CUPID'S COCKTAIL
Cupid's Cocktail is the perfect drink for Valentine's Day. When you take strawberries and champagne and combine them, it doesn't get any better!

Steps:
- A few hours before you plan to make the cocktails, prepare the vodka ice cubes.
- Stir 2 oz of the vodka with the water and dye to your preferred colour with the pink food dye. Pour into the heart shaped ice cubes and freeze for 4 hours or overnight.
- It's also helpful to deseed your pomegranate beforehand - my favorite method is cutting the pomegranate in half, holding it over a bowl filled 1/4 of the way with cold water and whacking the back of the pomegranate with a wooden spoon, letting the seeds drop into the water.
- When ready to serve, place your ice cubes and pomegranate seeds in your champagne flutes. Fill each with 2 oz grapefruit juice, then skewer your strawberries and place on top.
- Top with champagne and enjoy immediately.

- Add ¾ part cherry liqueur.

- Preheat oven to 350 degrees. Brush the phyllo sheet with butter and sprinkle with confectioners' sugar. Cut the sheet in half crosswise and then lengthwise to make 4 rectangles. Make a fan by taking the short side of 1 of the rectangles and gathering it together like pleats on a skirt, pinching the pleats together to make them stick. Place on a parchment-lined baking sheet. Repeat with remaining rectangles. Bake until light brown, about 5 minutes. Set aside.
- Place a scant pint of the strawberries in a blender and puree, stopping as necessary to scrape sides of jar. Pass the puree through a fine sieve so you are left with only a thick liquid. Set aside. Whip cream to soft peaks. Add the sugar and the lime zest. Whip to stiff peaks. Coarsely chop enough of the remaining strawberries to make 1/2 cup. Stir them into the cream mixture. Stir in the strawberry puree.
- Thinly slice the remaining strawberries. Either use a small heart-shaped cutter to cut hearts out of the strawberry slices or trim them into heart shapes with a small knife. Press several of the strawberry hearts in a decorative, asymmetrical pattern against the inside of each of 4 wineglasses. Spoon in the mousse. Top with a layer of strawberry hearts. Place the narrow end of each fan into the mousse. Serve immediately.

- Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. (I used these pink cupcake liners.) Line a second pan with 2-3 liners – this recipe makes 14-15 cupcakes. Set aside.
- Using a handheld or stand mixer fitted with a whisk attachment, beat the butter and sugar together on high speed until smooth and creamed, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg whites on high speed until combined, about 2 minutes. Beat in the sour cream and vanilla extract. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour and mix in the milk *just* until combined. Do not overmix.
- Pour/spoon the batter into the liners. Fill only 2/3 full to avoid baking over the sides. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean. For around 35 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before filling and frosting.
