I started making this recipe when we moved from Idaho to Kentucky. It gets so hot here that we use our outdoor grill as often as possible to keep the kitchen cool. My husband loves this juicy steak and its tasty sauce. I like that I can have it ready to marinate in no time. -Karma Henry, Glasgow, Kentucky

2/3 cup packed brown sugar
2/3 cup V8 juice
2/3 cup soy sauce
1/2 cup olive oil
4 garlic cloves, chopped
2 tablespoons chili powder
1/4 teaspoon ground cumin
1 beef flank steak (about 1-1/2 pounds)

Steps:

  • In a bowl, combine the first seven ingredients. Pour half of the marinade into a shallow dish; add the steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with reserved marinade.

2 small sweet red peppers, cut into 2-inch strips
1 small sweet yellow pepper, cut into 2-inch strips
2 cups grape tomatoes
1 small onion, cut into 1/2-inch wedges
2 jalapeno peppers, halved and seeded
2 tablespoons olive oil, divided
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 teaspoons ground cumin
1 teaspoon chili powder
1 beef flank steak (1-1/2 pounds)
2 to 3 teaspoons lime juice
Hot cooked couscous
Lime wedges

Steps:

  • Preheat broiler. Place the first 5 ingredients in a greased 15x10x1-in. baking pan. Toss with 1 tablespoon oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Broil 4 in. from heat 10-12 minutes or until vegetables are tender and begin to char, turning once. , Meanwhile, mix salt, pepper, cumin, chili powder and the remaining oil; rub over both sides of steak. Grill, covered, over medium heat or broil 4 in. from heat 6-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 5 minutes., For salsa, chop broiled onion and jalapenos; place in a small bowl. Stir in tomatoes and lime juice. Thinly slice steak across the grain; serve with salsa, broiled peppers, couscous and lime wedges.

Give your flank steak a sweet and spicy kick with a delicious rub made from a blend of different chili powders, cumin, brown sugar and thyme. Finish it off with a squeeze of fresh lime when it comes off the grill.

1 lime, plus wedges for serving
1 tablespoon chili powder
1 tablespoon packed light brown sugar
2 teaspoons chopped fresh thyme
1 teaspoon ground cumin
1 teaspoon chipotle chile powder
Kosher salt and freshly ground pepper
1 1 1/2- to 2-pound flank steak
Vegetable oil, for the grill

Steps:

  • Grate the zest of 1 lime; cut the lime in half. Combine zest with the chili powder, brown sugar, thyme, cumin, chipotle powder, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Squeeze the zested lime over the steak and use the lime halves to rub the juice into the meat. Rub the spice mixture on both sides of the steak. Let stand at room temperature, 30 minutes.
  • Meanwhile, preheat a grill to medium high. Brush the grates with vegetable oil. Grill the steak until well browned, about 8 minutes. Flip and grill until a thermometer inserted sideways into the center registers 130 degrees F to 140 degrees F, 5 to 7 more minutes for medium rare (the thinner edges of the steak will be cooked to medium).
  • Transfer to a cutting board and let rest 10 minutes. Season with salt and thinly slice against the grain. Serve with lime wedges.

2 teaspoons cumin seeds
1 large egg
3/4 teaspoon Dijon mustard
1/4 teaspoon salt
2 garlic cloves, minced
1/3 cup vegetable oil
2 3/4 teaspoons fresh lemon juice
1/3 cup extra virgin olive oil
1/4 teaspoon sea salt
2 garlic cloves, minced
1/4 teaspoon fresh ground black pepper
1 1/2 lbs flank steaks, or (whatever cut you choose)
chopped fresh parsley leaves (optional)

Steps:

  • MAKE THE AIOLI:.
  • Place the cumin seeds in a small frying pan and stir over medium heat for 2 minutes, or until they darken a shade.
  • Remove from heat.
  • Finely grind half of the cumin seeds in a coffee grinder or with a mortar and pestle.
  • In a blender of food processor, combine the egg, mustard, salt, garlic and the ground cumin seeds.
  • Process briefly to blend.
  • With the motor running, add the vegetable oil in a slow, steady stream.
  • Pour in the lemon juice and then slowly add the olive oil until the aioli is emulsified.
  • If the mixture seems too thick, add a teaspoondule or two of water.
  • Scrape the aioli into a bowl and stir in the whole cumin seeds.
  • Add the chopped parsley leaves(1-2 teaspoonsful).
  • Cover and refrigerate.
  • MAKE THE STEAK:.
  • In a small bowl, mix the oil, salt, garlic and pepper.
  • spread on both sides of the steak.
  • Cover and refrigerate up to overnight.
  • Preheat the grill or broiler.
  • Grill or broil the steak for 3-4 minutes on each side for meium rare.
  • Remeove the steak from the heat and let it sit for at least 10 minutes.
  • Slice very thinly across the grain and serve with aioli on the side.

2 lbs skirt steaks
1 cup fresh lime juice (about 8 limes)
3 tablespoons cumin seeds (or 1 1/2 tablespoons ground cumin)
2 1/2 tablespoons minced garlic
1/3 cup roughly chopped fresh cilantro
kosher salt and freshly cracked black pepper
1/2 cup finely chopped pitted green olives
1 teaspoon chopped dried red chili pepper, of your choice to taste
1/4 cup olive oil
2 tablespoons freshly cracked black pepper

Steps:

  • Place the steak in a shallow dish and pour the lime juice over it. Cover the dish and let it stand in the refrigerator for 30 minutes to 1 hour, turning occasionally.
  • Light up a fire in your grill.
  • In a small bowl, combine all the rub ingredients and mix well. Remove the steak from the marinade, pat dry with paper towels, and rub it all over with the spice rub, pressing gently to be sure it sticks.
  • When the fire has died down and the coals are hot (you can hold your hand 5 inches from the grill surface for 1 to 2 seconds), place the steak on the grill and cook until well-seared on one side, about 4 minutes. Turn and continue to cook to the desired doneness, about 4 minutes more for rare. To check for doneness: Make a 1/4-inch cut in the thickest part of the meat and take a peek; it should be slightly less done than you like it. Remove the steak from the heat, cover it loosely with foil, and allow it to rest for 5 minutes while you make the relish.
  • In a medium bowl, combine all the relish ingredients and mix well.
  • Slice the steak as thin as possible against the grain and serve with the relish. Enjoy!
  • Note* You may substitute flank steak, or round steak for the skirt.
