, white part only of the green onions, sliced carrot and ginger. Saute for 3-5 minutes, then add in the curry powder, coconut milk, chicken broth, thai chili paste and soy sauce. Add the chicken thighs back to the pot and place two lemongrass stalks in. Bring to a boil, then reduce heat and simmer for 25 minutes.
  • After 25 minutes, use a slotted spoon to remove chicken from the pot and transfer to a cutting board. Use two forks to shred chicken. Before adding chicken back to the pot, remove the lemongrass stalks and discard. If you'd like to add rice noodles, now is the time to do so; add them to the pot along with the shredded chicken, bok choy and fish sauce and simmer for 10 more minutes or until rice noodles are nice and tender.
  • Pour into bowls, then garnish with a few cilantro, mint, thai green basil, green scallions, thai chile and a fresh squeeze of lime.
