Stuffed artichokes were the "something special" on the table at all of my holiday gatherings and special occasions growing up. My grandmother would make them, and now the tradition has been passed on to the rest of the family. We would "fight" over the artichoke heart at the end. The filling is like a very moist dressing/stuffing you would have at Thanksgiving, but amped up with lots of garlic and cheese. The bottom of the artichoke leaves are tender and meaty with a subtle earthy, artichoke flavor. I like to dip the heart in a lemony mayo or butter at the end. Serve as a family-style appetizer or as part of a meal alongside a salad and grilled chicken.

4 large whole artichokes
1 lemon
1 ½ cups plain dry bread crumbs
1 cup grated Parmesan cheese
3 tablespoons chopped fresh parsley, plus more for garnish
6 cloves garlic, minced
4 teaspoons kosher salt, divided
1 teaspoon ground black pepper
½ cup olive oil
2 ½ cups water

Steps:

  • Cut top 1/4 of an artichoke off and discard. Trim off the top 1/2 inch from remaining leaves. Cut off bottom inch from stalk to create a flat bottom. Turn artichoke upside down and bang on surface to loosen the leaves. Zest 3/4 teaspoon of lemon zest from the lemon and set aside. Cut lemon in half and rub cut leaves and stem of artichoke with lemon. Repeat artichoke prep with remaining artichokes.
  • Combine reserved lemon zest with bread crumbs, Parmesan cheese, parsley, garlic, 2 teaspoons salt, and pepper in a medium bowl and stir well.
  • Sprinkle bread crumb mixture evenly into all the artichoke leaves, avoiding the thistle leaves in the direct center. Work mixture evenly into each crevice of each artichoke until all of the mixture is used.
  • Pour water in the bottom of a Dutch oven. Add remaining 2 teaspoons salt. Set artichokes in the pot so that they are touching, so that they may remain upright during cooking. Bring to a boil and reduce to a simmer. Cover and cook until the leaves release very easily, about 1 hour.
  • Let stand for 10 to 15 minutes before serving. Sprinkle with more parsley if desired. Serve warm or room temperature.

What an easy and elegant appetizer! I use small pre-cooked and peeled frozen shrimp to make things really speedy.

1 (12 ounce) can artichoke bottoms
2 tablespoons butter
2 tablespoons flour
1 cup heavy cream
2 tablespoons dry sherry
40 small cooked shrimp, coarsely chopped
1/2 cup cheddar cheese, shredded
1/2 cup swiss cheese, shredded
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Drain and arrange artichoke bottoms in a buttered glass pie dish.
  • In a sauce pan, melt butter and blend in flour. Stir in heavy cream and cook over low medium-low heat until sauce thickens. Add sherry and shrimp, then cheese and salt. Cook until cheese melts. Pour this mixture over artichoke bottoms and bake for 20 minutes.
  • Serve immediately.

8 small or 5 medium-size artichokes
Juice of 1 lemon
3 tablespoons extra-virgin olive oil
1 tablespoon Italian parsley
3 large cloves garlic, chopped
2 tablespoons flour
Salt and freshly ground black pepper
16 jumbo shrimp, peeled and de-veined
1/2 cup dry white wine

Steps:

  • If the artichokes are small, trim the stem to within a half inch of the base and remove the tougher outer leaves. Cut each artichoke in eighths and place in a bowl. Toss with the lemon juice and cover with water. Set aside for 15 minutes. If you are using medium-size artichokes, trim the stem flush with the base and remove all the leaves. Using a sharp knife, cut away the center choke, leaving just the fleshy bottom or heart of the artichoke. Cut each in eighths and treat with the lemon as previously described.
  • Drain the artichoke pieces.
  • Heat half the oil in a heavy skillet over medium heat. Add the artichokes, parsley and garlic, reduce the heat to low and cook, stirring from time to time, about 20 minutes until the artichokes are lightly browned and tender when pierced with a sharp knife.
  • When the artichokes are tender, remove them from the skillet. Season the flour with salt and pepper to taste and toss the shrimp in the flour to coat them lightly. Add the remaining oil to the skillet and increase the heat to medium.
  • Add the shrimp to the skillet and stir-fry a minute or two, until they turn pink. Pour in the wine. Cook, stirring, until the wine just films the bottom of the pan. Return the artichokes to the pan, stir, season to taste with salt and pepper and serve.

4 large artichokes, washed and trimmed
1 lb cooked baby shrimp
2 tablespoons chopped parsley
1 teaspoon chopped fresh dill or 1 teaspoon tarragon
1 tablespoon lemon juice, more to taste
1/2 cup mayonnaise
2 tablespoons olive oil
salt
pepper

Steps:

  • Wash and trim artichokes.
  • Steam over boiling water in a covered kettle for 30-40 minutes, or until tender when pierced.
  • Turn them bottom up, place on paper towels and chill thoroughly.
  • Carefully spread the center leaves of each artichoke open enough to expose the thistle-like choke.
  • With a spoon, scoop and scrape the choke out, leaving the edible artichoke bottom intact.
  • The artichoke should retain its shape with a hole in the center for the filling.
  • Toss the shrimp with the parsley, dill or tarragon, and 1 tablespoon lemon juice.
  • Blend the oil and mayonnaise together, add to the shrimp mixture and toss to combine.
  • Season with salt and pepper to taste, and additional lemon juice if necessary.
  • Fill the artichokes with the mixture and serve.

In New Orleans a stuffed artichoke is a tradition. Garlic, cheese, olive oil, and bread crumbs, all stuffed in and around the leaves make for some really good bites to eat with cocktails. Add shrimp, crab or crawfish to send it over the top! In this recipe the leaves are removed and then topped with the delicious stuffing.

1 lb boiled shrimp, peeled
1 large fresh artichoke
3/4 cup olive oil
4 tablespoons butter
1 medium onion, finely chopped
1/2 green bell pepper, finely chopped
2 cups green onions, finely chopped
2/3 cup fresh garlic, very finely chopped (from about 3 heads garlic)
1 (14 ounce) can artichoke hearts, finely chopped, liquid reserved
2 cups Italian seasoned breadcrumbs
1 cup romano cheese, shredded
1 tablespoon parmesan cheese, grated
1 tablespoon paprika

Steps:

  • Trim pointy leaves and stem from artichoke and place in microwaveable dish with 1' water in bottom.
  • Cover and cook on high for 7-9 minutes, or until tender.
  • Drain and let cool.
  • Remove and refrigerate leaves.
  • Chop heart and tender center of stem; refrigerate if prepared ahead.
  • Heat together olive oil and butter in a very large skillet.
  • Add onions, bell peppers, green onion and garlic; cook over high heat until clear and tender, 8 to 10 minutes, stirring occasionally. Add canned artichokes, liquid from can, and reserved artichoke heart and stem.
  • Thoroughly mix in bread crumbs, then cheeses. Remove from heat.
  • Spoon about 1 heaping teaspoon stuffing onto bottom part of each artichoke leaf; use all stuffing.
  • Sprinkle leaves lightly with paprika and top each with a shrimp; if needed, cut larger shrimp in half to have enough for all leaves.
  • Serve on pretty platter.

  • Cut the stems off of the artichokes at the base of the globe. To trim the artichokes, use a serrated knife to cut off the top 1/3 of the artichoke leaves. Then, using kitchen scissors, cut off the sharp part of the leaves, about the top quarter of the leaf. Rub lemon juice on the cut part of the artichokes so they don't discolor.
  • Fill a large stock pot with water and add the artichokes, mustard seed, peppercorns and kosher salt. Boil for about 35-45 minutes or until bottom stem can be pierced easily with a fork and the leaves pull easily from the artichoke. Depending on the size of your artichokes the cooking time will vary.
  • While the artichokes are cooking, prepare the shrimp salad. Rinse the salad shrimps and pick through for any shells. Place in a medium size bowl and add the green onions and cilantro. Stir to combine. In a small bowl, combine the seasoned rice vinegar, vegetable oil, fish sauce, lime juice, sugar and crushed red pepper flakes and stir until sugar is dissolved. Pour over the shrimp, stir and refrigerate until the artichokes are done cooking.
  • Once the artichokes are tender, use tongs to pull from the hot water and place upside down on a platter to drain. The leaves will have some of the mustard and peppercorn seeds stuck in between them, and that's okay.
